Buffalo milk Cheddar cheese samples of different ages were analysed for compositional attributes (CA), ripening indices (RI) and Instron Textural Profile (ITP). All samples were compositionally alike, except for pH and salt-in-moisture (SM) contents. RI showed significant variations. CA and RI showed highly significant correlations within themselves and with each other, except for moisture with pH, SM with moisture, MNFS, Fat and FDM and Fat with MNFS. The ITPs of cheeses showed significant variations and had highly significant intercorrelations indicating their interdependence. CA (except moisture and MNFS) and RI showed a highly significant correlationship with ITPs. Moisture content showed a highly significant correlationship with all ITPs, except cohesiveness and springiness, where it was significant. MNFS content showed significant correlations only with hardness and brittleness. Stepwise regression analysis revealed that MI was the most predominant factor influencing cheese texture, followed by pH, SM, FDM and TVFA. Knowing Ca and RI, the textural properties of cheeses can be forecast through mathematical equations. Similarly the age of cheese can also be predicted if RI and/or textural properties are known.  相似文献

Sucrose crystallization in thin films (50–55 μm) was studied, using a videomicroscopy technique, at conditions encountered during hard panning processes. No nucleation occurred in unseeded films, while a linear increase in seeded crystals occurred during drying. Crystal growth rate increased with temperature (25–30°C) and with air velocity (2.4–12.5 m/sec), but did not change with varying sucrose concentrations (70–76% w/w) and relative humidities (0–66% at 30°C). FD & C Yellow No. 5 food coloring in the dye form (0.05–0.5 g/100 mL) showed no effects while similar concentrations in the lake form inhibited crystal growth rate.  相似文献

Investigations have been carried out on an erosion-corrosion apparatus to investigate the behaviour of corrosion-resistant highalloy iron-base materials containing hard phases. These materials had been optimized for increased wear resistance under complex stress conditions. As expected, in dry erosion tests, very low mass losses were established; there was little difference between the materials. Also, in corrosive environments (NaCl, H2SO4), the materials showed good stability; however, the duplex structures were superior to the martensitic ones. The combination of erosion and corrosion produced large differences and, in some cases, markedly reduced resistance to damage. These results confirmed observations that it is impossible to deduce the environmentally influenced mechanical behaviour of an alloy from its behaviour in separate corrosion and erosion experiments. The basic mechanisms underlying these processes have been investigated only tentatively.  相似文献

We describe a scheme for implementing dynamic casts suitable for systems where the performance and predictability of performance is essential. A dynamic cast from a base class to a derived class in an object‐oriented language can be performed quickly by having the linker assign an integer type ID to each class. A simple integer arithmetic operation verifies whether the cast is legal at run time. The type ID scheme presented uses the modulo function to check that one class derives from another. A 64‐bit type ID is sufficient to handle class hierarchies of large size at least nine levels of derivation deep. We also discuss the pointer adjustments required for a C++ dynamic_cast. 以 2 ,4 -甲苯二异氰酸酯 (2 ,4 -TDI)、不同分子量的聚己二酸丁二醇酯 (PBAG)和 1,4-丁二醇 (BDO)为原料合成了具有形状记忆功能的聚氨酯材料。通过DSC、弯曲实验和力学实验 ,研究了形状记忆聚氨酯的性能 ,发现软段高度结晶和硬段聚集形成硬段微区是其具有较好形状记忆性能的必要条件。  相似文献

Conservation of food products depends on product quality and packaging suitability. The objective of this work was to develop and evaluate the antimicrobial efficiency of natamycin‐incorporated film in the production process of Gorgonzola cheese. It aims to optimize the production process and increase shelf‐life and food safety for the consumer. Films with different concentrations of natamycin were produced and tested in Gorgonzola cheeses to evaluate its efficiency against Penicillium roqueforti on the cheese surface. Films with 2 and 4% natamycin presented satisfactory results for fungus inhibition and the amount of natamycin released to the cheese was below that allowed by the legislation. The behavior of an ultrasonic shot peening process is observed and analyzed by using a model of inelastic hard spheres in a gravitational field that are fluidized by a vibrating bottom wall (sonotrode) in a cylindrical chamber. A marked heterogeneous distribution of impacts appears when the collision between the shot and the side wall becomes inelastic with constant dissipation. This effect is one order of magnitude larger than the simple heterogeneity arising from boundary collision on the cylinder. Variable restitution coefficients bring the simulation closer to the general observation and allow the investigation of peening regimes with changing shot density. We compute within this model other physical quantities (impact velocities, impact angle, temperature and density profile) that are influenced by the number N of spheres.  相似文献

Crystalline behavior and magnetic properties of Nd60Fe30-xAl10Cox( x = 0, 5, 10) bulk amorphous alloys were investigated by differential scanning calorimeter (DSC), X-ray diffraction (XRD) and the vibrating sample magnetometer (VSM). Neither glass transition nor supercooled liquid region before crystallization was observed for the as-cast Nd60Fe30-xAl10Cox ( x = 0,5,10) bulk amorphous alloys. The glass forming ability can be improved significantly by the addition of Co. The as-cast Nd60Fe30-xAl10Cox (x = 0,5,10) alloys show hard magnetic behavior. With the addition of Co content, intrinsic coercivity (iHc) increases while the saturation magnetization(σs) and remanence (σr) decrease. The Curie temperature for the as-cast Nd60Fe30-xAl10Cox alloys increases from 451 K for x =0 to 468 K for x = 10. Some pre-cipitation of crystalline phases does not affect the hard magnetic properties of Nd60Fe30-xAl10Cox(x = 0,5,10) alloys, while the hard magnetic behavior disappears quickly after the alloys being completely crystallized.  相似文献
