During ripening of Camembert cheese, a soft cheese, the pH values continually change, which impacts the growth of Listeria monocytogenes. In this study, a pH distribution model suitable for the ripening phase of Camembert cheese was developed and verified. An experimental trend-based statistical model for pH using normalized time and normalized pH as variables was developed to determine the evolution of pH. The pH model showed good agreement with the mean pH measured values, i.e., the pH model was able to capture the magnitudes and trends sufficiently. The R2 values for top surface, center, inner-outer side surface, and bottom surface regions’ mean measured and pH model-predicted values were 0.97, 0.95, 0.99, and 0.99, respectively.  相似文献

The suitability of mid-infrared spectroscopy (MIR) to follow the evolution throughout ripening of specific physicochemical parameters in Camembert-type cheeses was evaluated. The infrared spectra were obtained directly from raw cheese samples deposited on an attenuated total reflectance crystal. Significant correlations were observed between physicochemical data, pH, acid-soluble nitrogen, nonprotein nitrogen, ammonia (NH4+), lactose, and lactic acid. Dry matter showed significant correlation only with lactose and nonprotein nitrogen. Principal components analysis factorial maps of physicochemical data showed a ripening evolution in 2 steps, from d 1 to d 7 and from d 8 to d 27, similar to that observed previously from infrared spectral data. Partial least squares regressions made it possible to obtain good prediction models for dry matter, acid-soluble nitrogen, nonprotein nitrogen, lactose, lactic acid, and NH4+ values from spectral data of raw cheese. The values of 3 statistical parameters (coefficient of determination, root mean square error of cross validation, and ratio prediction deviation) are satisfactory. Experimental work was carried out in order to determine the usefulness of the 2‐alkylcyclobutanones as markers for irradiated Camembert cheese, salmon meat, mango and papaya. Both 2‐dodecylcyclobutanone (2‐DCB) and 2‐tetradecylcyclobutanone (2‐TCB) were readily detected in Camembert cheese even after storage for 26 days at 10 °C. A linear relationship was observed between irradiation dose (0.5–5 kGy) and the amount of cyclobutanone produced in the cheese. 2‐DCB and 2‐TCB were both identified in salmon meat irradiated in either the chilled (4 °C) or frozen state (−40 °C), although it was noted that less 2‐DCB was measured in the frozen samples. A linear response to increasing irradiation dose was demonstrated for salmon over the experimental range of 1–10 kGy. 2‐TCB was identified as the main marker for irradiated mango and could be detected in samples following storage for 14 days at 10 °C at doses as low as 0.1 kGy. As for the other products investigated, the concentration of this cyclobutanone increased linearly with increasing dose (0.1–2 kGy). With regard to papaya, 2‐DCB was identified as the principal irradiation marker. However, the concentration of this cyclobutanone decreased significantly with time, so that by day 21 of storage at 10 °C it could only be detected at the 2 kGy dose level. 2‐Tetradecenylcyclobutanone (2‐TDCB) was also detected in irradiated mango and papaya. © 2000 Society of Chemical Industry  相似文献

Gas exchange dynamics in modified atmosphere packaging of soft cheese   总被引:1,自引:0,他引:1  
Modified Atmosphere Packaging (MAP) is a shelf-life extension technique that has been widely applied to horticultural, meat and dairy products. It relies on the interaction between product, packaging material and environment, which determines the gas composition inside the package at steady state. Therefore, MAP design needs to take into consideration O2 consumption and CO2 production rates of the product and the mass transfer coefficients for the gas exchange through the packaging material and how they are affected by environmental factors such as storage temperature. In this work, a mathematical model was developed for designing MAP systems for a soft cheese (camembert-type). The model was used to evaluate the effect of perforations on O2 and CO2 concentrations of package containing cheese, at constant and varying storage temperatures. The predicted gas composition was compared with those obtained experimentally at 293 and 285 K with packages having different numbers of perforations (1), (2) and (3). Experimental values of gas composition observed at steady state with one perforation were 0.050 and 0.148 (v/v) at 285 K for O2 and CO2 respectively, and 0.003 and 0.207 (v/v) at 293 K. Gas composition was found to take values between 0.009–0.058 for O2 and 0.154–0.200 for CO2, when the packages with a single perforation were exposed to storage temperature varying between 285 and 293 K during 14 days of storage. The model developed was able to accurately predict the gas exchange dynamics of the package throughout the storage period whether the temperature of storage was constant or not.  相似文献

