Processing and stabilising onion wastes (residues and surpluses of onion) could solve the environmental problem derived from a great onion wastes disposal. Moreover, obtaining stabilised onion by-products as natural antioxidant food ingredients could be advantageous to food industry, not only to improve the use of onion wastes but also to obtain new natural and functional ingredients. The aim of this study was to characterise onion by-products – juice, paste and bagasse – from two Spanish onion cultivars – ‘Figueres’ and ‘Recas’ – that have been stabilised by thermal treatments – freezing, pasteurisation and sterilisation – in order to evaluate the effect of the processing and stabilisation treatment on the bioactive composition, antioxidant activity and polyphenol oxidase (PPO) enzyme inhibition capacity. The results obtained triggered to choose one onion by-product offering better characteristics for its potential development as a food ingredient: source of antioxidant and antibrowning bioactive compounds. In this study it was shown that processing of ‘Recas’ onion wastes to obtain a paste (mixture content) and applying a mild pasteurisation were the best alternatives to obtain an interesting stabilised onion by-product with good antioxidant properties that made useful its use as functional food ingredient.  相似文献

Addition of 25 mM calcium chloride to soy milk reduced pH, increased ionic calcium and caused it to coagulate. The effects of different chelating agents were investigated on selected physicochemical properties of soy milk and on preventing coagulation. The soy milks were then pasteurised to examine how heat treatment changed some of these properties as well as to evaluate their effects on heat stability.  相似文献

The effect of conventional and microwave pasteurisation on the main bioactive compounds of grapefruit juice and their stability during 2 months’ refrigerated and frozen storage was evaluated. Ascorbic acid (AA), vitamin C and organic acids were analysed by HPLC, whereas total phenols and antioxidant capacity (%DPPH) were measured by spectrophotometry. The results showed that conventional treatment led to a significant decrease in citric acid (from 1538 to 1478 mg/100 g) and AA (from 36 to 34.3 mg/100 g), whilst microwave pasteurisation preserved these compounds. Frozen storage maintained AA and vitamin C, especially in treated samples. Frozen non-treated samples and conventional pasteurised ones preserved about a 75% and 20% of the total phenols and antioxidant capacity, respectively, whilst in frozen microwave pasteurised juices this preservation was of 82% and 33%. From these results, the use of microwave energy may be proposed as an alternative to traditional heat pasteurisation in order to preserve the natural organoleptic characteristics and essential thermolabile nutrients of grapefruit juice.  相似文献
