Influence of functional information on consumer liking and consumer perception related to health claims for blueberry functional beverages 下载免费PDF全文
The objective of this study was to investigate the impact of functional labelling on the consumers acceptability and purchase intentions of blueberry functional beverages (BFB). A 2‐day consumer acceptance test was conducted independently with functional information (n = 60) and without any information (n = 80). The presence of functional labelling did not influence the liking attributes of BFBs (P > 0.05). However, functional information positively affected consumer perception of health‐related perceptions associated with BFBs, such as ‘aiding eye health improvement’ and ‘eye fatigue relief’. Subjects perceived more health‐related perceptions when informed test was conducted. The first‐order effect was observed, in which the degree of the first‐order effect was greater for BFBs that had a thicker mouthfeel. Findings from the results can practically guide product developers and marketers in the functional drink industry by providing the strategy for how to evaluate reformulated functional beverages for the consumer acceptance test by warning a counter‐balanced sample presentation. 相似文献

This study investigated the impact of single branched‐chain amino acid addition (L‐valine, L‐leucine, L‐isoleucine) on nonvolatile and volatile constituents in lychee wine fermented with Saccharomyces cerevisiae MERIT.ferm. The individual addition of branched‐chain amino acids decreased the consumption of proline with significantly different rates. The lychee wine with added L‐leucine and L‐isoleucine had higher odour activity values (OAVs) of isoamyl alcohol, active amyl alcohol and isoamyl acetate. The lychee wine with added L‐valine had higher OAVs of isobutyric acid and isobutyl alcohol (5.55 and 2.98, respectively), which were lower in the wine with added L‐leucine (2.91 and 1.02, respectively) or L‐isoleucine (3.43 and 1.73, respectively) relative to the control wine (4.18 and 1.77, respectively), suggesting interactive effects among the amino acids. 以桑葚干果为实验原料,考察桑葚发酵液中总酚、类黄酮、花青素的含量及抗氧化活性能力在发酵过程中的变化情况。结果表明:发现前发酵10 d的类黄酮和花青素类物质受发酵的影响逐渐变少,而总酚类物质含量逐渐升高;抗氧化活性总体上呈先升后降的趋势,相比于发酵开始时下降了近50%。DPPH和FRAP法相较于ABTS法,更适合表征桑葚发酵液的抗氧化活性变化情况。桑葚酒再经过40 d陈酿最终残还原糖为14.21 g/kg,乙醇浓度为101.6 g/kg,总酚含量2.124 g/kg,花青素含量579.4 mg/kg,类黄酮41.2 g/kg,DPPH自由基清除率为21.1%,FRAP抗氧化活性为40.9μmol Fe2+/L,总浸出物为23.241 g/L,符合国家相关标准,为进一步开发高生物活性桑葚精深加工产品提供了一条可行的途径。 相似文献

Astringency is a sensory attribute, related to the quality and mouthfeel of red wines. However, the origin of astringency sub-qualities, such as the typical drying astringency found in immature grapes, is still unknown. Astringency of red wines with similar tannin content but different astringency sub-qualities, from different harvest dates, is studied. Astringency was characterised in terms of friction coefficient, polyphenol content, sensory analysis and tannin/salivary–proteins aggregates characterisation. A different evolution during ripening was found for both Cabernet Sauvignon and Carménère, and tannin–protein aggregates showed differences in size, shape and surface. The velvety sub-quality appears to be related to aggregates with low precipitation, and with specific surface characteristics as roundness and Feret diameter. Results from this work propose an effect of aggregates on sensory perception and opens the possibility to explore their effect on oral lubrication. 相似文献

为了确定柑橘红茶菌饮料的最佳发酵工艺参数。该研究以新会柑橘、英德红茶为主要原料,通过接种红茶菌发酵生产柑橘红茶菌饮料,在单因素实验的基础上,采用Box-Behnken响应面法设计试验,运用4因素3水平,以pH值为响应指标,探究乳酸菌粉添加量、蔗糖添加量、发酵时间和发酵温度四种因素对柑橘红茶饮料品质的影响,并确定柑橘红茶菌饮料发酵的最佳工艺条件参数。结果表明,柑橘红茶菌饮料发酵的最佳工艺条件参数为:乳酸菌添加量0.40%、蔗糖添加量15%、发酵温度32 ℃、发酵时间为4 d。在此条件下,此时pH值为3.14,感官评价分值为93.1分,可溶性固形物消耗量为12.30%,与3次验证试验的结果接近,说明回归模型拟合程度高,因此响应面法优化柑橘红茶菌饮料的发酵工艺具有可靠性,可为柑橘红茶菌饮料研发提供一定的科学依据。 相似文献
