This communication deals with the use of meta-analysis as a valuable tool for the synthesis of food safety research, and in quantitative risk assessment modelling. A common methodology for the conduction of meta-analysis (i.e., systematic review and data extraction, parameterisation of effect size, estimation of overall effect size, assessment of heterogeneity, and presentation of results) is explained by reviewing two meta-analyses derived from separate sets of primary studies of Salmonella in pork. Integrating different primary studies, the first meta-analysis elucidated for the first time a relationship between the proportion of Salmonella-carrier slaughter pigs entering the slaughter lines and the resulting proportion of contaminated carcasses at the point of evisceration; finding that the individual studies on their own could not reveal. On the other hand, the second application showed that meta-analysis can be used to estimate the overall effect of a critical process stage (chilling) on the incidence of the pathogen under study. The derivation of a relationship between variables and a probabilistic distribution is illustrations of the valuable quantitative information synthesised by the meta-analytical tools, which can be incorporated in risk assessment modelling. Strengths and weaknesses of meta-analysis within the context of food safety are also discussed. 相似文献

Seven hundred and fourteen pigs were monitored from transport to slaughter in July in three treatments: 8, 16 and 24 transport hours; lairage time for the three groups was of 8h. Transport duration significantly (P<0.05) affected live-weight gain during the rest period. Weight gain percentages at lairage were 0.05%, 0.78% and 1.15% for treatments 1, 2 and 3, respectively. Transport to slaughter loss percentage was 2.7%, 4.3% and 6.8% for each of the treatments. Short transport periods significantly increased carcass pH below normal values. Animals transported under acute stress (8h) showed pale carcasses (high possibilities of transforming into PSE meat). On the contrary, pigs transported for 24h had more dark red carcasses. Transport from farm to the slaughterhouse should take no more than 16h in order to improve carcass quality and animals' welfare. 相似文献

As part of the project “Religious slaughter (DIALREL): improving knowledge and expertise through dialogue and debate on issues of welfare, legislation and socio-economic aspects”, this paper discusses an evaluation of current practices during Halal and Shechita slaughter in cattle, sheep, goats and poultry. During religious slaughter, animals are killed with and without stunning by a transverse incision across the neck that is cutting the skin, muscles (brachiocephalic, sternocephalic, sternohyoid, and sternothyroid), trachea, esophagus, carotid arteries, jugular veins and the major, superficial and deep nerves of the cervical plexus. In this report, the restraint methods, stunning, neck cutting, exsanguination, slaughter techniques and postcut handling in the abattoir were assessed for religious slaughter. Information about the procedures used during religious slaughter in Belgium, Germany, Italy, the Netherlands, Spain, the UK, Turkey and Australia was collected by means of spot visits to abattoirs. To standardize the information gathered during the spot visits three guidelines were designed, one for each species, and translated into the national languages of the countries involved. The document included questions on the handling and restraint methods (stunning, neck cutting/exsanguination/slaughter techniques and postcut handling performed under religious practices) and for pain and distress of the animal during the restraint, neck cutting and induction to death in each abattoir. Atlantic salmon were exposed to carbon monoxide (CO) before the fish were percussively killed and gill cut. The fish were compared against a control group treated identically, without CO. Salmon exposed to CO expressed no adverse reactions and were easily stunned by percussion. CO-treated salmon had an earlier onset of rigor mortis and a faster decrease in muscle pH than the control group. No significant difference in drip loss was found between salmon treated with CO and the control. A significantly deeper red colour of both gills and fillets of CO-treated salmon was observed 10 days post mortem. Significantly higher levels of plasma lactate and potassium were found in CO-treated salmon compared to control, as well as a lower level of pCO2. Exposure to CO did not increase plasma cortisol, sodium, haematocrit or glucose; however, lactate was high. Exposure of salmon or other fish to CO could improve quality and welfare when slaughtered. 相似文献

