The quality parameters of 1 commercial pomegranate juice mixed with 5 different concentrations of blueberry, blackberry, or raspberry juices were studied. The pH, total soluble solids content, titratable acidity, and total phenolic content were determined. To understand the aroma differences of the juices, solid phase microextraction-gas chromatography-mass spectrometry was used to determine the volatile compounds present in the mixtures. A consumer study also was carried out to relate consumer ratings to the instrumental data and to determine acceptance and possible modifications of the designed juices. Four juices received the highest scores in overall consumer liking: pomegranate/blueberry juice with 20% and 50% of blueberry, pomegranate/blackberry with 10% of blackberry, and pomegranate/raspberry with 10% of raspberry. The main characteristics in these juices were: a high maturity index (from 13.9 to 16.5), low acidity (0.79 to 1.09 g citric acid 100 per milliliter juice), and the presence of aromatic compounds typical in blueberries such as 6-methyl-5-hepten-2-one, α-terpineol, and E-nerol. The total phenolic content was significantly higher in the pomegranate/blackberry 90%/10% sample, raising around 3500 mg gallic acid equivalents per liter, and could be a positive determinant for consumers interested in purchasing healthful products. PRACTICAL APPLICATION: The data presented in this article will help the juice industry, in the United States and elsewhere, to understand the consumer's preferences for pomegranate blended juices. ABSTRACT: To identify sensory characteristics of unclarified apple juice and to compare unclarified and clarified types, 140 consumers and 10 trained panelists evaluated 16 commercial apple juice samples (4 clarified and 12 unclarified). Unclarified and clarified juices were clearly separated by the first principal component (PC1), whose main factor was fresh, green, and sweet aroma. It was difficult to predict consumer preference by regression models using trained panel preference and analytical attributes. This review of the literature on varietal change in sub-Saharan Africa looks in detail at adoption of new varieties of bananas in Uganda, cassava in Nigeria, potato in Kenya, sweetpotato in Uganda and yams in Côte d’Ivoire. The review explored three hypotheses about drivers of varietal change. There was a strong confirmation for the hypothesis that insufficient priority given to consumer-preferred traits by breeding programmes contributes to the limited uptake of modern varieties (MVs) and low varietal turnover. Lack of evidence meant the second hypothesis of insufficient attention to understanding and responding to gender differences in consumer preferences for quality and post-harvest traits was unresolved. The evidence on the third hypothesis about the informal seed system contributing to slow uptake of MVs was mixed. In some cases, the informal system has contributed to rapid uptake of MVs, but often it appears to be a barrier with inconsistent varietal naming a major challenge. 相似文献

Global food production is anticipated to rise along with the growth of the global population. As a result, creative solutions must be devised to ensure that everyone has access to nutritious, affordable, and safe food. Consequently, including insects in diets has the potential to improve global food and nutrition security. This paper aims to share recent findings by covering edible termites as the main aspect, from their consumption record until consumer acceptance. A total of 53 termite species are reported as edible ones and distributed in 6 biogeographic realms. Generally, termites have a nutrient composition that is suitable for human consumption, and cooked termites are a better dietary choice than their raw counterparts. Besides, increasing customer interest in eating termite-based food can be achieved by making it more palatable and tastier through various cooking processes, that is, boiling, frying, grilling, roasting, smoking, and sun-drying. Moreover, edible termites can also be used as a new source of medication by exhibiting antimicrobial activity. Regarding their advantages, it is strongly encouraged to implement a seminatural rearing system to sustain the supply of edible termites. Overall, this paper makes it evident that termites are an important natural resource for food or medicine.
