The purpose of this research was to study the capacity of emulsions containing saturated monoglyceride self‐assembly structures to deliver omega‐3 fatty acids in fresh soft cheese. To this aim, fortified emulsions containing different ratios of milk, saturated monoglycerides (MGs) and cod liver oil were added to milk before cheese‐making. These emulsions were characterised by distinct microstructural features observed by polarised light microscopy and apparent viscosity values. The omega‐3 delivery performance of MG emulsions highlighted that this strategy allowed a good retention of the omega‐3‐rich oil in the curd (up to 75%). The fortified cheeses showed yield value and fat content higher than those of control samples. The enriched cheese showed hardness and cohesiveness obtained by texture profile analysis similar to those of the unfortified product. Only a slight decrease in gumminess was detected in fortified cheese.  相似文献

The non-uniformity of the air temperatures and the slow flow rate at the plane collector exit constitute the main cause of the limitations of the solar drying systems. In order to obtain an uniform and a variable flow rate for different uses, a hot air generator using concentrated solar radiation is proposed. To improve the thermal efficiency of the generator, a study of the influence of different shape parameters is realized. The generator is simulated in the laboratory while investigating the flow induced by a circular disc heated uniformly by Joule effect at constant temperature. This disc is placed at the entrance of an open ended vertical cylinder of a larger diameter. Thermal radiation emitted by the hot disc heats the cylinder wall. The heating of the fluid at the cylinder-inlet generates a thermosiphon flow around the one created by the hot disc. The comparison of the velocity and the temperature profiles of the resulting flow permits to determine the influence of the cylinder height, the vertical source-cylinder spacing and the radius ratio, on the resulting flow at the system exit. Thus, a judicious choice of the shape parameters entails an improvement of the flow rate as well as the thermal flux absorbed by the air and a good homogenization of the air temperature at the generator exit.  相似文献

This paper describes interactive facilities for simulating abstract muscle actions using Rational Free Form Deformations (RFFD). The particular muscle action is simulated as the displacement of the control points of the control-unit for an RFFD defined on a region of interest. A new cryogenic instrument was designed for the trapping of aerosols such as cigarette mainstream smoke at low temperature. The technique enabled the trapping of the mainstream smoke of a single cigarette and the particulate and vapor phases were trapped simultaneously. 2R4F reference cigarettes were smoked under International Standard Organization (ISO) regime and trapped at low temperature using the cryogenic instrument. After trapping, the mainstream smoke of the 2R4F reference cigarette was diluted with a solvent and selected smoke components could be quantified using gas-mass spectrometry (GCMS) and high-performance liquid chromatography (HPLC). The capability of the instrument for trapping the mainstream smoke was demonstrated. The feasibility of the procedure for the detection and the quantification of a large range of smoke components including carbonyls, alkaloids and organic volatile compounds (VOC) in the mainstream of a single cigarette was also shown.  相似文献

An experimental method is proposed to characterize the diffusional transfer of adsorbable gaseous solute medium in a porous medium. Three types of experimental measurements are used to successively access to the solute apparent diffusivity in the gas phase, in the adsorbed phase and to check whether the hypothesis of the thermodynamic equilibrium between the gas phase solute and the adsorbed solute is verified during the transient transfer process. This methodology is applied to a longitudinal section of a beech wood sample for the water transfer in the wood hygroscopic domain.  相似文献

Abstract

This paper describes the making of a short film on the Xian terra‐cotta soldiers using our integrated HU‐MANOID software. The method of creating and animating the soldiers’ faces is first presented. Then, we show how our approach, based on metaballs and spline surfaces, was used for designing and deforming soldiers’ bodies. For the animation of the bodies, we describe the motion control methods. Clothes for the soldiers are then described as well as horses and decor design. For the rendering, we explained our strategy using parallel machines. Finally, problems of integration are addressed.  相似文献

In this paper we present a new character animation technique in which the animation adapts itself based on the change in the user’s perspective, so that when the user moves and their point of viewing the animation changes, then the character animation adapts itself in response to that change. The resulting animation, generated in real-time, is a blend of key animations provided a priori by the animator. The blending is done with the help of efficient dual-quaternion transformation blending. The user’s point of view is tracked using either computer vision techniques or a simple user-controlled input modality, such as mouse-based input. This tracked point of view is then used to suitably select the blend of animations. We show a way to author and use such animations in both virtual as well as augmented reality scenarios and demonstrate that it significantly heightens the sense of presence for the users when they interact with such self adaptive animations of virtual characters.  相似文献
