Significant variations were observed in the concentration of pigments (10·0–17·0%, moisture-free basis) and flavour components during different post-harvest processing conditions of saffron (stigmas ex Crocus sativus L). The crocin pigments concentration was highest (15–17%) in the saffron samples dried between 35°C and 50°C either in a solar dryer or in an oven dryer and this also resulted in considerable reduction of normal drying time. Under these conditions the main flavouring component, safranal, was at its peak value of 60% in the oil in almost all the samples except the vacuum oven dried samples which interestingly contained 4-β-hydroxysafranal in major amounts. Studies indicated that 4-β-hydroxysafranal may be an intermediate in the formation of safranal. It was observed that prolonged storage affected the pigments and flavour concentration to a great extent, but proper packaging and storage with 5% moisture in the saffron reduced the deterioration, thereby increasing the shelflife of the product. 相似文献

Six olive oils extracted from the cultivars Arbequina, Arbosana, Coratina, Frantoio, Koroneiki, and Picual from 2017 and 2018 harvests, cultivated in Pinheiro Machado, Rio Grande do Sul, Brazil, are evaluated for standard oil composition parameters and bioactive constituents (pigments, tocopherols, and phenolic compounds). Multivariate principal component analysis (PCA) and univariate ANOVA and Fisher's LSD test are used to verify the effect of cultivar and harvest year on oil composition. Olive oil composition met extra virgin olive oil (EVOO) standard parameters and is influenced by both cultivar and harvest year. EVOO produced in 2018 has greater chlorophyll, caffeic acid, ligstroside aglycone, hydroxyoleuropein aglycone, syringic acid, and hydroxytyrosol acetate contents than the EVOOs from 2017. Linoleic acid, ferulic acid, ligstroside aglycone, and hydroxytyrosol acetate are the variables whose contents most contributed to the differentiation of oils by cultivar in both harvest years. Chemical characterization analyses allow for the differentiation of oil composition based on harvest year and cultivar. Metabolic quality data obtained here support the establishment of a local EVOO profile and the compounds that most contributed to treatment differentiation may serve as markers that can be utilized in determining origin, cultivar, and harvest year. Practical Applications: Olive production in Brazil is recent and is based on European cultivars which have not been bred for the local environmental conditions. Therefore, the measurement of olive oil metabolic quality will determine cultivar adaptability to local edaphoclimatic conditions as well as assist in the establishment of a standard of identity for the product and promote the development of its market. Olive oil produced in Southern Brazil shows high quality, and is especially rich in phenolic compounds. Although harvest year influences oil composition, oil from both harvests meet EVOO standards and cultivar specific metabolic markers are observed. Tocopherols, phytosterols, carotenoids, and squalene are present in mature seeds of Japanese quince. Yet, little is known about the relationship between these compounds and oil yield during fruit and seed development. The profile change of lipophilic compounds during fruit and seed development in Japanese quince cultivars “Darius,” “Rondo,” and “Rasa” is investigated. It is shown here that during fruit and seed development, there is a significant reduction, three‐ to over tenfold, in the concentration of minor bioactive compounds in seed oil. It is recorded that delay between synthesis of tocopherols and oil in Japanese quince seeds during the fruit development results in a logarithmic relationship between the oil content and tocopherols concentration in the seed oil (R2 = 0.980). Similar trends are observed between oil yield and phytosterols, and carotenoids (R2 = 0.927 and R2 = 0.959, respectively). The profile of fatty acids during the development of the seeds significantly is changed. The reduction of linoleic, palmitic, and gondoic acids levels and increment of oleic acid is noted. The oil content, profile of fatty acids, and concentration of bioactive compounds in all three genotypes of Japanese quince do not change significantly statistically during the last month of fruit development. Practical Applications: Some fruits are harvested at different degrees of maturity mainly due to a logistic issue and uneven ripening of fruits, which affects the chemical composition of whole fruit including seeds. Therefore, it would be good to know how the chemical composition is changing in plant material during development especially in the last month before harvest. Production of Japanese quince continues to rise year to year and with it the volume of generated by‐products such as seeds. This study demonstrates how it changes the oil content, profile of fatty acid, and concentration of tocopherols, squalene, phytosterols, and carotenoids in the seeds and seed oil of three Japanese quince cultivars “Rondo,” “Darius,” and “Rasa” during plant development. The provided information can be very useful for the manufactories oriented on the processing of by‐products, mainly seeds, generated by other branches of industry, for instance, fruit‐processing. 相似文献

