The levels of C-reactive protein (CRP) in sera of 71 HIV-seropositive children and of 71 apparently healthy children were determined by Mancini method. The results demonstrate that HIV-infection per se doesn't increase the concentration of CRP in serum. After this we wanted to determine the relationship between CRP and evolution of HIV-infection. For this we used a set of 8 children in different stages of HIV-infection. For each child we had at least 2 sera, used for diagnosis and CRP assay. Three children (one with AIDS [correction of SIDA] and 2 in intermediate stage) had elevated levels of CRP. The reason for these elevations were an acute salmonellosis, a febrile episode of unknown origin and for the last child, once a staphylococcal infection of the skin and once an acute bronchiolitis clinically but not microbiologically documented. In conclusion, HIV-infection per se doesn't induce increased levels of the CRP, in any stage; this protein could be used as a marker of bacterial, parasitic and cytomegalovirus infections.  相似文献

The employment of novel food packaging materials has increased the number of occurring hazards due to the migration from packaging material to the packaged food. Although polymers have mainly monopolized the interest of migration testing and experimentation, recent studies have revealed that migration also occurs from "traditional" materials generally considered to be safe, such as paper, carton, wood, ceramic, and metal. The regulations and the directives of the EU tend to become stricter in this respect. The emphasis is on reaching a consensus in terms of food simulants and testing conditions for migration studies. Furthermore, the list of hazardous monomers, oligomers, and additives continues to augment in order to ensure that the consumer safety is in current agreement with the HACCP, which is continuously gaining ground.  相似文献

A physicochemical approach has been undertaken to develop polymeric microcapsules for delivering probiotic bacteria with improved viability in functional food products. Two probiotic strains of Lactobacillus paracasei subsp. paracasei (E6) and Lactobacillus paraplantarum (B1), isolated from traditional Greek dairy products, were microencapsulated by complex coacervation using whey protein isolate (WPI, 3 %?w/v) and gum arabic (GA, 3 %?w/v) solutions mixed at 2:1 weight ratio. The viability of the bacterial cells during processing (heat treatment and high salt concentrations), under simulated gut conditions (low pH and high bile concentrations) and upon storage, was evaluated. Entrapment of lactobacilli in the complex coacervate structure enhanced the viability of the microorganisms when exposed to a low pH environment (pH 2.0). Both encapsulated strains retained high viability in simulated gastric juice (>73 %; log scale), especially in comparison with non-encapsulated (free) cells (<19 %). Moreover, after 60 days of refrigerated storage at pH 4.0, the viability of microencapsulated cells was more than 86 %, implying improved protection in comparison with the free cells (<59 %). Complex coacervation with WPI/GA has the potential to deliver live probiotics in low pH foods or fermented products; it is also important to note that the complexes can dissolve at pH 7.0 (gut environment) releasing the microbial cells (desired feature of target delivery systems).  相似文献

Lactobacillus casei cells were immobilized on fruit (apple and pear) pieces and the immobilized biocatalysts were used separately as adjuncts in probiotic cheese making. In parallel, cheese with free L. casei cells and cheese only from renneted milk were prepared. The produced cheeses were ripened at 4 to 6°C and the effect of salting and ripening time on lactose, lactic acid, ethanol concentration, pH, and lactic acid bacteria viable counts were investigated. Fat, protein, and moisture contents were in the range of usual levels of commercial cheeses. Reactivation in whey of L. casei cells immobilized on fruit pieces after 7 mo of ripening showed a higher rate of pH decrease and lower final pH value compared with reactivation of samples withdrawn from the remaining mass of the cheese without fruit pieces, from cheese with free L. casei, and rennet cheese. Preliminary sensory evaluation revealed the fruity taste of the cheeses containing immobilized L. casei cells on fruit pieces. Commercial Feta cheese was characterized by a more sour taste, whereas no significant differences concerning cheese flavor were reported by the panel between cheese containing free L. casei and rennet cheese. Salted cheeses scored similar values to commercial Feta cheese, whereas unsalted cheese scores were significantly lower, but still acceptable to the sensory panelists.  相似文献

Lactobacillus casei cells were immobilized on wheat grains and the effect of nine cryoprotectants during freeze-drying was investigated. Survival and fermentative activity of the freeze-dried immobilized biocatalysts was studied by monitoring pH, lactic acid and lactose content in successive fermentations batches of both synthetic lactose medium and milk. Freeze-dried L. casei cells immobilized on wheat grains without using cryoprotectants resulted in high cell survival and metabolic activity. The same biocatalysts were stored at room temperature for 9 months and at 4 °C and −18 °C for 12 months. Reactivation of the stored biocatalysts was carried out in synthetic lactose medium. Storage at room and low temperatures (4 °C and −18 °C) resulted in about 5.11, 4.9 and 4.3 final pH respectively during fermentations, indicating the suitability of the immobilized biocatalysts for the production of mild and low pH dairy products. The immobilization of a probiotic microorganism, such as L. casei, on boiled wheat which contains prebiotic compounds might provide a potential synbiotic preparation.  相似文献

The comparative genome analysis of six Lactiplantibacillus plantarum subsp. argentoratensis strains previously isolated from spontaneously fermented Greek wheat sourdoughs is presented. Genomic attributes related to food safety have been studied according to the European Food Safety Authority (EFSA) suggestions for the use of lactic acid bacteria (LAB) in the production of foods. Bioinformatic analysis revealed a complete set of genes for maltose, sucrose, glucose, and fructose fermentation; conversion of fructose to mannitol; folate and riboflavin biosynthesis; acetoin production; conversion of citrate to oxaloacetate; and the ability to produce antimicrobial compounds (plantaricins). Pathogenic factors were absent but some antibiotic resistance genes were detected. CRISPR and cas genes were present as well as various mobile genetic elements (MGEs) such as plasmids, prophages, and insertion sequences. The production of biogenic amines by these strains was not possible due to the absence of key genes in their genome except lysine decarboxylase associated with cadaverine; however, potential degradation of these substances was identified due to the presence of a blue copper oxidase precursor and a multicopper oxidase protein family. Finally, comparative genomics and pan-genome analysis showed genetic differences between the strains (e.g., variable pln locus), and it facilitated the identification of various phenotypic and probiotic-related properties.  相似文献

Packaging materials are currently considered an important source of environmental waste because of their great volume. Although for materials like glass, aluminum, and paperboard recycling has been rather extensively practiced, it proved to be a much more arduous task for polymeric materials because of their great variety and the coexistence/mixing of various polymers either as blends or as copolymers. Therefore, constructive approach to recycling would consist of reviewing its current status worldwide to make a comprehensive presentation of the current trends and the state of art techniques for plastic disposal, sorting, and recycling. Although mechanical, feedstock, and chemical recycling of polymers are thoroughly analyzed within the frame of this review, other alternatives such as landfill, incineration, pyrolysis, reuse and recovery, and composting are also presented and commented.  相似文献
