Shea butter is used as an edible vegetable fat in many African countries. It can be utilized as a substitute or complete replacement for cocoa butter in various applications and plays an important role in traditional African medicinal practice. Although detection of volatile compounds by solid‐phase micro‐extraction gas‐chromatography mass‐spectroscopy (SPME‐GC‐MS) is a very reliable and reproducible technique, which can be used as an important part of authenticity checking, production monitoring and contamination detection, no published data about volatile compounds of shea butter are available so far. In this investigation, the characteristic volatiles in the headspace of original African shea butter samples were identified by using SPME‐capillary‐GC coupled to a mass selective detector. Almost 100 different volatile components were identified, e.g. fatty acids, saturated and unsaturated aldehydes and ketones, terpenes, and typical Maillard reaction products such as methylfuranes and pyrazines. Furthermore, the samples have been olfactorily evaluated by a panel of professional flavorists and trained analytical chemists. It can be stated that variations in processing conditions of shea butter result in considerable differences in the composition of headspace volatiles, detected by SPME‐GC‐MS and human olfaction.  相似文献

Euglena gracilis is a photosynthetic flagellate. To acquire a suitable position in its surrounding aquatic environment, it exploits light and gravity primarily as environmental cues. Several physiological studies have indicated a fine-tuned relationship between gravity sensing (gravitaxis) and light sensing in E. gracilis. However, the underlying molecular mechanism is largely unknown. The photoreceptor photoactivated adenylyl cyclase (PAC) has been studied for over a decade. Nevertheless, no direct/indirect interaction partner (upstream/downstream) has been reported for PAC. It has been shown that a specific protein, kinase A (PKA), showed to be involved in phototaxis and gravitaxis. The current study reports the localization of the specific PKA and its relationship with PAC.  相似文献

The removal of dichloromethane (DCM) from polluted air was studied both in biotrickling filters and in continuous stirred tank bioreactors, using either a single-liquid aqueous phase or a combination of an aqueous-organic liquid phase. The presence of the organic phase, i.e. silicone oil, at a volume ratio of 10% of the liquid phase, increased the maximum EC by about 25% in the BTF, reaching 200 g m3/h, and by as much as 300% in the CSTB, reaching 350 g m3/h. Based on data of chloride release in the aqueous phase and carbon dioxide production in the gas phase, complete dechlorination and mineralization of the pollutant could be confirmed. When applying shock loads, a more stable behaviour was observed in the presence of the organic phase. Generally, the completely mixed reactors were also more stable than the plug-flow biotrickling filters, irrespective of the presence of the organic phase. The use of molecular techniques allowed showing that the originally inoculated DCM-degrading Hyphomicrobium strains remained present, although not dominant, after long-term bioreactor operation. Different new bacterial populations did also appear in the systems, some of which were unable to degrade DCM.  相似文献

The fundamentals have been developed for a quantitative theory on the structure and dynamics of scientific networks. These fundamentals were conceived through a new vision of translation, defined mathematically as the derivative or gradient of the quality of the actors as a function of the coordinates for the space in which they perform. If we begin with the existence of a translation barrier, or an obstacle that must be overcome by the actors in order to translate, and if we accept the Maxwell-Boltzmann distribution as representative of the translating capacity of the actors, it becomes possible to demonstrate the known principle of “success breeds success.” We also propose two types of elemental translation: those which are irreverisble and those which are in equilibrium. In addition, we introduce the principle of composition, which enables, from elemental translations, the quantification of more complex ones.  相似文献

Ethylene is a plant hormone controlling a wide range of physiological processes in plants. During postharvest storage of fruit and vegetables ethylene can induce negative effects including senescence, over-ripening, accelerated quality loss, increased fruit pathogen susceptibility, and physiological disorders, among others. Apart from the endogenous ethylene production by plant tissues, external sources of ethylene (e.g. engine exhausts, pollutants, plant, and fungi metabolism) occur along the food chain, in packages, storage chambers, during transportation, and in domestic refrigerators. Thus, it is a great goal in postharvest to avoid ethylene action. This review focuses on tools which may be used to inhibit ethylene biosynthesis/action or to remove ethylene surrounding commodities in order to avoid its detrimental effects on fruit and vegetable quality. As inhibitors of ethylene biosynthesis and action, good results have been found with polyamines and 1-methylcyclopropene (1-MCP) in terms of maintenance of fruit and vegetable quality and extension of postharvest shelf-life. As ethylene scavengers, the best results can be achieved by adsorbers combined with catalysts, either chemical or biological (biofilters).  相似文献

