在豆腐的制备过程中,豆浆的制取方式十分重要,直接影响豆腐的凝胶强度、弹性、内聚性和口感。超微粉碎技术作为一种新兴的制浆技术,不仅能减小豆浆的粒径、赋予产品细腻的口感、改善原料的加工性能,还能在一定程度上避免豆渣中所含营养成分的流失,在豆浆及豆腐的制备过程中使用越来约普遍。本文综述了干法超微粉碎制浆技术和超声波、胶体磨、高压均质、超高压均质等湿法超微粉碎制浆技术的研究与应用现状,比较了各种制浆技术的优、缺点,并对今后豆腐制浆技术的研究方向进行了展望,旨在为加快研究\  相似文献

在Alcalase凝固豆乳过程中pH下降程度小于0.2,SDS-PAGE电泳表明,大豆蛋白质各亚基在凝固过程中均降解为8~14kDa的肽段,说明大豆蛋白的部分降解是Alcalase凝固豆乳的根本原因。对Alcalase与盐类凝固剂氯化镁和氯化钙凝固豆乳的主要流变学性质比较发现,Alcalase凝固豆乳的硬度比盐类凝固剂大,凝胶强度比盐类凝固剂低,粘附性比盐类凝固剂高10倍以上,使凝胶较粘,乳清不易排出。   相似文献

随着植物基蛋白饮料在国内外的迅速发展, 酸豆奶必将进入新时代。酸豆奶是指以大豆为主要原料经过乳酸菌发酵后所得的产品, 在植物基蛋白饮料中占有重要地位, 良好的气味特征和口感特征对酸豆奶产品来说至关重要, 而豆腥味、苦涩味等不良风味的存在限制了酸豆奶的发展。酸豆奶风味物质种类繁多, 挥发性风味物质、非挥发性风味物质的成分和含量极大程度上决定了酸豆奶的感官品质。本研究就酸豆奶的发酵菌种、不良风味物质的来源、风味物质的分类和检测方法进行综述, 从发酵菌种与酸豆奶中不良风味物质的角度出发, 为解决酸豆奶在工业生产中不良风味问题提供思路。  相似文献

The effects of membrane pore size and operating pressure on filtration flux, membrane fouling and solute rejections of soymilk during ultrafiltration were studied. Soymilk was concentrated from an initial level of 6.5% solid content to 20% solid content using ultrafiltration membranes. Hollow fibre cross‐flow type cartridges having molecular weight cut‐off (MWCO) as 1, 10 and 30 kDa were used in the experiments. Filtration data were satisfactorily fitted to De La Garza and Boulton's exponential model to find the exponential fouling coefficient (k) and the membrane resistance (Rm). The permeate fluxes obtained in 10 and 30‐kDa MWCO membranes were found to be approximately four times higher than that of 1‐kDa MWCO membrane, at transmembrane pressure between 100 and 240 kPa. The average flux obtained was 0.7, 3.15 and 2.7 L m?2‐h for 1, 10 and 30‐kDa MWCO membranes, respectively. The Rm value of membranes was found to decrease as the MWCO of membranes increased and transmembrane pressure decreased. The total solid content of permeates obtained by these membranes was between 0.45% and 1.4%. Membrane‐concentrated soymilk was found to have lighter colour and almost half the value of viscosity compared with evaporated milk.  相似文献

ABSTRACT: Cell immobilization is an alternative to microencapsulation for the maintenance of cells in a liquid medium. The objective of this study was to evaluate the effects of agrowastes from durian (Durio zibethinus), cempedak (Artocarpus champeden), and mangosteen (Garcinia mangostana) as immobilizers for lactobacilli grown in soymilk. Rinds from the agrowastes were separated from the skin, dried, and ground (150 μm) to form powders and used as immobilizers. Scanning electron microscopy revealed that lactobacilli cells were attached and bound to the surface of the immobilizers. Immobilized cells of Lactobacillus acidophilus FTDC 1331, L. acidophilus FTDC 2631, L. acidophilus FTDC 2333, L. acidophilus FTDC 1733, and L. bulgaricus FTCC 0411 were inoculated into soymilk, stored at room temperature (25 °C) and growth properties were evaluated over 168 h. Soymilk inoculated with nonimmobilized cells was used as the control. Utilization of substrates, concentrations of lactic and acetic acids, and changes in pH were evaluated in soymilk over 186 h. Immobilized lactobacilli showed significantly better growth (P < 0.05) compared to the control, accompanied by higher production of lactic and acetic acids in soymilk. Soymilk containing immobilized cells showed greater reduction of soy sugars such as stachyose, raffinose, sucrose, fructose, and glucose compared to the control (P < 0.05).  相似文献

