Milk fat exists as globules in its natural state in milk. The potential of using globular fat to modulate the rheological properties and crystallization behavior in butter-like emulsions was studied in the present work. We conducted a comparative study of butter-like emulsions, with a fat phase consisting of 0, 10, 25, 50, or 100% anhydrous milk fat (AMF), the remaining fat being butter grains, and all samples containing 20% water, to obtain systematic variation in the ratio of globular fat. All emulsions were studied over 4 wk of storage at 5°C. By combining small and large deformation rheology, we conducted a detailed characterization of the rheological behavior of butter-like emulsions. We applied differential scanning calorimetry to monitor thermal behavior, confocal laser scanning microscopy for microstructural analysis, and low-field pulsed nuclear magnetic resonance spectrometry to measure solid fat content. By combining these techniques, we determined that increasing the fraction of globular fat (by mixing with butter grains) decreases the hardness of butter-like emulsions up to an order of magnitude at d 1. However, no difference was observed in thermal behavior as a function of butter grain content, as all emulsions containing butter grains revealed 2 endothermal peaks corresponding to the high (32.7°C ± 0.6) and medium (14.6°C ± 0.1) melting fractions of fatty acids. In terms of microstructure, decreasing the amount of butter grains in the emulsions resulted in formation of a denser fat crystal network, corresponding to increased hardness. Moreover, microstructural analysis revealed that the presence of butter grains resulted in faster formation of a continuous fat crystal network compared with the 100% AMF sample, which was dominated by crystal clusters surrounded by liquid oil. During storage, hardness remained stable and no changes in thermal behavior were observed, despite an increase in solid fat content of up to 5%. After 28 d of storage, we observed no difference in either microstructural or rheological properties, indicating that formation of primary bonds occurs primarily within the first day of storage. The rheological behavior of butter-like emulsions is not determined solely by hardness, but also by stiffness related to secondary bonds within the fat crystal network. 以酿酒酵母菌和植物乳杆菌作为发酵剂,探讨白砂糖和黄油对面包感官品质、比容和体积、质构、挥发性风味物质的影响。结果表明:白砂糖和黄油可显著改善面包的外观、色泽、组织结构、弹性、气味和口感等;可使面包的体积提高13.80%,硬度降低35.35%,弹性降低37.91%。在挥发性风味物质主成分方面,电子鼻检测结果表明,白砂糖和黄油使面包样品形成的风味主成分区域几乎无重叠,显著改变面包样品中挥发性物质主成分,对面包中氮氧化物、硫化合物、芳香族化合物、芳烃化合物、甲烷类和乙醇等化合物的产生影响显著。在挥发性风味物质含量方面,气相离子迁移色谱检测结果表明,白砂糖和黄油显著影响面包样品挥发性风味物质的种类和含量。其中,乙酸甲酯、乙酸异戊酯、己酸乙酯、糠醛等物质的含量明显增加。这些酯类物质既是挥发性风味物质,又是发酵香气成分中的主要呈香物质。综上可知,白砂糖和黄油在改善面包的食味品质方面发挥着重要作用。 相似文献

为开发藏酥油风味香精,采用同时蒸馏萃取方法制备样品,利用GC-MS技术对天然藏酥油中的风味物质进行了分离、鉴定,经NIST谱图库比对,共确定了32个相似度在90以上的化合物,采用面积归一化法确定了各组分的相对含量,其中羧酸类12个,占71.81%;酮类6个,占9.33%;酯类5个,占1.49%;醇类3个,占4.44%;烯类2个,占1.46%;内酯类、醛类、醚类和酚类化合物各1个,分别占0.71%、0.24%、3.53%和13.75%。以GC-MS鉴定结果为依据,结合调香技术制备藏酥油香精,并将其应用于植物性藏酥油的开发。将植物性藏酥油与天然藏酥油在酥油茶中的应用进行感官评定,结果显示:植物性藏酥油在奶香、茶感和协调性方面优于天然藏酥油;滑口度和脂肪感稍逊于天然藏酥油。本文为开发藏酥油风味系列产品提供数据依据。 相似文献

Measurement of solid fat content by ultrasonic reflectance in model systems and chocolate 总被引:4,自引:0,他引:4
A series of confectionery coating fat (CCF) and cocoa butter (CB) dispersions in corn oil were prepared and tempered to a range of temperatures (10, 12 and 15 °C and 26, 27.5 and 29 °C respectively) to produce samples with solid fat contents (SFC) between 0 and 9%. The ultrasonic velocity in the CCF samples increased with increasing SFC and decreased with temperature, however the CB samples were too attenuating to allow velocity measurements. The ultrasonic reflectance at the surface of both sets of dispersions decreased linearly with SFC but at the same level of solids was less for CB than CCF suggesting some dependence on other aspects of fat structure. The microstructures and thermal properties of the fat systems are compared in an attempt to understand these structural differences. Finally ultrasonic reflectance is shown to respond to changes in a chocolate melt during tempering. 相似文献