研究了在Camembert奶酪成熟过程中无毒害李斯特菌存活和生长的能力。用含有5lgCFU/mL无毒害李斯特菌的巴氏灭菌全脂牛奶精心制备Camembert奶酪。所有Camembert奶酪在以下三种情况下成熟:室温(约20℃)和相对湿度60%(36h);12℃、相对湿度93%(2周);7℃、相对湿度85%(3周)。在成熟过程中,分别在1、5、10、15、20、25、30、35d时,利用选择性培养基对奶酪表面和内部的无毒害李斯特菌进行计数。结果显示,在成熟第1d时,无毒害李斯特菌数量为7.16lgCFU/g,比初始值的4.76lgCFU/g增加了2.40lgCFU/g;而在第20d时,无毒害李斯特菌数量降低至6.54lgCFU/g;在第35d时,李斯特菌数量增加至7.38lgCFU/g。总体而言,无毒害李斯特菌在奶酪表面的生长快于中心位置。   相似文献

The aim of this study was to assess the coagulant properties of crude extract from cardoon flowers (CECF) as a replacement for the imported coagulants used in the local Algerian cheese factories. Optimal coagulation activity of the extract was observed at pH 5 and 60 °C with a CaCl2 concentration of 0.02 M. The electrophoretic pattern revealed that the crude extract contains mainly cardosins A and B. The study of interactions involved in the formation of milk gel coagulated by CECF showed that hydrogen forces, hydrophobic interactions and calcium bridges contributed highly to the formation of milk gel. Camembert‐type cheese obtained by CECF was judged by trained panellists and was found to be in agreement with standard specifications. The present study highlights the possibility of using Algerian CECF as a promising plant coagulant in cheesemaking for the dairy industry.  相似文献

The study was conducted to evaluate the nutritional, textural and sensory characteristics of Camembert cheese made from goat milk, cow milk and their blends. The type of milk used affected yield, physicochemical properties and fatty acid profile of the cheeses. The percentages of C6:0, C8:0 and C10:0 acids were higher in the cheeses containing ≥ 75% goat milk. The sensory evaluation results showed differences in texture, colour, aroma and flavour among the cheeses. Cheeses made with the mixture of cow and goat milk particularly 50% goat milk mixed with 50% cow milk (50G:50C) maintained particular positive nutritional characteristics especially with respect to the mineral contents, fatty acids and consumer acceptability.  相似文献

The suitability of Listeria innocua for use as an indicator for replacing Listeria monocytogenes during the cheese-making and ripening of Camembert cheese was evaluated. Pasteurized whole milk inoculated with either L. innocua or L. monocytogenes was used to make Camembert cheese, which were ripened in three stages. All cheese was ripened in three stages: room temperature (∼20 °C) and relative humidity of 60% for 36 h; 12 °C and relative humidity of 93% for 2 weeks; and 7 °C and relative humidity of 85% for 3 weeks. Results showed that population values of L. innocua and L. monocytogenes on day 1 were 7.16 and 6.11 log10 CFU/g, respectively, which declined to 6.54 and 5.45 log10 CFU/g, respectively, during subsequent 20 days. Thereafter, L. innocua and L. monocytogenes populations increased to 7.38 and 6.06 log10 CFU/g on day 35 of ripening, respectively. During ripening, surface and interior of cheeses were analysed for populations of L. innocua and L. monocytogenes , respectively. The data were collected on day 1, 5, 10, 15, 20, 25, 30, and 35 of ripening. Generally, the growth of L. innocua and L. monocytogenes is faster in surface than in centre. Top centre, bottom centre and bottom surface locations had similar population values during ripening. There were no significant differences ( P  > 0.05) between batch and section of cheese. The ripening time and locations had significant effect ( P  < 0.05) on the survival and growth of L. innocua and L. monocytogenes . The trends of survival and growth of L. innocua and L. monocytogenes were similar. These results indicated that L. innocua can be considered as an indicator for L. monocytogenes during ripening of Camembert cheese.  相似文献