Both wild (lowbush) blueberries (Vaccinium angustifolium Ait.) and soybeans (Glycine max L.) possess a variety of antioxidants, and both foods appear to have multiple health benefits. Our objectives were to identify whether wild blueberry juice concentrate was more acceptable than puree in frozen desserts with a soy milk‐tofu base; to determine whether fat‐free products were as acceptable as those with 10% added fat; and to compare several levels of blueberry juice concentrate. Four frozen dessert formulations were prepared in duplicate from soy milk, silken tofu, sucrose, stabilizer, BJC or puree, soybean oil or polydextrose, sweetened dried blueberries, salt, and lemon juice. Samples were assayed for total anthocyanins, antioxidant activity using the DPPH method, color, overrun, and solids. Fifty‐five persons evaluated the samples using a 9‐point hedonic scale for color, flavor, texture, and overall acceptability. Samples containing blueberry juice concentrate were darker and less blue. Anthocyanin levels were highest in the puree sample and the fat‐free product with 7.8% blueberry juice concentrate. However, antioxidant activity was highest (28 Trolox equivalents per gram) in the samples made with soybean oil and 7.4% blueberry juice concentrate. The puree formulation received higher hedonic scores than did the low‐fat blueberry juice concentrate formulations. The puree formulation received overall acceptability scores of like very much or like extremely by 45% of the consumers. These findings may aid processors in defining potential formulations that combine 2 healthful food ingredients.  相似文献

以实验室保藏的发酵豆乳感官特性具有差异的5株嗜热链球菌为对象,研究了乳酸菌α-乙酰乳酸脱羧酶、α-半乳糖苷酶、β-半乳糖苷酶酶活和乳酸脱氢酶等关键酶的酶活性、发酵豆乳特性和挥发性风味成分间的相互关系。结果表明,发酵豆乳感官评价与乳酸菌的α-乙酰乳酸脱羧酶和α-半乳糖苷酶呈现显著负相关和正相关,与风味成分2,3-丁二酮、2-庚酮和2-壬酮呈显著正相关,与正己醇、2,4-癸二烯醛和2-戊基呋喃呈显著负相关;发酵豆乳酸度值与乳酸菌的β-半乳糖苷酶和乳酸脱氢酶均呈显著正相关。  相似文献

Soybean variety and storage effects on soymilk flavour and quality   总被引:2,自引:0,他引:2  
Soymilk prepared from five soybean cultivars, grown in Ontario, were analysed for protein, oil, mineral composition, viscosity, colour, lipoxygenase (LOX) activities and flavour profile. Among the five soybean cultivars, the Vinton 81 variety contained the highest protein and the lowest fat. The yield of soymilk from all five cultivars was similar. Major differences were observed in viscosity and in the composition of both the soymilk and the okara. Higher protein and fat extractability was found in soymilk made from S08‐80 and Vinton 81 varieties. Their okara protein contents were also among the highest. Minimum extractability was observed with S03W4 cultivar. Soymilk made from S 03W4 and Vinton 81 cultivars had the whitest colour (lowest ΔE values). Viscosity values were the highest for S08‐80, FG1 and S20‐20 varieties. Headspace solid‐phase microextraction gas chromatography was used to analyse volatile compounds in soymilk. A total of fourteen volatiles were identified, among which aldehydes and their corresponding alcohols were the major compounds. Similar volatile compounds were identified in all the samples analysed but at different concentrations. The highest LOX activity was observed in the Vinton 81 and S20‐20 soybean cultivars, which had the highest total volatile and hexanal contents. A positive correlation (correlation coefficient = 0.82) between enzymatic activity and the total volatiles was observed. Vinton 81 cultivar was subjected to storage (at 18 °C and 50% relative humidity) for a period of 10 months. Soymilk was prepared at different times during storage. The results showed that the soymilk colour, LOX and total volatiles were significantly (P < 0.05) affected by the storage of the soybeans over time.  相似文献

ABSTRACT:  The thermal resistance of  Clostridium sporogenes  PA 3679 ATCC 7955 was determined in soymilk (pH 7) and 0.1% peptone water (pH 7) by the capillary tube method. In the continuous flow high-pressure throttling, the temperature of soymilk increased due to instantaneous pressure release and the additional heat was supplied by a heat exchanger to achieve the set temperature. The soymilk was immediately cooled after a short preset hold time to below 40 °C. A significant increase in the heat resistance was observed in  C. sporogenes  spores when heated in soymilk in comparison to 0.1% peptone water. The  D 121-value for spores in soymilk was approximately 3-folds higher than peptone water. The  z- value was also much higher in soymilk as compared to that in 0.1% peptone water. Continuous flow high-pressure throttling (HPT) from 207 or 276 MPa to atmospheric pressure reduced the microbial populations in inoculated soymilk up to 6 log cycles when the holding times were 10.4, 15.6, and 20.8 s and the process temperatures were 85, 121, 133, and 145 °C, respectively. The sporicidal effect increased as the operating pressure, time, and temperature were increased. More injured spores were found at 207 MPa than at 276 MPa, indicating that lower pressure caused cell injury whereas high pressure caused cell death.  相似文献
