Lamb carcasses of > 22 kg weight were not adversely affected by spray washing, but carcasses of < 22 kg weight were affected to some extent. Characteristics of carcasses significantly affected included the appearance of the fat in the crutch region and on the back, and the degree of flaccidity and dampness of the abdominal region. These faults were alleviated somewhat during refrigerated storage and consequently the faults detected in the experiments were probably not of commercial significance since, under pilot market tests in Europe, buyers did not find any faults in spray washed carcasses. 相似文献

Electromyography was used as a noninvasive and unobtrusive technique to characterise chewing patterns for a range of foods. Differences between subjects for a variety of aspects of chewing sequence are recorded for a range of foods (carrot, apple, roast pork, salami, biscuit and toast). Identifiable subgroups of subjects differing in chewing behaviour existed within the random sample of 52 dentate subjects. The five subgroups accounted for 52%, 21%, 11%, 10% and 6% of the sample population. Major discriminating factors between the behavioural groups lie in their chewing time and the muscle work rate during chewing. Sensory ratings for firmness and rubberiness of model foods differed significantly between the subjects exhibiting different chewing behaviours. Chewing behaviour may influence consumers' perceptions about the texture of a food. 相似文献

Global trade in preserved milks is on the increase as new markets open up in regions of the world that have not been traditionally associated with milk consumption. Equally, a rise in world milk production is forecasted to continue, and the indications are that significant quantities of the extra milk produced will be converted to commodity products such as butter and powders. Consequently, on-going investment in new spray drying capability is likely to track geographical shifts in milk production. Successful application of advanced process control to the operation of large scale drying plant is both a priority and a challenge.
Meanwhile, opportunities for the exploitation of milk as a source of functional ingredients are being availed of by the dairy industry as it continues to achieve added value and unique key selling points. High-pressure (HP) treatment of food products is a novel processing technique during which the product is treated in a vessel of suitable strength at a high pressure, generally in the range 100–1000 MPa. As a result, several constituents and properties of the treated product are altered. HP-induced changes in the constituents and properties of milk are arguably among the most extensive of the range of food products studied to date. HP treatment of milk induces solubilization of minerals associated with the casein micelles, denatures whey proteins and, depending on pressure, can either induce aggregation or disruption of the casein micelles. These HP-induced changes in milk constituents affect the properties of the milk; cheesemaking properties of milk can be enhanced considerably, indicating potential application of HP treatment in this area; furthermore, encouraging results have also been reported for HP treatment of milk prior to yogurt manufacture. HP treatment of milk also affects its microflora; however, considerable variation in baroresistance between bacterial species and strains exists. Further applied research appears warranted to establish the full commercial potential of HP treatment of milk. 相似文献

Stability of aqueous α-Al2 O3 suspensions with Na+ salt of poly(methacrylic acid) (PMAA-Na) polyelectrolyte was studied as a function of pH. At a given pH, the transition from the flocculated to the dispersed state corresponded to the adsorption saturation limit of the powders by the PMAA. As the pH was decreased, the adsorption saturation limit increased until insolubility and charge neutralization of the PMAA was approached. As a first step toward understanding how noctuid moths evolve species-specific pheromone communication systems, we hybridized and backcrossed two closely related moth species, Heliothis virescens (Hv) and H. subflexa (Hs), which differ qualitatively and quantitatively in their multi-component sex pheromone blends. We used amplified fragment length polymorphism (AFLP) marker-based mapping of backcross families to determine which of the 30 autosomes in these moths contained quantitative trait loci (QTL) controlling the percentages of specific chemical components in the pheromone blends. In two previous backcrosses to Hs, we found a strong depressive effect of Hv-chromosome 22 on the percentage of three acetate components in the pheromone gland. These acetates are present in Hs and absent in Hv. Here, we describe how we introgressed Hv-chromosome 22 into the genomic background of Hs. Selection for Hv-chromosome 22 started from backcross 3 (BC3) females. All females that had Hv-chromosome 22 and a low percentage of acetates (< 3% of the total amount of pheromone components present) were backcrossed to Hs males. In BC5 to BC8, we determined whether Hv-chromosome 22 was present by a) running only the primer pairs that would yield the markers for that chromosome, and/or b) determining the relative percentages of acetates in the pheromone glands. Either or both genotype and phenotype were used as a criterion to continue to backcross these females to Hs males. In BC9, we confirmed the isolation of Hv-chromosome 22 in the Hs genomic background, and backcrossed the males to Hs females to eliminate the Hv-sex chromosome as well as mitochondrial DNA. The pheromone composition was determined in BC3, BC5, and BC11 females with and without Hv-chromosome 22. All backcross females with Hv-chromosome 22 contained significantly less acetates than females without this chromosome. In addition, BC3 females with Hv-chromosome 22 contained significantly more Z11-16:OH than BC3 females without Hv-chromosome 22. However, in BC5 and BC11 females, the correlation between Z11-16:OH and Hv-chromosome 22 was lost, suggesting that there are separate QTL for the acetates and for Z11-16:OH, and that the relative amount of the alcohol component is only affected in epistasis with other (minor) QTL. Now that we have succeeded in isolating the chromosome that has a major effect on acetate production, we can test in behavioral experiments whether the presence of acetates may have been a driving force for a shift in pheromone composition. Such tests are necessary to move towards an evolutionary understanding of the differentiation in sexual communication in Heliothis spp. moths. 相似文献

Abstract In this study the relationship between urban land use features and radar polarization was examined. Statistical tests were applied to density readings of HH-and HV-polarized X-band SAR imagery to determine: (1) differences in signal return among urban land use categories within a single polarization and (2) variations in signal return between polarizations for individual land use categories. Only one category produced a statistical difference between polarizations. Although some categories were separable on both polarizations, others were separable only on a single polarization. This article analyzes the evolution and spatial dynamics of condominium development in Toronto, the largest housing market in Canada and the site of a rapid take‐up of condominium tenure and construction over the last 40 years. The article probes the most influential policies that fostered and regulated condominium growth, and explores the implications for the continued restructuring of the city. A host of factors, including neoliberal state policies, have played a decisive role in fostering what we term condo‐ism, referring to an emerging nexus of economic development, finance, and consumption sector interests that have coalesced around condominium construction and culture. Policies have redirected growth to the urban core, channeled capital investments and young residents, and promoted gentrification, ultimately transforming the character of Toronto's central business district. The article explores these changes, and discusses their implications for contemporary emerging forms of capitalist urbanization and restructuring of the city. 相似文献
