DRYING OF ONION: EFFECTS OF PRETREATMENT ON MOISTURE TRANSPORT

ABSTRACT

This study investigated the drying of osmosed and fresh onions. Onion slices (0.8 × 0.8 × 0.15 cm) soaked in sodium chloride solutions (10 and 15% w/w) for 60 min at 22°C were submitted to air drying. The experimental kinetics data obtained were employed to determine effective diffusivity, using a mass transfer model based on Fick's law of diffusion applied to thin slabs. The results show those samples soaked in the 10% NaCl solution had faster drying rates and larger moisture diffusion coefficients. The drying time of onions can be reduced to less than half by introducing an hour of osmotic dehydration in a salt solution. The dried previously osmosed samples presented a more natural coloration than the untreated ones did.

Direct energy transfer to study the 3D structure of non-native proteins: AGH complex in molten globule state of apomyoglobin

The direct energy transfer technique was modified and appliedto probe the relative localization of apomyoglobin A-, G- andH-helixes, which are partly protected from deuterium exchangein the equilibrium molten globule state and in the molten globule-likekinetic intermediate. The non-radiative transfer of tryptophanelectronic energy to 3-nitrotyrosine was studied in differentconformational states of apomyoglobin (native, molten globule,unfolded) and interpreted in terms of average distances betweengroups of the protein chain. The experimental data show thatthe distance between the middle of A-helix and the N-terminusof G-helix as well as the distance between the middle of theA-helix and the C-terminus of the H-helix in the molten globulestate are close to those in the native state. This is a strongargument in favor of similarity of the overall architectureof the molten globule and native states.

Effect of organic salt doping on the performance of single layer bulk heterojunction organic solar cell

The effect of organic salt, tetrabutylammonium hexafluorophosphate (TBAPF₆) doping on the performance of single layer bulk heterojunction organic solar cell with ITO/MEHPPV:PCBM/Al structure was investigated where indium tin oxide (ITO) was used as anode, poly[2-methoxy-5-(2-ethylhexyloxy)-1,4-phenylenevinylene] (MEHPPV) as donor, (6,6)-phenyl-C61 butyric acid methyl ester (PCBM) as acceptor and aluminium (Al) as cathode. In contrast to the undoped device, the electric field-treated device doped with TBAPF₆ exhibited better solar cell performance under illumination with a halogen projector lamp at 100 mW/cm². The short circuit current density and the open circuit voltage of the doped device increased from 0.54 μA/cm² to 6.41 μA/cm² and from 0.24 V to 0.50 V, respectively as compared to those of the undoped device. The significant improvement was attributed to the increase of built-in electric field caused by accumulation of ionic species at the active layer/electrode interfaces.