以山竹果为材料,研究了采后涂膜处理常温贮藏(1%壳聚糖和1%海藻酸钠)对山竹果壳细胞代谢物及果肉品质的影响。结果表明:采后涂膜处理常温贮藏中山竹果壳中超氧阴离子、膜脂过氧化产物丙二醛(MDA)、过氧化氢的含量随着贮藏时间呈上升趋势,贮藏15d时,常温、1%壳聚糖、1%海藻酸钠涂膜处理的丙二醛含量比初期分别增加了94.4%、67.0%和38.9%。果壳代谢物可溶性糖和总酚含量均先上升后下降,2种涂膜处理均能有效延缓果壳细胞代谢物的增加。其中1%壳聚糖涂膜处理能够显著延缓果肉VC和总糖含量的下降,减慢营养物质的消耗,抑制果实的腐烂。 相似文献

为了探究臭氧处理对新收获小麦糊化特性的影响,在室温下,用浓度为5mg/L的臭氧对郑麦9023处理0.5~2.0h,测定不同处理时间下羧基、羰基、粗淀粉和直链淀粉含量变化以及糊化特性指标,分析羧基、羰基、粗淀粉和直链淀粉含量及糊化黏度的变化规律,并对黏度变化规律与粗淀粉及直链淀粉进行相关性分析。结果表明:随着臭氧处理时间的增加,小麦粉的粗淀粉、直链淀粉、羧基含量及羰基含量发生了不同趋势的变化;峰值黏度、衰减值、最终黏度、回生值以及糊化温度与粗淀粉含量呈不同程度的正相关,与直链淀粉呈不同程度的负相关;粗淀粉含量对最低黏度与起始糊化时间的影响不显著,而直链淀粉对最低黏度与起始糊化时间影响显著。 相似文献

BACKGROUND: The physical properties, proximate composition, mineral and vitamin contents, and estimated volatile components of Portobello mushroom, Agaricus bisporus (brown), were analyzed in three flushes and at two different harvest times. The results showed different trends in the flushes and harvest terms studied. RESULTS: The mean values of texture, diameter, and protein of the harvested produce were 1.78–1.97 kg mm?2, 4.67–5.02 cm, and 4.18–3.31% wet weight basis (wb), respectively. The mean Zn, Fe, P, Mg, K, Na, and Ca contents of both harvests (mg kg?1 wb) were 8.15–7.07, 7.40–7.96, 1180.93–1038.69, 88.05–76.29, 213.29–238.82, 2652.0–2500.89, and 534.2–554.80, respectively. In terms of vitamin C, folic acid, thiamin, riboflavin, and niacin, the mean contents (mg kg?1 wb) were 6.75–3.97, 0.09–0.08, 0.085–0.09, 0.27–0.29, and 3.62–2.94, respectively. The estimated volatile components comprised 18‐ or 16‐carbon compounds such as octadecanoic acid, hexadecanoic acid derivatives, and other important volatiles like dl‐limonene, n‐nonane, benzendicarboxylic acid, and cis‐linoleic acid esters. Direct and residual fertilizer phosphorus effects on yield and phosphorus efficiency of upland rice in an Ultisol 总被引:1,自引:0,他引:1
Phosphorus (P) deficiency is one of the major limiting factors for crop production in highly weathered soils in the humid
zone of West Africa. Very few studies have evaluated the residual value of fertilizer P to rice in these soils. Field experiments
were conducted for three years (1993–1995) to determine the response of four upland rice cultivars to fertilizer P applied
at 0, 45, 90, 145 and 180 kg P ha-1 only once in 1993, and to fertilizer P residues in 1994 and 1995. The soil at the experimental site, in the humid forest
zone of Ivory Coast (West Africa), was an Ultisol, low in available P.
Grain yields of the rice cultivars were significantly increased by fertilizer P in 1993, and by the fertilizer P residues
in 1994 and 1995 although the magnitude of response decreased with time since the fertilizer was applied. The cultivars differed
in cumulative agronomic and physiological efficiencies, and the efficiencies were higher at the lower rates of P. The amounts
of total P removed in three successive crops were similar for all the four rice cultivars although P harvest index was 10–12%
higher in the P efficient than inefficient cultivars. The results suggest that the differences observed in the P efficiency
of rice cultivars are due to differences in the internal efficiency of P.
