Frankfurters were manufactured from lean meats (100% beef and 50:50 beef-pork) to contain reduced levels of fat (about 1.3%). A curing solutibn was added to yield 160% of fresh meat weight. Three processing methods, coarse ground tumbled, fine ground tumbled and fine ground emulsified were used. All products were cooked in live steam to 71°C internal temperature. Product yields, penetrometer values, color, chemical composition, caloric content and added water were evaluated. Emulsified frankfurters from 50:50 beef-pork mixtures at 160% cure had texture similar to conventional product as well as increased (P<0.05) yields, acceptable color and 74% fewer calories.  相似文献

We modeled nisin's anticlostridial activity and assessed the antagonistic or potentiating influences of food ingredients. The model systems contained yeast extract, proteose peptone, and glucose; were supplemented with protein (0.075, 0.75, 7.5% w/v), phospholipid (0.075, 0.75, 7.5% w/v), or soluble starch (5, 17.5, 30% w/v); and were adjusted to pH 5.5, 6.0, or 6.5. Samples inoculated with 104/mL spores were incubated at 15, 25, or 35°C. Statistical analysis developed an equation (r2= 0.76) that modeled the response and identified temperature as the most significant (α 0.001) variable. Nisin lost effectiveness with increasing temperature. Nisin concentration had significant positive and phospholipid negative, linear effects. Many interactive effects were significant (α 0.20). Nisin inhibited C. botulinum until its residual level dropped below a threshold, which decreased from 154 IU/mL at 35°C to 12 IU/mL at 15°C.  相似文献

In this study, we have investigated the stability of the antigenotoxic properties of dried of Lentinula edodes (Berk.) Singer mushroom powder stored at room and at − 20C. Mice were pretreated by gavage for 15 consecutive days with 0.6 mL/day of an aqueous extract of dried L. edodes powder prepared at 60C. On day 15, the mice were intraperitoneally injected with 50 mg/kg N-ethyl-N-nitrosourea (ENU); 3 h later, peripheral blood was withdrawn from the animals and used to evaluate DNA damage using the comet assay. The mice were sacrificed 24 h after the ENU treatment and the bone marrow used to measure the frequency of micronucleated polychromatic erythrocytes. The results indicated that storage at both room temperature and at − 20C significantly reduced the antigenotoxic effects of the mushroom powder. In addition, whereas freshly dried mushroom powder was nongenotoxic, storage of the powder at − 20C resulted in genotoxic activity ( P <  0.05). Taken together, our data indicate that constituents of L. edodes powder are altered during storage, resulting in both genotoxicity and a reduction in antigenotoxicity.  相似文献

The morphology of mitochondria can inform about their functional state and, thus, about cell vitality. For example, fragmentation of the mitochondrial network is associated with many diseases. Recent advances in neuronal imaging have enabled the observation of mitochondria in live brains for long periods of time, enabling the study of their dynamics in animal models of diseases. To aid these studies, we developed an automatic method, based on supervised learning, for quantifying the degree of mitochondrial fragmentation in tissue images acquired via two‐photon microscopy from transgenic mice, which exclusively express Enhanced cyan fluorescent protein (ECFP) under Thy1 promoter, targeted to the mitochondrial matrix in subpopulations of neurons. We tested the method on images prior to and after cardiac arrest, and found it to be sensitive to significant changes in mitochondrial morphology because of the arrest. We conclude that the method is useful in detecting morphological abnormalities in mitochondria and, likely, in other subcellular structures as well.  相似文献

Ceramide 1 is the main repository of stratum corneum linoleic acid, and changes in the levels of ceramide 1 linoleate are associated with cutaneous abnormalities: essential fatty acid deficiency, atopic dermatitis and acne. We have previously reported seasonal variation in stratum corneum lipids where lipids, particularly ceramides, are very much reduced in winter which probably influences the appearance of skin xerosis in this season. However, investigations into the seasonal variation in ceramide 1 fatty acid levels and the effects of topical essential fatty acids on the composition of these lipid species have not been conducted in healthy subjects. We determined the composition of stratum corneum ceramide 1 esterified fatty acids in leg skin from Caucasian women in winter and summer and also investigated the effects of topical triglycerides rich in linoleic acid on stratum corneum ceramide 1 fatty acid levels in winter. A dramatic seasonal variation was observed. Whereas decreased levels of linoleic acid and some saturated fatty acids (C-15 and C-24) were observed in the winter months, increased levels of oleic acid were found. Nevertheless, it was possible to normalize the levels of stratum corneum ceramide 1 linoleate following topical application of formulations containing linoleic acid-rich triglycerides for 4 weeks. The reduction in ceramide 1 linoleate may lead to impaired stratum corneum function and increased susceptibility to skin xerosis in winter. However, by using formulations containing linoleic acid esters it is possible to correct these changes and possibly improve barrier resilience.  相似文献

The effects of different tumbling speeds (5, 10, 15, and 20 rpm) during 12 hr intermittent tumbling (10 min/hr) on the characteristics of a restructured cured beef product were studied. There were no differences (P>0.05) among the various treatment means for yield, Hunter color scores, voids between chunks of meat, handling-ability or Allo-Kramer shear values. Meat tumbled at 15 and 20 rpm had higher (P<0.05) Instron values than the meat tumbled at 5 or 10 ‘rpm. However, 20 rpm produced more (P<0.05) extracted protein on the meat surface than 5 rpm. In summary, 5, 10, and 15 rpm produced satisfactory products, although 15 rpm had greater binding ability.  相似文献

The steady‐state operation of the concentrating system from an industrial milk powder plant was studied using a simulation approach. This system is composed of two tubular preheaters, a plate pasteurizer, a thermocompressor and four climbing‐falling‐film plate evaporators operating in a multiple‐effect arrangement. Its simulation was performed using the ASPEN Plus shell, into which calculation routines previously developed by the authors had to be introduced in order to enable the calculation of the plate units. For the thermocompressor, a simulation code based on the solution of a design equation and the overall mass and energy balances was formulated and then introduced into ASPEN. In the validation step, simulation results were compared with operating data of the industrial plant, and a good agreement was verified. A sensitivity analysis of the concentrating system was then performed, considering two different operating variables, namely the milk inlet temperature and the motive steam pressure in the thermocompressor.  相似文献
