玉米芯作辅料酿造酱油的研究

为降低酱油生产成本,介绍了用玉米芯作辅料生产酱油的工艺。着重介绍了原料处理、盘制曲和厚层通风制曲、低盐固态发酵法和高盐稀醪发酵法等工艺的操作要点。利用上述方法生产出的酱油都达到了标准的要求。     

沙棘叶提取物的体外抗氧化及乙酰胆碱酯酶抑制能力

以沙棘叶为原料,以DPPH?清除能力、总还原力为指标,评估沙棘叶提取物的体外抗氧化活性,并以沙棘叶提取物对乙酰胆碱酯酶的抑制能力为指标,考察其成为乙酰胆碱酯酶抑制剂的潜力。研究结果表明：5种不同乙醇体积分数的（40%、50%、60%、70%、80%）沙棘叶提取物均有较好的抗氧化活性与对乙酰胆碱酯酶抑制能力。以60%乙醇提取的沙棘叶提取物的DPPH?清除率、总还原力及乙酰胆碱酯酶抑制能力最强,分别为（85.80±1.39）%,3.06±0.18,（97.14±0.809）%,可作为抗氧化剂与乙酰胆碱酯酶抑制剂。筛选后的沙棘叶提取物对乙酰胆碱酯酶有较强的抑制能力,半数抑制质量浓度（IC50）值为（1.086±0.144）mg/mL,并且根据酶的抑制动力学分析得出对乙酰胆碱酯酶是竞争性大于非竞争性的混合可逆抑制类型。AutoDock分子对接结果也表明,沙棘叶活性成分与乙酰胆碱酯酶具有一定的对接亲和力。剂效相关性分析表明沙棘叶提取物的抗氧化、酶抑制活性与功能成分之间均存在良好的正相关性（P<0.05）,沙棘叶提取物中起主要抗氧化与酶抑制作用的成分为多酚类化合物.     

橙皮素胶束溶液的制备及透明质酸对其稳定性和经皮渗透作用的影响

制备橙皮素胶束溶液,并以Zeta电位和经皮渗透速率为指标,考察透明质酸对胶束溶液稳定性和经皮渗透活性的影响。结果表明,透明质酸可显著提高橙皮素胶束溶液的稳定性和经皮渗透活性,当其质量分数为0.5%时,胶束溶液透明稳定、无不良气味,室温下pH平均值为5.4±0.1,Zeta电位平均值为-32.62 m V,橙皮素经豚鼠皮肤的稳态渗透速率常数Js达7.475 8μg/(cm~2·h),为对照组的1.5倍。橙皮素胶束溶液耐寒和耐热实验均表现出良好的稳定性。     

“太空人参酵母”在化妆品中潜在应用研究

通过体外细胞平台,从多角度对应用太空育种技术和现代发酵技术而获得的"太空人参酵母"提取物进行功效验证,为其在化妆品中的应用提供理论依据和科学指导。结果揭示"太空人参酵母"可以明显促进人原代角质细胞的增殖能力、克隆形成能力及划痕修复能力,并且可以促进基底层基底源生蛋白(Perlecan)的表达;此外"太空人参酵母"还有助于重离子辐照后的人原代成纤维细胞恢复细胞形态,恢复基底源生蛋白、Ⅰ型胶原蛋白和弹性蛋白表达的能力。以上结果表明,"太空人参酵母"具有提高细胞再生能力的活性,具有应用于促肌肤再生类化妆品的潜力。

Ice Cream: Foam Formation and Stabilization—A Review

Ice cream has been studied from ingredients to process conditions, ice crystal formation to ice crystal growth, and ingredient selection to eating quality. One of the key aspects of ice cream is air cells, as formation and acceptance of ice cream rely on foam production and stabilization. Air cells in ice cream provide a unique structure that governs many of this product's keeping and eating qualities. The air cells are dependent upon ice cream mix composition (fat, protein, and surface active ingredients) as well as processing conditions (freezer shear force, hardening time, and storage temperatures). Optical, low-temperature scanning electron microscopy and transmission electron microscopy are applied to observe the morphology and size of air cells in ice cream. Air cells are crucial in forming the product and for eating quality and enjoyment.

The performance of a medico-cosmetic consultation unit

The facial skin of almost 500 women was measured by low pressure indentometry and surface pH-metry. The women's skin was also classified by visual observation by a well-trained cosmetician. Agreement between indentometry and cosmetic definition was found to be well correlated, except in the group of young women with dry skin. In this group, we believe, indentometry more accurately describes skin status. A significant relationship was found between high skin pH (>5.9) and lack of elasticity in the older age group with dry skin. It is hypothesized that high skin surface pH below the age of 70 is an expression of accelerated ageing process, and further, that chronic, high pH treatment of the skin leads to accelerated loss of skin elasticity. L'évaluation objective de l'état cosmétique de la peau en milieu medical La peau du visage de près de 500 femmes a été examinée par indentométrie, basse pression et par pH métrie superficielle. Les types de peau ont également été classés visuellement par un cosméticien entraîne. On a trouvé une bonne corrélation entre la définition cosmétique et les résultats de l'indentométrie sauf pour un groupe composé de jeunes femmes à peau sèche. Nous pensons que pour ce groupe ce sont les résultats de l'indentométrie qui permettent la meilleure appréciation de l'état de la peau. Dans un groupe de personnes plus âgées à peau sèche on a trouvé une relation significative entre des valeurs élevées du pH de la peau (pH > 5.9) et son manque d'élasticité. On a émis l'hypothèse que des valeurs élevées du pH cutané chez des sujets de moins de 70 ans constituaient une manifestation de vieillissement précoce et par tant que le traitement régulier avec les produits de pH élevé pouvait conduire à une perte d'elasticité plus rapide de la peau.
