The incidence of Listeria spp. in the salt-water edible fish and in the environment of fish markets in Thessaloniki, Northern Greece was studied. One hundred and twenty raw/fresh fish bought at the fish markets of Thessaloniki (Northern Greece), were sampled and tested for presence of Listeria species using a two step enrichment procedure, followed by plating on two selective agars and subsequent biochemical identification of the isolates. Five fish samples were positive for Listeria spp. and in only one sample L. monocytogenes was detected. Also, 100 samples of knives, hands, boxes etc were sampled and 18 samples were positive for Listeria spp. and five for L. monocytogenes. L. innocua was more common being detected in four fish samples and 13 environmental samples. L. seeligeri was detected only in one environmental sample. Our findings indicate that only a few fish were contaminated with Listeria spp., while the level of contamination of the environment of fish markets was higher. 相似文献

The antimicrobial properties of pure phenolic compounds and polyphenols of different wines against pathogens were investigated. It was observed that bacterial species exhibited different sensitivities towards the different concentrations of phenolic compounds. Escherichia coli was the most sensitive bacterium and Flavobacterium sp. was resistant against all phenolic compounds tested. All wine samples showed antimicrobial properties and the inhibition increased when the polyphenols concentration of wines increased. Clarified wines were inactive against all bacteria, indicating that polyphenolic compounds present in red wines, are responsible for the antimicrobial effects observed. The different concentrations of polyphenols in wines could have an important impact on consumers with the consequent increase in wine commercialization. 相似文献

Through a mechanism called quorum sensing, bacteria are able to express specific genes in response to population density. Cell-to-cell communication in bacteria is mediated by signal molecules such as acylated homoserine lactones (AHLs). This work aimed to detect AHL production in Gram-negative psychrotrophic bacteria isolated from raw milk. A total of 84.9% of the bacteria were identified as AHL producers eliciting a diversity of responses in the AHL-monitor systems. These results demonstrate that AHL-production is common among psychrotrophic bacteria isolated from milk, and indicate that quorum sensing may play an important role in the spoilage of this product. 相似文献

A TaqMan real-time polymerase chain reaction (PCR) method was developed for specific detection of bovine, ovine and caprine processed animal protein (PAP) in industrial feedstuffs. The method uses species-specific primers and probes targeting short mitochondrial D-loop sequences, and a positive amplification control based on 18S rRNA gene. The applicability of the real-time PCR protocol was assessed through analysis of 126 industrial feed samples that were manufactured to reproduce rendering processes of commercial feeds destined for farmed animals. The assay successfully classified samples as positive or negative according to the ruminant composition, enabling qualitative detection of banned material in feeds at levels as low as 0.1%. Although the method provides quantitative potential, results suggest that the real quantitative capability of the assay is limited by the existing variability in terms of composition and processing treatments of the feeds, which affect the amount and quality of amplifiable DNA. 相似文献

Electrolyzed functional water possesses a wide variety of antimicrobial activities. Electrolyzed functional water, which used to take place of tap water in producing mung bean sprouts, was studied in this paper. The results showed that electrolyzed water can not only reduce the quantity of microorganism on the surface of mung bean sprouts, but also promote the growth of sprouts. Further research showed that electrolyte leakage rate of mung bean soaked in electrolyzed water was the lowest, while the catalase’s activity of mung bean soaked in electrolyzed water was the highest. The aim of the present study was to evaluate the applicability of Quillaja saponaria extract (QSE) and Nα-lauroyl-l-arginine ethyl ester (LAE) as antimicrobial wash water additives in fresh-cut lettuce processing. Antibacterial activities of LAE and QSE against selected strains of the foodborne pathogens Salmonella enterica, Bacillus cereus, Staphylococcus aureus, Pseudomonas aeruginosa, and Listeria monocytogenes were examined in vitro. Minimum inhibitory concentrations determined by broth microdilution assay demonstrated that LAE exhibited a strong antimicrobial activity with MICs between 4 and 32 μg/mL against all tested strains, whereas QSE showed a weaker antimicrobial activity with MICs >512 μg/mL. On a pilot-plant scale, the effects of warm water washing at 45 °C for 120 s with and without 40 mg/L QSE or 100 mg/L LAE as well as cold water washing at 4 °C for 120 s with QSE or LAE, respectively, of shredded endive (Cichorium endivia L.) were investigated regarding microbiological and sensory quality as well as physiological properties. Samples were analyzed for headspace O2 and CO2 levels, phenylalanine-ammonia-lyase activity and contents of nitrite and nitrate during nine days of cold storage at 4 °C. By analogy to its antimicrobial effect against the foodborne pathogens in vitro, LAE allowed up to 4 log10 cfu/mL reduction of the microbial load in the washing water of the pilot plant, and might therefore reduce cross-contamination while saving water. The addition of LAE to warm washing water impaired sensory properties of fresh-cut endive during storage, which was predicted by chlorophyll fluorescence imaging analyses. QSE treatment combined with warm water washing best retained sensory appearance throughout our study, being possibly suitable for the production of premium products. 相似文献

