The ScMM (Supercritical Melt Micronization) process was applied for the production of microparticles from anhydrous milk fat (AMF) and a diacylglycerol-based modified milk fat (D-AMF). Both fats were able to dissolve ca. 30 wt% CO2 in the studied pressure and temperature ranges, being the CO2 amount slightly higher for AMF. A melting point depression was observed in both systems in the presence of CO2. Two powder morphologies were obtained (spherical hollow particles and a mass sponge-like broken particles) depending on the ScMM process conditions. The concentration of CO2 in the fat melt was the main process variable affecting the particle morphology, followed by the temperature of the melt. The small broken particles originated from the breakage of spherical fat particles that solidified before all CO2 could escape from the atomized droplets. While the hollow spheres had a tendency to agglomerate, the broken microparticles constituted a free-flowing powder as long as they were stored at low temperatures (up to −18 °C). Both types of particles have a potential for being incorporated in refrigerated or frozen food products as a structuring agent. 相似文献

On‐line liquid chromatography‐gas chromatography (LC‐GC) has been applied to the detection of vegetable oils in milk fat using β‐sitosterol as marker. The method involves transesterification of the fat, pre‐separation of the sterol fraction from other lipid constituents and on‐line transfer to the capillary GC system. The on‐line approach avoids time‐consuming sample preparation steps prior to GC analysis. The suitability of this analytical approach was tested with model mixtures of milk fat with cotton and rapeseed oil. The method allows the detection of adulterations at low levels. Simultaneous quantification of cholesterol in milk fat is also possible. Considering the rapid sample preparation, the described method can be applied for screening of large sample numbers. 相似文献

Palm olein was modified via lipase-catalyzed acidolysis reaction to obtain fatty acid composition and positional distribution similar to human milk fat. In the reaction, a free fatty acid mix containing 23.23 % docosahexaenoic (DHA), 31.42 % gamma-linolenic (GLA), and 15.12 % palmitic acid was employed. The DHA and GLA were incorporated into the structured lipid (SL) product to improve its nutritional value. Response surface methodology (RSM) was used to investigate the effects of reaction time and substrate mole ratio (palm olein to a free fatty acid mix) on the amount of palmitic acid at the sn-2 position of SL triacyglycerols (TAG), and on the total DHA and GLA incorporation. Gram-scale production of SL was performed using the conditions predicted by RSM to maximize the content of palmitic acid at the sn-2 position. Verification of the predictions from RSM confirmed its practical utility. The resulting SL had 35.11 % palmitic acid at the sn-2 position, with 3.75 % DHA and 5.03 % GLA. Differential scanning calorimetry and HPLC analyses of the TAG revealed changes in their polymorphic profiles and TAG molecular species of SL compared to palm olein. AbstractIn this study, novel bioactive material has been identified for the removal of fluoxetine from breast milk. For this purpose, the poly (vinyl alcohol)/poly (acrylic acid) based nanofiber with an antibody immobilized has been developed. The efficiency of this nanofiber was compared with the control pore glass (CPG) either in milk. The bioactive nanofiber removed fluoxetine significantly higher than the CPG. The efficiency of the fluoxetine removal with the nanofiber was 98% in breast milk. In conclusion, the nanofiber based immunosorbent surface that is developed in this study was found to be efficient for chemical sensing of fluoxetine. 相似文献

Phospholipids (PLs) and cholesterol in human milk (HM) are affected by lactation, and differential lipids are closely related to maternal diet. The contents of PLs and cholesterol in Chinese HM are quantified by gas chromatography and high performance liquid chromatography, respectively, and the relationship between differential lipids and the maternal diet is obtained by Pearson. The result shows that SFA, MUFA, and polyunsaturated fatty acid (PUFA) are not affected by lactation and geography for total fatty acids, but almost all sn‐2 fatty acids are influenced by geography and remain unchanged during lactation. Most SFAs show absolute sn‐2 selectivity and the majority of MUFAs and PUFAs are esterified at the sn‐1 position. Cholesterol (13.8–22.6 mg per 100 g milk) and 25‐hydroxycholesterol (0.45–1.01 mg per 100 g milk) increase significantly and remain constant during lactation, respectively, and they are affected by regions. In addition, the differential lipids (22:1n‐9, C9:0, trans‐PUFA, 22:4n‐6, etc.) of PLs are closely related to the maternal diet. PLs and cholesterol content differ from western research and infant formula, which will help to design an infant formula that is more suitable for Chinese babies in the future. Practical Application: Compared with PLs and cholesterol in western countries and infant formula, the specificity of Chinese HM can more accurately target the development of formulas suitable for the growth of Chinese infants. ABSTRACTIn this study, for the first time, polycaprolactone (PCL) nanofiber matrix was bioactivated for the removal of fluoxetine from milk. Bioactivated nanofiber was prepared by immobilizing fluoxetine antibody on PCL nanofiber matrix. The fluoxetine removal efficiency of bioactivated nanofiber in milk was found to be approximately 93.6%. This removal did not significantly change the biochemical composition of milk. In conclusion, as a novel product, bioactivated nanofibrous PCL matrix can be used for the removal of drugs or unwanted chemicals from breast milk or from other fluids. 相似文献
