Fat bloom in chocolate is a substantial problem that affects its sensory properties, such as texture and appearance. This phenomenon is because of diffuse light reflection on a roughened surface of chocolate, caused by structural changes of fat crystals subjected to various temperature conditions. The purpose of this study is to characterize the fat bloom formed through gradual two-step cooling after exposure to temperatures (35–37 °C) slightly above the cocoa butter Form βV melting point (33.8 °C). To clarify the fat bloom formation process, the structural changes in cocoa butter and on the chocolate surface, at the dynamic thermal condition for bloom formation, was investigated using X-ray diffraction (XRD), fluorescence light microscopy, and scanning electron microscopy (SEM). The results revealed that an entirely light brown fat bloom occurred, even in the absence of the Form βVI or other polymorphic transformation. Microscopic observation showed that the light brown appearance was because of the porous structure on the chocolate surface. This porous structure was formed by liquid oil moving inside of chocolate from the surface. The formation of a coarse network and the subsequent de-oiling, because of movement of unsolidified liquid fat into the chocolate, appeared to be the main causes of bloom formation. Therefore, a coarsened fat network and oil movement besides the conventional principles of polymorphic transformation of cocoa butter should be considered.  相似文献

The powerful waves of ultrasound are used in polymerization reactions in the absence of initiator. In the present research, the hydrogel was obtained by water-soluble acrylic monomers, starch, and the crosslinking agent of methylene bis acrylamide dissolved in water/glycerol dual. The hydrogel is formed by these waves only in viscous environments such as glycerol, heat, or initiator is not required. In the presence of ultrasound, the time of product formation is reduced to a few minutes. Moreover, the resulting hydrogels have more uniform microscopic structure and are more swollen. The structure of the grafted hydrogel was examined meanwhile the hydrogel swelling in three environments of pure water, saltwater, and under pressure was measured. It was found that the grafted hydrogel has double swelling rate in the pure. Also, after loading the ciprofloxacin into the synthesized hydrogel, this drug is released 99% in initial 20 min. 0.1 g starch in 1.5 g acrylic hydrogel has the most drug release. The high swelling capacity in the pH ranges of 5–9 shows the extension of drug application in acidic or alkaline environments, and also after several using the gel and the capacity of water absorbency, which was about 70% of its initial water, indicates the perfect reusability capacity of the gel.  相似文献

A bulk metallic glass (BMG) cylinder of Fe60Co8Zr10Mo5W2B15 with a diameter of 1.5 mm was prepared by copper mould casting of industrial raw materials. The amorphous state and the crystallization behavior were investigated by X-ray diffraction (XRD). The thermal stability parameters, such as glass transition temperature (Tg), crystallization temperature (Tx), supercooled liquid region (ΔTx) between Tg and Tx, and reduced glass transition temperature Trg (Tg/Tm) were measured by differential scanning calorimetry (DSC) to be 891, 950, 59 K, and 0.62, respectively. The crystallization process took place through a single stage, and involved crystallization of the phases -Fe, ZrFe2, Fe3B, MoB2, Mo2FeB2, and an unknown phase, as determined by X-ray analysis of the sample annealed for 1.5 ks at 1023 K, 50 K above the DSC peak temperature of crystallization. Mössbauer spectroscopy was studied for this alloy. The spectra exhibit a broadened and asymmetric doublet-like structure that indicated paramagnetic behavior and a fully amorphous structure. -Fe was found in the amorphous matrix for a cylinder with a diameter of 2.5 mm. The success of synthesis of the Fe-based bulk metallic glass from industrial materials is important for the future progress in research and practical application of new bulk metallic glasses.  相似文献

Half-Heusler compounds of Sn-doped TiCoSb “TiCoSnxSb1−x (x = 0.0, 0.01, and 0.05)” were prepared and their thermoelectric properties were measured above room temperature. From the EDX analysis, all the samples have three phases: the TiCoSnxSb1−x, Co-rich, and Ti-rich phases. The values of the thermoelectric power increase with Sn doping, and a positive thermoelectric power is obtained in the sample of TiCoSn0.05Sb0.95. The thermal conductivity decreases both with increasing temperature and with Sn content. The maximum value of ZT for p-type material is 0.030 at 988 K in the sample of TiCoSn0.05Sb0.95.  相似文献

Microstructure and phase transformation in the Al-Cu-Fe alloys of the approximate compositional range of 20-50 at.% Cu and 2 - 10 Fe at.% have been investigated from samples quenched from their respective temperatures by means of different thermal analysis, magnetothermal analysis, scanning electron microscopy, electron probe analysis and powder X-ray diffraction. Representative phase transformations categorized as polymorphic, discontinuous precipitation,quasi-binary eutectoid, and ternary transitional U-type phase transformation are presented. These phase transformations were found to have a common feature which consumes the β phase and appears the φ phase. A schematic diagram was proposed to demonstrate the transition processes with decreasing temperature.  相似文献

Grinding residual stress in the surface layer of WC-6 Wt—%Co hard alloy was measured by means of X-ray diffraction. The effects of various grinding parameters and treatment processes on the stress were studied. By means of electrolytic etching, the stress distribution along the depths beneath the surface was measured. Atmospheric corrosion of steel proceeds under thin electrolyte film formed by rain and dew condensation followed by wet and dry cycles. It is said that rust layer formed on steel as a result of atmospheric corrosion strongly affects the corrosion behavior of steel. The effect of environmental corrosiveness on the formation process and structure of the rust layer is, however, not clear to date. In this study, in situ observation of the rusting process of a carbon steel covered with a thin film of Na2SO4 or NaCl solution was performed under a wet/dry repeating condition by X-ray diffraction spectroscopy with white X-rays obtained from synchrotron radiation. The present in situ experiments successfully detected initial process of the rust formation. In the early cycles, the rust constituents were not well crystallized yet, but the presence of Fe(OH)2 and Fe(OH)3 was confirmed. In the subsequent cycles, two different solutions resulted in difference in preferential phase of the rust constituents. α-FeOOH was preferentially formed in the case of the Na2SO4 solution film, whereas β-FeOOH appeared only under the NaCl solution film.  相似文献
