CONTRIBUTION OF GLYCEROL, ETHANOL AND SUGAR TO THE PERCEPTION OF VISCOSITY AND DENSITY ELICITED BY MODEL WHITE WINES

The contribution of glycerol, ethanol and sugar to the perception of viscosity and density of model wine (MW) solutions was examined. In study 1, the effects of individual components on perceived viscosity (PV) and perceived density (PD) were studied using 5, 20 or 50 g/L glycerol; 3, 7 or 15% v/v ethanol and 0, 80, 150 or 250 g/L sugar concentrations. In study 2, model ice wine mixtures of 8, 10 or 12% ethanol and 150, 250 or 300 g/L sugar were assessed for PV and PD. The physical viscosity and density of the MWs were also measured in both studies. Across the range of concentrations investigated, sugar influences the perception of viscosity and density the most, ethanol has a moderate effect and the contribution of glycerol is nominal. In model ice wine solutions, PV and PD increased with sugar concentration, but were minimally affected by changes in ethanol concentration. The PV elicited by the model ice wine solutions was well described by a linear model using physical viscosity as the independent variable (r: 0.907). This information may be useful for predicting the sensory properties of the ice wine for quality control purposes.     

Short term protective effect of digitoxin in sepsis-induced acute lung injury

Purpose: Digitoxin is a cardiac glycoside used in the treatment of heart failure. Inspired by its known anti-inflammatory effect, this study aims to investigate the effect of digoxin in a sepsis model and to bring to light its effect and underlying mechanism in acute lung injury (ALI). Method: 28 wistar albino rats were divided into 4 groups. Sepsis model is performed by the feces intraperitoneal-injection procedure (FIP). Results: TNF-a, CRP, IL-6, IL 1-Beta, lactic acid, and MDA values were significantly decreased in the FIP+digitoxin group compared to the FIP+Saline group. When the same groups were examined, histological improvements such as decrease in alveolar inflammation and decrease in septal thickening in the digitoxin group and thorax CT were found to be significantly higher in the Hounsfield unit digitoxin group compared to the Saline group. Conclusion: Digitoxin has shown biochemical improvement in sepsis with all known mechanisms of action, and healing effects in both computerized tomography and histology in the lung.     

CHEMICAL COMPOSITIONS OF TRADITIONAL TARHANA HAVING DIFFERENT FORMULATIONS

Cereal‐based fermented foods play an important role in the diets of many people in Asia, Africa, the Middle East and some parts of Europe. Containing cereal and animal‐based nutrients, richer with fermentation products, produced with yeast and lactic acid bacteria, tarhana is a type of soup having a delicious and desired taste. It is a good source of protein and vitamins and therefore is used largely for feeding children and the elderly. Because there is no standard production method, the nutritional properties of tarhana strictly depend on ingredients and their ratios in the formulation. In this research, the compositions of 21 tarhana samples collected from different locations in Turkey were examined. Moisture, ash, salt, protein, crude fat, acidity degree and reducing sugar values of the samples changed between 9.35 and 66.4, 1.36 and 9.40, 0.62 and 9.01, 6.77 and 28.55, 0.43 and 15.78, 1.7 and 40.7, and 0.22 and 1.85%, respectively. The nutritional importance of tarhana is the improvement of the basic cereal protein diet by adding dairy protein in a highly accepted form. Like tarhana, indigenous fermented foods that enhance health properties should receive much more attention that they deserve.     

Experimental investigation of shared storage assignment policies in automated storage/retrieval systems

In this study, two shared storage assignment policies are compared in an Automated Storage/Retrieval System (AS/RS) by using computer simulation. The AS/RS is assumed to operate under a continuous review, order quantity, reorder point inventory policy. The average travel time of the AS/R machine for storing and retrieving products is used as the main performance measure. Sensitivity of the system to product variety, inventory replenishment lead time, and demand rate is investigated, as well as the effects of the inventory policy and the product classification technique used. Our main conclusion is that the turnover-based policy, in general, outperforms the duration of stay-based policy. However, the' difference between the performance of the two policies becomes insignificant under certain conditions.     

Hydrophobic nano-carrier for lysozyme adsorption

In this work, poly(HEMA–APH) nanoparticles were synthesized by surfactant-free emulsion polymerization technique. Magnetic behaviour was introduced by simple addition of Fe₃O₄ into the polymerization medium. Characterization of the nanoparticle was carried out by FTIR, ESR, SEM, AFM and EDX analyses. These synthesized magnetic nanoparticles were used for adsorption of lysozyme. For this purpose, adsorption conditions were optimized and maximum lysozyme binding capacity was found to be 278.8 mg g^?1 polymer in pH 7.0 phosphate buffer at 25^°C. Desorption and reusability properties of the nanoparticles were investigated and lysozyme adsorption efficiency did not change significantly at the end of the 10 successive reuses.
