目的 研发一款低热量、可作为代餐食品的薏仁红豆面包,并对其配方进行优化。方法 在单因素实验基础上进行Box-Behnken响应面优化实验,获得最佳配方,并对其质构特性及有机酸种类、含量进行分析。结果 红豆添加量13.50%、薏仁米添加量13.60%、高粉添加量41.00%、酵母添加量0.75%时,所得代餐面包的感官评分为82.33,与预测值82.81相近,并高于传统红豆面包。与传统红豆面包相比,薏仁红豆面包的弹性、内聚性、回复性较高。薏仁红豆面包检测出乳酸、乙酸等6种有机酸,其种类及总含量均高于传统红豆面包。结论 通过优化配方制得的产品结构松紧适中,口感较好,微酸并带有薏仁米的香味,低脂、低热量且富含膳食纤维,其加工条件简单,适于工业化生产,为薏仁米深加工开辟了新途径。  相似文献

The use of seed‐mediated growth as a versatile approach to the synthesis of penta‐twinned Cu nanorods with uniform diameters and controllable aspect ratios is reported. The success of this approach relies on our recent synthesis of uniform Pd decahedra, with sizes in the range of 6–20 nm. The Pd decahedral seeds can direct the heterogeneous nucleation and growth of Cu along the fivefold axis to produce nanorods with uniform diameters defined by the lateral dimension of the original seeds. Due to a large mismatch in the lattice constants between Cu and Pd (7.1%), the deposited Cu is forced to grow along one side of the Pd decahedral seed, generating a nanorod with an asymmetric distribution of Cu, with the Pd seed situated at one of the two ends. According to extinction spectra, the as‐obtained Cu nanorods can be stored in water under the ambient conditions for at least six months without noticeable degradation. This excellent stability allows us to systematically investigate the size‐dependent surface plasmon resonance properties of the penta‐twinned Cu nanorods. With the nanorod transverse modes positioned at 560 nm, the longitudinal modes can be readily tuned from the visible to the near‐infrared region by controlling the aspect ratio.  相似文献

The objective of this paper is to demonstrate whether air plasma can change the seed germination characteristics, seedling emergence, as well as biochemical reactivity, in Andrographis paniculata (A. paniculata) seedlings by modifying the seed coat and finding a beneficial treatment dose. Eight treatment doses and one control were used to conduct electrical conductivity determination, a germination test, a seedling emergence test and a biochemical assay. The results showed that after being treated with air plasma excited at 5950 V for 10 s, the perme- ability of the seeds was improved significantly, resulting in the acceleration of seed germination and seedling emergence. In the meantime, the catalase activity and catalase isoenzyme expression were also improved, while the malondialdehyde content in the seedlings was decreased (which means greater counteraction with environmental stress). After being treated with 4250 V for 10 s and 5950 V for 20 s, the seed germination was enhanced, but without an obvious change in seedUng emergence. However, after treatment with 3400 V for 20 s and 5100 V for 10 s, the permeability of the seeds was decreased, resulting in a delay in seedling emergence. These results indicate that air plasma can change the physiological and biochemical characteristics of Andrographis paniculata seeds by modifying the seed coat, combined with the effects of the active plasma species, and that different treating doses have different effects.  相似文献

The main aim of this research was to enhance the understanding of the formation mechanisms of benzo(a)pyrene (BaP) during roasting of sesame seeds (SS). BaP levels in hot‐ and cold‐pressed sesame seed oil (SSO) were evaluated to correlate oil technology and BaP formation. Extracted principal components from SS were roasted either singly or in mixtures at 230 °C for 30 min. BaP was measured by HPLC with fluorescence detection. The results showed that BaP levels in hot‐pressed SSO were significantly higher than those in cold‐pressed SSO (p < 0.05), BaP formation mostly occurred during SS roasting and increased with roasting temperature (between 80 and 280 °C) and time (from 10 to 50 min). Furthermore, the BaP level in the roasted hulled SS (3.64 μg/kg) was higher than it was in roasted whole SS (1.63 μg/kg). The maximum BaP level observed (5.03 μg/kg) was detected in a roasted mixture of SS protein and SSO. The addition of sesame protein to protein‐free SSO promoted the formation of BaP, which suggests that the pyrolysis products of protein and triacylglycerols are probably important precursors in BaP formation.  相似文献

