Non-conventional mashing conditions are relevant in the development of a lactic acid-fermented soymilk beverage where mashed rice is the source of carbohydrates for the fermentation and sweetness of the beverage. Advantages in the process layout could be achieved by mashing at higher pH and lower malt concentrations than normally used in the brewing industry. the work reported here assessed the consequences of mashing under non-conventional conditions. Malt concentration in the cereal part was varied from 25% to 70% (w/w), pH was varied within 5.3 to 7.1, and prolongation of the holding times at 50°C and 62°C was investigated. Regression equations have been established for predicting yields of soluble protein, low molecular weight sugars and total fermentability as functions of pH and malt concentration. the results showed that the maltose yield was constant while glucose, maltotriose and total fermentable sugar yields decreased slightly with increasing pH and decreasing malt concentration. Prolonged mash holding times at 50°C and 62°C gave minor increases in protein yields only. It is concluded that it is quite acceptable to use non-conventional mashing conditions when a mashing step is integrated in other food processes.  相似文献

There is an increasing need for rapid test methods to certify the quality and safety of food products. Current tests applied for the microbiological assessment of food products are based on standard approved culture-based isolation methods and can take several days to yield results. Nucleic acid diagnostic (NAD) tests for the identification of bacterial foodborne pathogens employing in vitro amplification technologies are capable of sensitive and specific detection of single or multiple pathogens in foods in a shorter timeframe than traditional methods. New developments in molecular biosensors have the potential to provide at-line bioanalysis, whereas microarray-based technologies may in the future be the NAD platforms of choice for multiple pathogen detection and identification. This article reviews current and emerging NAD platforms for foodborne bacterial pathogens that have the potential to impact food safety.  相似文献

Food products can be high‐pressure processed (HPP) either in bulk or prepackaged in flexible or semi‐rigid packaging materials. In the latter case the packaging material is subjected, together with the food, to high‐pressure treatment. A number of studies have been performed to quantify the effects of high‐pressure processing on the physical and barrier properties of the packaging material, since the integrity of the package during and after processing is of paramount importance to the safety and quality of the food product. In this first behavior genetic study on infant-father attachment, we estimated genetic and environmental influences on infant-father attachment behaviors and on temperamental dependency, both assessed with the Attachment Q-Sort (AQS; B. E.Vaughn & E. Waters, 1990; E. Waters, 1995). Mothers of mono- and dizygotic twins (N = 56 pairs) sorted the AQS with a focus on the infant's behaviors in the presence of the father. Genetic modeling showed that attachment was largely explained by shared environmental (59%) and unique environmental (41%) factors. For dependency, genetic factors explained 66% of the variance, and unique environmental factors including measurement error explained 34%. Before 12 months of age, infants have difficulties coordinating and sequencing their movements to retrieve an object concealed in a box. This study examined (a) whether young infants can discover effective retrieval solutions and consolidate movement coordination earlier if exposed regularly to such a task and (b) whether different environments, indexed by box transparency, would impact the rate of learning and time of discovery of these solutions. Infants (N=12) were presented with an object retrieval task every week from 6 1/2 months of age until they were able to retrieve the toy from the box using coordinated two-handed patterns for 3 weeks. To reach that criterion, infants tested with an opaque box took 2 1/2 months and infants tested with a semitransparent box took 1 1/2 months. Both groups outperformed age-matched controls who received a one-time exposure to the task. The results of a co-trial organized by the Community Bureau of Reference on the use of Electron Spin Resonance spectroscopy for the identification of irradiated food in 21 laboratories are presented. The trial was qualitative on beef and trout bones, sardine scales, pistachio nut shells, dried grapes, and papaya, and quantitative on poultry bones. There was no difficulty in identifying irradiated meat bones, dried grapes, and papaya. In the case of fish bones there is a need for further kinetic study on different species. Identification of irradiation in pistachio nuts is more complicated and additional research is needed before further trials. All laboratories were able to distinguish between chicken bones irradiated at 1 to 3 kGy or 7 to 10 kGy although there was a partial overlap between the results.  相似文献
