The characteristics of high-quality tomato pulp (commercial def.: crushed or diced tomatoes with about 30% tomato juice as packing medium) canned with tomato juice pulp enriched by ultrafiltration as packing medium were compared with those covered with conventional vacuum-concentrated juice.

The effects of washing with hydrogen peroxide (H2O2) and sodium hypochlorite (NaOCl) solutions on the gel-forming ability and physicochemical properties of surimi produced from bigeye snapper (Priacanthus tayenus), stored in ice for up to 14 days, were investigated. Generally, pH and the trichloroacetic acid (TCA)-soluble peptide content of washed mince varied, depending on the type of oxidizing agent and storage time of the fish. With increasing time of storage, the pHs of water- and H2O2-washed mince were lower than that of NaOCl-washed mince (P < 0.05). However, no differences in the TCA-soluble peptide contents of the resulting mince washed with any media were observed (P > 0.05). Washing with 20 ppm NaOCl resulted in the highest increase in both the breaking force and the deformation of mince from fish stored in ice for all the times studied (P < 0.05). Natural actomyosin (NAM) extracted from NaOCl-washed mince had higher surface hydrophobicity and disulfide bond (SS) content than that of water-washed mince (P < 0.05). With no effect on Ca2+-, Mg2+-, or Mg2+–Ca2+-ATPase activities, NaOCl washing resulted in an increase in Mg2+–EGTA-ATPase activity of NAM (P < 0.05). The results suggested that washing mince with the appropriate type and concentration of oxidizing agent can improve the gelling ability of surimi, particularly from low quality fish. 相似文献

The objective of this work is to discuss the concept of back‐to‐back interconnection systems with energy storage, especially with a Superconducting Magnetic Energy Storage (SMES) incorporated into a back‐to‐back DC link. In this case, each converter of the back‐to‐back system is used as a power conditioning system for the SMES coils. Since the AC–DC converter can be designed independently of the frequency of the power system, a two‐way switch is connected to the AC side of each converter. This two‐way switch can select the interconnected power systems. By using the two‐way switches, this system can provide the stored energy in the SMES system to each interconnected power system through two AC–DC converters. For instance, lower‐cost power of each power network can be stored through two converters during the off‐peak hours and made available for dispatch to each power network during periods of demand peak. Then this system increases the reliability of electric power networks and enables the economical operations depending on the power demand. This paper describes the unique operations of the back‐to‐back interconnection with SMES and discuses the optimal SMES configuration for a 300‐MW‐class back‐to‐back interconnection. © 2008 Wiley Periodicals, Inc. The flow ice system including ozone (OFI condition) was tested for slaughtering and storage (up to 16 days) of farmed rainbow trout (Oncorhynchus mykiss). Lipid damage analyses were carried out and compared to sensory acceptance and instrumental colour changes. Comparison to individuals processed with the flow ice system in the absence of ozone (FI condition) was undertaken. Rainbow trout slaughtered and chilled under FI and OFI conditions showed a low lipid damage development, according to lipid oxidation and hydrolysis events and lipid composition (polyunsaturated fatty acids, phospholipids and endogenous antioxidants) changes. Additionally, both icing conditions led to largely good quality and shelf life times and to the absence of changes in colour properties. It is concluded that flow ice as such, or including the presence of ozone, can be considered as ideal strategy to be employed as slaughtering and storage system during the commercialisation of the actual farmed species. The ozone presence has shown some profitable effects as leading to an extended shelf life time by quality retention of several sensory parameters; in contrast, some negligible negative effects could be observed on the secondary and tertiary lipid oxidation development. Samples of chicken meat from spent laying hens were obtained by four different methods: (1) manual deboning of whole carcasses; (2) manual deboning of skinned carcasses; (3) mechanical deboning of whole carcasses; and (4) mechanical deboning of skinned carcasses. The meat was packaged, frozen and stored at ?18 °C for up to 3 months. Functional properties studied were pH, emulsifying capacity (EC) and water‐holding capacity (WHC) and, in addition, pigment concentration was investigated. Sensory properties included aroma, colour, texture and overall acceptability, as judged by a trained panel using a nine‐point hedonic scale. Removal of the skin prior to deboning by either method gave significantly higher values (P < 0.05) for EC, while WHC values were not significantly different among the experimental treatments, despite higher pH values for mechanically‐deboned meat, with and without skin. Pigment concentrations were highest in meat from Treatment 4 and lowest for Treatment 1, but values for both methods of deboning were affected by the presence of skin. There were no significant differences between treatments for any of the sensory properties studied. Changes occurring in the meat during frozen storage are described. 相似文献

The thermal behaviour of a packed bed storage system charged with hot air is modelled using two partial differential equations representing the energy conservation in the air and solid phases constituting the bed. These two equations are coupled through the heat exchange process between the two phases. A fully implicit numerical scheme based on forward, upwind and central differencing for the time, first and second space derivatives, respectively, is used to solve the modelling equations. Marching technique is used for the air equation and a tri-diagonal matrix solver is employed to solve the solid equation. The solution yields the thermal structure of the bed, namely the air and solid temperature distribution inside the bed at any particular time, and the variation of total energy stored in the bed with time. The effect of bed length, solid diameter and void fraction on the thermal characteristics of the packed bed is studied. A novel current source inverter system interconnected to the single‐phase grid is proposed. It has the same construction as the conventional three‐phase current source inverter that is interconnected to the single‐phase three‐wire distribution system. Though the proposed circuit has no output transformer, it can be equivalently performed as the single‐phase double cascade inverter by diverting the pole transformer in the utility system. By controlling the appropriate scheme, the output currents can be obtained as the five‐level waveforms and their distortions can be decreased sufficiently. In this paper, we deduced an empirical equation for predicting the stabilities of the hydrides of AB5-type compounds with the consideration of the effects of geometrical factor and electric factor. The theoretical curves derived from this equation are in good agreement with the test results of La1−xCaxNi5, Ml1−xCaxNi5 and La1−xCexNi5 compounds. With this model, we can easily interpret the phenomenon that the initial partial substitution of R by Ca in R1−xCaxNi5 (R is rare earth metal) compounds cause an increase of hydrogen desorption pressure to a maximum value, whereas in the range of larger Ca content x the hydrogen desorption pressure decreases with increasing x. 相似文献