A 30-year-old man with presinusoidal portal hypertension was transplanted for cryptogenic cirrhosis. On the explanted liver, few intrahepatic stones, biliary cirrhosis, chronic cholangitis of the large bile ducts and a peculiar proliferation of small dilated bile ducts at the periphery of the portal tracts led to the diagnosis of secondary biliary cirrhosis and cholangitis, possibly linked to ductal plate malformation, including congenital hepatic fibrosis associated with a minor form of Caroli's disease. Ex vivo portogram and histology showed the paucity of portal vein branches and the hypertrophy of the peribiliary vascular plexus. This hypertrophy, which has been reported in livers with presinusoidal hypertension, is another indirect argument to suggest the diagnosis of congenital hepatic fibrosis.  相似文献

There is interest as to whether the electromagnetic fields used in mobile radiotelephony might affect biological processes. Other weak fields such as gravity intervene in a number of physical and biological processes. Under appropriate in vitro conditions, the macroscopic self-organization of microtubules, a major cellular component, is triggered by gravity. We wished to investigate whether self-organization might also be affected by radiotelephone electromagnetic fields. Detecting a possible effect requires removing the obscuring effects triggered by gravity. A simple manner of doing this is by rotating the sample about the horizontal. However, if the external field does not also rotate with the sample, its possible effect might also be averaged down by rotation. Here, we describe an apparatus in which both the sample and an applied radiofrequency electromagnetic field (1.8 GHz) are stationary with respect to one another while undergoing horizontal rotation. The electromagnetic field profile within the apparatus has been measured and the apparatus tested by reproducing the in vitro behavior of microtubule preparations under conditions of weightlessness. Specific adsorption rates of electromagnetic energy within a sample are measured from the initial temperature rise the incident field causes. The apparatus can be readily adapted to expose samples to various other external fields and factors under conditions of weightlessness.  相似文献

Analysis of stresses during the freezing of solid spherical foods   总被引:1,自引:0,他引:1
An analytical model is presented to calculate thermal stresses and strains during the freezing of a spherical food, taking into account both the expansion during phase change and subsequent thermal contraction due to temperature decrease. The Young modulus and Poisson ratio are assumed to undergo a step change at the freezing point. The expansion due to phase change cause a uniform and virtually constant isotropic tensile stress in the unfrozen core. In the frozen shell, this expansion gives rise to tensile radial stress and compressive tangential stress. The thermal contraction subsequent to phase change causes reverse effects, i.e. uniform compressive stress in the unfrozen core and compressive radial stress in the frozen shell, while tangential stress is tensile on the outside and compressive on the inside of the frozen shell. The effect of thermal contraction is noticeable only at cryogenic temperatures.  相似文献

In order to understand starch changes induced by baking process at different locations of a slice of sandwich bread, namely the top, center, and bottom locations, starch was isolated from crumbs baked at two heating rates ( 6.31 and 4.67 °C/min) and evaluated for their pasting properties, gelatinization parameters, and iodine complexing ability. Results showed that starch isolated from the bottom and the center crumbs baked at higher heating rate presented the significant higher final viscosity and higher setback than that isolated from crumbs baked at lower heating rate. Thermal analysis showed that starch isolated from the center crumb of the bread slice presented the lower enthalpy value of gelatinization, confirming that these samples underwent higher heat-moisture treatment during the baking process. After equilibration at 0.97 aw, the exposure to iodine vapor changed the X-ray diffraction intensity of starch samples. Polarized light microscopy showed that heating affects starch granule morphology due to the higher starch chain mobility and the higher granular swelling when breads were baked at lower heating rate.  相似文献
