The influence of varying degrees of adhesion as determined by mechanical tests on the sensory and consumer acceptance of a meat product

The adhesion between meat pieces in meat products, varied by the addition of different concentrations of a crude myosin solution, was measured by a trained sensory panel and by two instrumental tests: tensile adhesive strength (TAS) and punch and die. A consumer trial was used to find which level of adhesion was preferred. Results from the sensory panel showed that the adhesion could be detected as highly significant (P < 0·001) differences in three tactile measurements and in the two eating qualities, ease of fragmentation and rubberines. TAS measurements gave larger differences between treatments than punch and die, and had very high correlations with ease of fragmentation and crumblines on cutting. The small consumer study revealed no overall preference for any one product. Hence, although differences in adhesion between meat pieces in a meat product are detectable subjectively and can be measured objectively by TAS tests, preference for any particular strength varies between individuals.

The strength and stiffness of perimysial connective tissue isolated from cooked beef muscle

Thick transverse slices of bovine M. semitendinosus were cooked for 1 h at 50°–90° and then cooled. Perimysial connective tissue was dissected from the cooked meat and subjected to mechanical testing in a small-scale device. The initial ‘toe’ region of the J-shaped load-extension curve was progressively lost with increasing temperature, the curve becoming more nearly linear after cooking at 90°C. These effects are explained on the basis of the progressive straightening out of the crimps from the collagen fibres, the crimps becoming finally lost at approximately 70°C. The final stiffness of the perimysium at greater extensions was unchanged at higher temperatures. Breaking strength increased from raw to cooked at 50°C, thereafter decreasing at cooking temperatures up to 90°C. it is proposed that this technique of testing isolated perimysium gives a valuable means of directly measuring the effects of cooking, or other treatments, on the intrinsic properties of perimysial collagenous material. Quantitative knowledge of these will help to determine its contribution to the overall mechanical properties, and hence eating quality, of cooked meat.     

Tissue characterization based on scatterer number density estimation

The authors propose a robust model for characterizing the statistical nature of signals obtained from ultrasonic backscatter processes. The model can accommodate frequency-dependent attenuation, spatially varying media statistics, arbitrary beam geometries, and arbitrary pulse shapes. On the basis of this model, statistical schemes are proposed for estimating the scatterer number density (SND) of tissues. The algorithm for estimating the scatterer number incorporates measurements of both the statistical moments of the backscattered signals and the point spread function of the acoustic system. The number density algorithm has been applied to waveforms obtained from ultrasonic phantoms with known number densities and in vitro mammalian tissues. There is an excellent agreement among theoretical, histological, and experimental results. The application of this technique for noninvasive clinical tissue characterization is discussed.

Effect of block weight on work demands and physical workload during masonry work

The effect of block weight on work demands and physical workload was determined for masons who laid sandstone building blocks over the course of a full work day. Three groups of five sandstone block masons participated. Each group worked with a different block weight: 11 kg, 14 kg or 16 kg. Productivity and durations of tasks and activities were assessed through real time observations at the work site. Energetic workload was also assessed through monitoring the heart rate and oxygen consumption at the work site. Spinal load of the low back was estimated by calculating the cumulated elastic energy stored in the lumbar spine using durations of activities and previous data on corresponding compression forces. Block weight had no effect on productivity, duration or frequency of tasks and activities, energetic workload or cumulative spinal load. Working with any of the block weights exceeded exposure guidelines for work demands and physical workload. This implies that, regardless of block weight in the range of 11 to 16 kg, mechanical lifting equipment or devices to adjust work height should be implemented to substantially lower the risk of low back injuries.     

Relaxation of the mouse pubic symphysis during late pregnancy is not accompanied by the influx of granulocytes

In some animals, such as mice and guinea pigs, a hormonally controlled mechanism increases the flexibility of the pubic symphysis and enhances the cervical remodeling necessary for safe delivery. Cervical ripening during pregnancy is associated with a paradoxical influx of leukocytes. However, the changes in cell metabolism during relaxation of the mouse pubic symphysis for delivery have not been extensively studied. In this work, we used light microscopy and transmission and scanning electron microcopy, as well as immunohistochemistry and Western blotting for MMP-8, to investigate the involvement of granulocytes or resident stromal cells in the relaxation of the virgin pubic symphysis during late pregnancy (days 18 and 19, before delivery) in vivo and in explanted joints. MMP-8 was studied because this collagenase is a hallmark for cervical ripening associated with the influx of granulocytes during late pregnancy. Extensive dissolution and disorganization of the extracellular matrix was seen around fibroblastic-like cells in late pregnancy. In contrast to the cervix (positive control), morphological and immunohistochemical analyses revealed that there was no characteristic cellular inflammatory response in the interpubic tissue. Staining for MMP-8 was observed in chondroid and fibroblastic-like cells of virgin and relaxed interpubic ligament, respectively. However, no granulocytes were seen during the extensive remodeling of the pubic joint in late pregnancy. These results indicate that constitutive stromal cells may have an important role in tissue relaxation during remodeling of the pubic symphysis in pregnancy.     

Two-dimensional Kerr-Fourier imaging of translucent phantoms in thick turbid media

Translucent scattering phantoms hidden inside a 5.5-cm-thick Intralipid solution were imaged as a function of phantom scattering coefficients by the use of a picosecond time- and space-gated Kerr-Fourier imaging system. A 2-mm-thick translucent phantom with a 0.1% concentration (scattering coefficient) difference from the 55-mm-thick surrounding scattering host can be distinguished at a signal level of ~10(-10) of the incidence illumination intensity.     

Picosecond investigation of the collisional deactivation of OH A 2Sigma+(v' = 1, N' = 4, 12) in an atmospheric-pressure flame

The collisional deactivation of the laser excited states A 2Sigma+(v' = 1, N' = 4, 12) of OH in a flame is studied by measurement of spectrally resolved fluorescence decays in the picosecond time domain. Quenching and depolarization rates, as well as vibrational energy-transfer (VET) and rotational energy-transfer (RET) rates are determined. An empirical model describes the temporal evolution of the quenching and VET rates that emerge from the rotational-state relaxation. Fitting this model to the measured 1-0 and 0-0 fluorescence decays yields the quenching and VET rates of the initially excited rotational state along with those that correspond to a rotationally equilibrated vibronic-state population. VET from the higher rotational state (N' = 12) shows a tendency for resonant transitions to energetic close-lying levels. RET is investigated by analysis of the temporal evolution of the 1-1 emission band. The observed RET is well described by the energy-corrected sudden-approximation theory in conjunction with a power-gap law.