Apart from Salmonella monitoring of pig herds during the period of growth to evaluate the efficacy of control programmes, monitoring at harvest level is of relevance to assess the Salmonella status of fattening pigs and the associated risk of introducing Salmonella organisms in the slaughter process. Samples from 1830 fattening pigs were gathered at slaughter. Ileocaecal lymph nodes, rectal and caecal content as well as tonsils were collected for bacteriological examinations, and a part of the diaphragm pillar muscle was taken to gain meat-juice for serological analysis. Salmonella spp. was recovered from 13.8% of all pigs examined. Salmonella Typhimurium and Derby were the dominating serovars. The highest detection rates were found in caecal content followed by ileocaecal lymph nodes. By analysing both organs nearly 90% of all Salmonella positive pigs could be identified. Serological examination revealed 9.6% of the pigs as positive using a cut-off value of OD % ≥ 40. Only one quarter of all Salmonella positive pigs showed also a positive serological result. A reduction of the cut-off value does not necessarily result in a higher compliance between bacteriologically and serologically positive slaughter pigs. Detection of antibodies is useful to verify whether pig herds were previously exposed to Salmonella organisms. However, the Salmonella status of pigs at time of slaughter and the associated risk of dissemination of Salmonella organisms can only be assessed by bacteriological examinations which should include both lymph nodes and caecal content. 相似文献

Slaughter by puntilla followed by neck sticking was examined in 20 recumbent llamas. Repeat stabbing was needed to penetrate the foramen ovale in 45% of the llamas, and two animals attempted to stand after the first stab. Puntilla was found to be ineffective, as all animals showed rhythmic breathing movements at the flank following puntilla and before sticking, and 95% had a positive palpebral reflex at the same time. The findings indicated that it is difficult in practice to penetrate the spinal cord with a single puntilla stab. 相似文献

Slaughter by puntilla followed by neck sticking was examined in 309 cattle, to assess the humaneness of this method. After the neck stab, brain and spinal function as well as presence of selected cognitive responses were measured. In addition breed, sex, live weight, body condition score, number of stabs given and level of experience of the slaughterman were recorded. Repeat stabbing was needed to penetrate the foramen ovale in 24% of the animals, and was significantly less frequent in slaughtermen who were experienced, and more frequent in heavy weight animals (>380 kg). Prevalence of brain and spinal function was 91%. When animals attempted to stand after the neck stab they were more likely to have rhythmic breathing, positive palpebral response and responsiveness to threat, noise and short air stimulus. These findings indicate that nerve pathways are often functional after neck stab and therefore it is highly likely that the animals are still conscious. 相似文献

The intramuscular lipid and fatty acid profiles of the m. longissimus dorsi from 84 sheep comprising four sex-types (enire ram, vasectomised ram, wether and ewe) and seven slaughter weights (32, 36, 40, 44, 48 and 52kg) were measured. Animals were reared following the commercial practice. Specifically, they were fed pasture and a concentrate diet, and age at slaughter ranged from 180 to 390 days. Differences between entire and vasectomised rams, and between wethers and ewes in intramuscular lipid content were not significant (P>0.05). However, entire and vasectomised rams were significantly lower (P<0.05) in intramuscular lipid content than ewes and wethers. Sex related differences in 14:0 (myristic acid), t18:1, c18:1, t18:2 and c18:2 proportions were not significant (P>0.05). Ewes and wethers were similar in 16:0 (palmitic acid) and 18:0 (stearic acid) proportions, but ewes contained significantly higher 16:0 and lower 18:0 proportions than entire and vasectomised rams (P<0.01). Entire and vasectomised rams recorded the highest c18:3 proportions, wethers were intermediate whilst ewes contained the lowest proportion (P<0.01). Although neither saturated fatty acid (SFA) nor monounsaturated fatty acid (MUFA) proportions varied with sex-type, vasectomised rams contained significantly higher polyunsaturated fatty acid (PUFA) proportion that the other sex-types (P<0.05). Whilst intramuscular lipid content, and 18:0 and c18:1 proportions were linearly correlated with slaughter weight (P<0.001), 14:0 and c18:3 proportions decreased quadratically with increasing slaughter weight (P<0.001). The vasectomised ram and the entire ram were similar in fatty acid profile, except the significantly higher PUFA proportion recorded by the vasectomised ram. 相似文献