Dielectric properties of Indian Basmati rice samples (dry ground flour and wet aqueous slurry) were measured over the frequency range 500–2500 MHz. Temperature dependence of dielectric properties of rice flour slurries (20, 30 and 50 g flour per 100 g water yielding approximately 1:5, 1:3 and 1:2 flour to water ratio) were studied between 30 and 80 °C. Results indicated that dielectric constants (ε′) generally did not vary with frequency while the loss factor (ε″) showed an increasing trend. A sharp change in dielectric parameters were noted above 70 °C attributable to rice starch gelatinization, an observation confirmed later by differential scanning calorimetry. An increase in flour slurry concentration systematically reduced ε′ during the entire frequency range while variations in ε″ values were mixed. Addition of 1% salt markedly increased ε″ of slurries whereas butter resulted in significant reduction in ε′ values. Rice flour slurry containing both salt and butter exhibited intermediate values of dielectric properties. Both ε′ and ε″ data of rice slurries generally fitted a 2nd order polynomial relationship with temperature. These results suggest that dielectric measurements could be used to study frequency, concentration, ingredient and temperature dependent changes in starch–water systems during heating. 相似文献

Separation of the six sub-fractions of triacylglycerols (TAG) from cocoa butter, three cocoa butter equivalents (CBEs: calvetta,
choclin and coberine) and their mixtures was carried out by silver ion high-performance liquid chromatography. The percentage
fatty acid composition of all these sub-fractions was then measured by high-resolution gas chromatographic analysis of the
methyl esters of the constitutive fatty acids. In particular, the percentage quantities of all acids in the fully saturated
sub-fraction of pure fats and some of their mixtures were evaluated as a function of the percentage CBEs added to cocoa butter
in order to devise multiple regression models. The aim was to obtain statistical tools for the identification and/or quantification
of added CBEs. The results obtained show the effectiveness of TAG sub-fraction percentage fatty acid composition data for
the purposes of research, as well as the potential use of stereospecific analysis of the same sub-fractions. In fact, the
stereospecific analysis of TAG fractions from cocoa butter and CBEs already carried out has enabled observation of the different
distributions of various fatty acids in the glycerol backbone of TAG from cocoa butter and the CBEs under study, and this
will certainly result in the development of more powerful and discriminating statistical models.

Structural isomers of monoacylglycerols (monoglycerides, MAGs) were identified and compared after degradation of butter oil by two strains of Penicillium roquefortii and a commercial lipase from P roquefortii (EC 3.1.1.3) at pH 7.0 and 10 °C. The conditions were selected as they were comparable with those used in the manufacture of blue mould‐ripened cheese. The commercial lipase was selected to compare with the fungal strains in terms of acyl migration. Results showed that the main isomers formed by lipolysis with the commercial lipase were sn‐2 MAGs (64 mol%), whilst spores and emerging mycelia of P roquefortii produced mainly sn‐1(3) MAGs (83–90 mol%). The work reported here may lead to further assessment of different MAG structural isomers as natural preservatives in foods and dairy products. © 2002 Society of Chemical Industry 相似文献

Sheep's anhydrous butter fat as prepared by including separately heat grits, turmeric, rosemary, sage, rue and fennel at a level of 75 g dry matter kg?1 butter. The product as stored at room temperature in clear glass jars for a period of one year. The storage stabilities of the anhydrous butter fat samples ere compared ith a control and ith a sample treated ith a 1:1 mixture of BHA and BHT at a level of 0.25 g kg?1. Both storage time and type of treatment had highly significant effects (P?0.01) on the peroxide value and free fatty acid content of the product. None of the treatments succeeded in keeping the peroxide value belo 5 mEq O2 kg?1 beyond the fourth month of storage. The BHA-BHT mixture and rosemary helped extend the peroxide induction period to 10 and 6 months respectively. Turmeric and heat grits ere as effective as BHA-BHT in controlling the oxidative rancidity during the first four months of storage. The rest of the herbs exhibited a pro-oxidant effect throughout the study hen they ere used separately. In a second experiment, some cases of positive synergistic interactions ere observed beteen turmeric and heat grits on one hand and the herbs used in the study on the other. This pattern as not regular as negative interactions ere also observed in some other cases. Free fatty acid content of all the samples remained belo 10 g kg?1 as oleic acid; hoever, fennel had a significant (P?0.05) effect on controlling the evolution of free fatty acids. 相似文献