Cottonseed meal (CSM), a common agricultural by‐product, was used as a nutrient source for the production of eicosapentaenoic acid (EPA) by Pythium irregulare. CSM can support good cell growth performance, as can yeast extract (YE). In terms of the maximum EPA content and EPA yield, CSM is superior to YE. Low concentrations of CSM are beneficial to lipid synthesis, and high concentrations favor the EPA content. Utilizing response surface methodology (RSM) analysis, the optimum contents of glucose and CSM in the fermentation medium were determined to be 40.2 and 16.1 g/l, respectively. After 6 days of fermentation at 25 °C and optimal conditions, the EPA yield and productivity were 245.3 and 40.9 mg/l day, respectively. Particle size of CSM was found to affect the EPA production, and a finely ground CSM (100 mesh) was determined to be best for EPA production. The variation in the fatty acid content of total fatty acid (TFA) indicates that EPA was synthesized through the n‐6 route in P. irregulare and Δ12 desaturase was the key enzyme for EPA biosynthesis. Sodium carbonate was determined to be notably good at removing free gossypol attached to biomass. After fungal biomass from each flask had been harvested from Na2CO3‐supplemented medium, 1 % (w/v) Na2CO3 solution was used to wash the mycelia three times; free gossypol (FG) was not detected (detection limit 0.0018 %). This work provides a new approach using cottonseed meal to produce EPA through fungal fermentation.  相似文献

Owing to its high content of omega‐6/omega‐3 fatty acids and bioactive minor components with antioxidant activities, hemp seed oil is now recognized for its health benefits by a large number of consumers. This paper primarily discusses the profile of minor components in hemp seed oil and their beneficial and adverse effects on oil quality. While tocopherols, polyphenols and phytosterols prevent oxidative deterioration of hemp seed oil, the high amount of chlorophyll can be detrimental to oil quality.  相似文献

Understanding the effect of drying process parameters on food quality is helpful in process optimization and control. The objective of this work is to understand the effect of mild and harsh effective moisture diffusivity (Deff), varied by air temperature and velocity, of drying processes on the physical and sensory quality of flat food products. Pumpkin seeds were selected as a food representative. It was found that increments of air temperature and velocity resulted in increased Deff and brown color on seed hull surfaces and embryos, but decreased hardness of seed embryos. Changes in taste and aroma of seed embryos were able to be sensed. Indicating that Deff is related to seed physical quality. Similar phenomena occurred with both tray and fluidized bed drying. Air temperature, velocity, and Deff should be controlled to ensure the best dried flat food products. Mild drying conditions are potentially preferred for good physical and sensory quality.  相似文献

An experimental study is conducted to evaluate the use of rubber seed oil with diesel at a proportion of 20% by volume (RSO20) in a constant speed (1500?rpm) direct injected four-stroke air-cooled single-cylinder compression ignition engine at different injection timings (24°, 27°, 30°, 33° bTDC (before top dead centre)). A series of tests were conducted at various engine load conditions at the rated power of 5.9?kW. The injection pressure was maintained at 200?bar. As a result of investigations, at the full load condition, the brake thermal efficiency of RSO20 at 30° bTDC is high compared with other injection timings and brake energy fuel consumption is increased when advancing injection timing. There is a significant reduction in unburned hydrocarbon emission and carbon monoxide emission, and the oxides of nitrogen emission (NOx) is increased when advancing the injection timing.  相似文献

BaTi1−xFexO3 compositions (for x = 0, 0.1, and 0.2) were prepared via a solid-state reaction route. The presence of iron (Fe) in barium titanate (BaTiO3) eventually decreased the energy bandgap; thus, its utilization for water cleaning application through photocatalysis process was explored (using methylene blue [MB] dye as an indicative pollutant in water). Characterization of the synthesized powder was performed through scanning electron microscopy, X-ray diffraction, Raman spectroscopy, and X-ray photoelectron spectroscopy. The bandgap of the synthesized powder was calculated as 3.2, 2.12, and 1.67 eV for BaTi1−xFexO3 compositions (for x = 0, 0.1, and 0.2), respectively. BaTi0.8Fe0.2O3 powder showed excellent results, and ∼71% of the MB dye (∼5 mg/L concentrated) was degraded using the photocatalysis process under visible light. To check the potentiality of BaTi1−xFexO3 compositions (for x = 0, 0.1, and 0.2), the photocatalysis process was carried out by changing the concentration of MB dye (2.5–10 mg/L with a step of 2.5 mg/L) and the amount of BaTi0.8Fe0.2O3 powder (0.05–0.2 g with a step of 0.05 g) for ∼5-mg/L concentrated MB dye. The treated water was further used as a growth parameter and phytotoxicity analysis through germination index on the wheat seeds. Lastly, the BaTi1−xFexO3 compositions (for x = 0, 0.1, and 0.2) were explored for water cleaning applications under real-time solar irradiation.  相似文献
