Erva-mate (Ilex paraguariensis St. Hil.) is a native species from temperate regions of South America, such as Brazil, Paraguay, and Argentina, that is consumed as a beverage known as mate. The objective of this research was to determine the content of caffeic acid, catechin, chlorogenic acid, caffeine, and gallic acid in mate to explain their influence in beverage taste and sensory differences between native and reforested plants, as well as between beverages from plants of different regions of Brazil (Santa Catarina and Rio Grande do Sul states). Compounds were determined by HPLC and results were related to a sensory evaluation performed by trained tasters. Tasters considered the beverage from reforested plants to be more bitter than the beverage from native plants. Beverages from reforested plants had significantly higher caffeic acid and lower catechin, chlorogenic acid, caffeine, and gallic acid content than native plants. Beverages from plants of Santa Catarina state had significantly higher catechin, caffeine, and gallic acid content than plants from Rio Grande do Sul state.  相似文献

Access to food that is adequate in both quantity and quality is directly related to the health of a population. Unsafe food may cause an individual to experience varying degrees of illnesses known as food-borne disease. As their daily lives change, an increasing number of Brazilian people eat outside of their houses in restaurants, cafes, bakeries, and other dining establishments. Until August 2004, food services in Brazil followed the same standards recommended for other industries; these standards were determined by the Ministry of Health through Decree 326 in 1997 and completed in 2002 by the Brazilian Health Surveillance Agency through Resolution 275. On September 15, 2004, the Brazilian Health Surveillance Agency published RDC 216 that provided information about Technical Regulation of Good Practices specifically for food services. This legislation ensures safe production of the food at Brazilian food service sites through good practices and procedures. The purpose of this review is to describe the aspects related to safe food production and to discuss the main legislation for food services in Brazil.  相似文献

ABSTRACT: The effect of 2 slaughter methods (immersion in ice-water slurry and electrical stunning followed by ice slurry asphyxiation) on the quality of grass carp ( Ctenopharyngodon idella ) stored in ice for 20 d was evaluated using sensory and chemical analysis. Electricity immediately stunned the fish and did not induce blood spots in the flesh. Fish killed by electricity showed a faster initial rate of ATP degradation and entered into rigor mortis earlier, but did not show significant differences in the sensory score when compared with fish killed by immersion in ice-water slurry. Thus, no differences were observed in the shelf life of carps between the 2 slaughter methods evaluated. The limit for acceptability of grass carp stored in ice was around 13 to 16 d. Grass carp accumulated more inosine than hypoxanthine. K, Ki, P , Fr, and H values were highly correlated with storage time and with the TFRU sensory scores in both groups; these could be used to assess the freshness quality of grass carp.  相似文献