Performance review of a novel combined thermoelectric power generation and water desalination system
A novel combined thermoelectric power generation and water desalination system is described with a system schematic. The proposed system utilises low grade thermal energy to heat thermoelectric generators for power generation and water desalination. A theoretical analysis presents the governing equations to estimate the systems performance characteristics combined with experimental validation. Experimental set-up consists of an electric heat source, thermoelectric modules, heat pipes, a heat sink and an evaporator vessel. Four heat pipes are embedded in a heat spreader block to passively cool the bottom side of the thermoelectric cells. The condenser of these four heat pipes is immersed in a pool of saline water stored in an evaporation vessel which is maintained at sub-atmospheric pressure. The liquid to vapour phase change cooling method achieve low saturation temperature and offers a high heat transfer coefficient for the cooling of the thermoelectric generators. At the same time this method utilises the low temperature heat extracted from the cold side of the thermoelectric generator for water desalination. It was observed that at low saturation temperatures greater heat flux could be supplied to the thermoelectric generators with less heat losses to the atmosphere. 相似文献

The present contribution addresses the results of a longitudinal study in a ‘bioenergy-region’ concerning the public acceptance of biomass plants and the corresponding influencing factors. Using a standardized questionnaire, 423 persons were polled between 2009 and 2011 on three points of measurement in four places in the bioenergy-region Altmark. One main result of the study is that the reported public acceptance remains constantly high over time; nevertheless it became evident that the respective influencing factors differ in their strength, whereas the perceived regional benefit shows a strong connection to the reported public acceptance of biomass plants at each point of measurement. Concluding the research results, the acceptance of biomass plants doesn't seem to be a fixed construct, but has to be seen in context of the respective experiences with plants on a local level over time.In addition to the local population, key actors of the regional biomass sector were also interviewed (N = 26). The analyses show significant differences in the perception and evaluation of the current informational level between the population and the key actors. Furthermore, the key actors estimated the utilisation of biomass even more positively and expected a greater ‘signal function’ of the bioenergy-region-project compared to the population. 相似文献

Polyphenols in cereals and legumes have been receiving considerable attention largely because of their adverse influence on color, flavor, and nutritional quality. These compounds belong to the flavonoid and tannin groups and are mostly located in the seed coat or pericarp of the grains. The pearl millet flavonoids have been identified as C‐glycosylflavones by the combined use of paper chromatography and UV spectroscopy. Although nontoxic, physiological and nutritional significance of these compounds occurring in high amounts in the pearl millet grain are still not clearly understood. In view of aesthetic quality, bleaching of the millet grains in acidic solution is recommended. A large proportion of current assays involves spectrophotometry of tannin or its chromogen and tannin‐protein interaction. Sorghum and legume tannins have been characterized as condensed tannins. Several factors such as plant type, age of the plant or plant parts, stage of development, and environmental conditions govern the polyphenol contents in plants. Polyphenols are known to interact with proteins and form tannin‐protein complexes leading to either inactivation of enzymes or making proteins insoluble. These are implicated in decreasing the activities of digestive enzymes, protein and amino acid availabilities, mineral uptake, vitamin metabolism, and depression of growth. Polyphenols are known to cause certain ultrastructural changes in the different parts of experimental animals. A correlation between dietary tannins and occurrence of esophageal cancer has been established. Bird resistance and seed germination in food crops have been correlated to high contents of polyphenols. The antinutritional activity of polyphenols can be reduced by removing polyphenols from the grains by chemical treatments or removing pericarp and testa by pearling. Treatment of alkaline reagents and ammonia can remove 90% of the polyphenols. Supplementation of polyphenols‐rich diet with protein can alleviate the growth‐depressing effect of polyphenols. 相似文献
