Chitosan has been shown to be effective for control of postharvest diseases on various fruit. However, little is known about the effect of chitosan on blue mold caused by Penicillium expansum on jujube fruit. Here we show that application of chitosan reduced disease development of blue mold caused by P. expansum in wounded and inoculated jujube fruit at 25 °C. Chitosan also provided an inhibitory effect on natural decay of jujube fruit during storage at 0 °C. Application of a chitosan coating to fruit had hardly any significant effect on the changes of weight loss, soluble solid contents, titratable acidity, and vitamin C, as storage time increased. To investigate the mechanisms underlying the effectiveness of chitosan against blue mold on jujube fruit, we analyzed the growth of P. expansum after chitosan treatment. Results indicated that spore germination, germ tube length and mycelial growth of P. expansum were significantly inhibited by chitosan in a concentration-dependent mode. Using the fluorescent probe propidium iodide, we found that the plasma membrane of P. expansum collapsed significantly after chitosan treatment. Further observation by electron microscopy revealed that plasma membrane of P. expansum was gradually disrupted after chitosan application. Our data suggest that chitosan may be potentially used for controlling postharvest diseases in jujube fruit without negative effect on fruit quality. 相似文献

This article describes a comparative study of enzyme and ultrasound techniques for the simultaneous extraction of vitamin C and phenolic compounds from acerola fruit. Ultrasound‐assisted extraction (UAE) took only 6 min to achieve the highest level of vitamin C and phenolic compounds as well as antioxidant activity of acerola juice, while enzyme‐assisted extraction (EAE) took up to 120 min to obtain the maximal values. On the basis of kinetic model of second‐order extraction, the extraction rate constant of vitamin C and phenolics in UAE increased approximately 3.1 and 2.7 times, respectively, in comparison with that in EAE. In addition, the maximal level of vitamin C, phenolics and the antioxidant activity evaluated by 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH), and 2,2′‐azinobis‐(3‐ethylbenzothiazoline‐6‐sulphonic acid) (ABTS) methods in UAE was 4.6%, 3.5%, 4.6% and 3.3%, respectively, higher than those in EAE. The study has focused on electricity generation from organic acid-rich bio-substrate like star fruit (Averrhoa carambola). The sap of star fruit was selected as an electrolyte due to the presence of significant amounts of organic acids such as citric acid and ascorbic acid. To preserve the sap, 2% phenol by volume was used to reduce the growth of microorganisms, and the addition of phenol did not affect the initial pH. It was observed that due to an increase in the electrode surface area, reaction rate and current generation had been amplified. Internal resistance also decreased rapidly because of the large electrode surface area. Furthermore, internal resistance was the significant barrier in electricity generation, which was also successfully controlled by the baffle flow agitation system. The pH, proteolytic activity, extent of demineralisation and deprotenisation of shrimp waste were studied during 7 days of fermentation using Pseudomonas aeruginosa A2. After 3 days, pH dropped from 7.0 to 4.4 and then remained constant. Simultaneously, a demineralisation of 92% was achieved. However, protease activity reached its highest level (1230 U mL?1) after 1 day of incubation, and a protein removal of 90% was achieved. Chitin obtained was converted to chitosan. This chitosan, with 73% deacetylation, was tested for clarification of different fruit juices. It was observed that low concentrations of chitosan (below to 1%) greatly increase the clarity of juices without affecting the nutritional value. The antioxidant activity of the hydrolysates produced during fermentation was tested. Hydrolysate obtained after 3 days showed the strongest scavenging activity (90%), which was comparable to the positive control BHA; however, that obtained after 1 day exhibited the highest ferric‐reducing antioxidant power (OD 700 nm = 1.7). 相似文献

The PetroOXY method was used to evaluate the kinetics of oxidation of two edible vegetable oils, extracted from moringa and passion fruit. This method, which uses pure oxygen at 700 kPa is effective and fast and our experiments were carried out at temperatures 110–140 °C with BHA antioxidant additive concentration ranging from 0 to 500 ppm. Moringa and passion fruit oils followed first-order kinetics although, in the case of passion fruit oil, mathematical approximations in the first-order kinetic expression resulted in a final equation that could also be interpreted as deriving from zero-order kinetics. This study describes a rapid total analysis system (TAS) to detect the authenticity of fruit-flavoured foods and beverages by on-line combining headspace solid phase microextraction (HS-SPME) with enantioselective GC-MS (Es-GC-MS) and statistical multivariate methods (PCA, HCA). Peach, coconut, apricot, raspberry, as fruits mainly characterised by γ- and δ-lactones as chiral markers, strawberry (α-ionone, linalool, nerolidol, ethyl 2-methylbutyrate, 2-methylbutyric acid and γ-lactones) and melon (ethyl 2-methylbutyrate and 2-methylbutanol) were investigated. The system was developed by (a) optimising non-equilibrium HS-SPME sample preparation, (b) speeding-up ES-GC using cyclodextrin derivatives as chiral selectors with conventional and narrow-bore columns and (c) elaborating data by multivariate methods. The resulting TAS affords a reduction of the time needed for the whole analytical process from about 150 min to 20-50 min (67-87% of the current routine method) depending on matrix, sampling and analysis conditions and Es-GC columns. 相似文献
