Tree nuts are rich in macro and micronutrients, phytochemicals, tocopherols and phenolic compounds. The development of nut spreads would potentially increase the food uses of nuts and introduce consumers with a healthier, non-animal breakfast snack food. Nut spreads are spreadable products made from nuts that are ground into paste. Roasting and milling (particle size reduction) are two important stages for the production of nut spreads that affected the textural, rheological characteristic and overall quality of the nut spread. Textural, color, and flavor properties of nut spreads play a major role in consumer appeal, buying decisions and eventual consumption. Stability of nut spreads is influenced by its particle size. Proper combination of ingredients (nut paste, sweetener, vegetable oil and protein sources) is also required to ensure a stable nut spread product is produced. Most of the nut spreads behaved like a non-Newtonian pseudo-plastic fluid under yield stress which help the producers how to start pumping and stirring of the nut spreads. Similar to other high oil content products, nut spreads are susceptible to autoxidation. Their oxidation can be controlled by application of antioxidants, using processing techniques that minimize tocopherol and other natural antioxidant losses.  相似文献

The physicochemical properties of crude Nigella seed (Nigella sativa L.) oil which was extracted using Soxhlet, Modified Bligh–Dyer and Hexane extraction methods were determined. The effect of different extraction methods which includes different parameters, such as temperature, time and solvent on the extraction yield and the physicochemical properties were investigated. The experimental results showed that temperature, different solvents and extraction time had the most significant effect on the yield of the Nigella oil extracts. The fatty acid (FA) compositions of Nigella seed oil were further analyzed by gas chromatography to compare the extraction methods. The C16:0, C18:1 and C18:2 have been identified to be the dominant fatty acids in the Nigella seed oils. However, the main triacylglycerol (TAG) was LLL followed by OLL and PLL. The FA and TAG content showed that the composition of the Nigella seed oil extracted by different methods was mostly similar, whereas relative concentration of the identified compounds were apparently different according to the extraction methods. The melting and crystallization temperatures of the oil extracted by Soxhlet were −2.54 and −55.76 °C, respectively. The general characteristics of the Nigella seed oil obtained by different extraction methods were further compared. Where the Soxhlet extraction method was considered to be the optimum process for extracting Nigella seed oil with a higher quality with respect to the other two processes.  相似文献

‘B 10’ carambola of ripening stage (RS) 3 and 4 were minimally processed (MP) and then dipped in 0, 15 and 30 mg L?1 ascorbic acid (AA). The 1‐cm‐thick slices were then dried, packed into cling‐wrapped‐foam tray and stored at 7 °C for 0, 3 and 5 days. Skin colour (L*, C* and h°), flesh firmness, soluble solids concentration, vitamin C content, titratable acidity, pH, degree of browning, polyphenoloxidase (PPO) activity and sensory attributes of MP carambola treated with AA were determined. AA treatment had significant effect in decreasing cut surface browning degree but no significant effect on all the selected quality characteristics of the MP carambola. In the sensory evaluation, flesh colour, sweetness, flavour and overall taste were significantly affected by AA treatment especially at 15 mg L?1. The RS of fruit significantly affected skin colour (C* and h°), pH and sensory attributes of colour and flavour of the MP carambola. As storage day (SD) progressed, skin colour (C* and h°), flesh firmness and vitamin C content, cut surface browning, PPO activity and all the sensory attributes of MP carambola decreased significantly. Flesh firmness of the MP carambola was affected by the interaction between AA × SD. Sensory attributes of MP carambola were affected significantly by AA × RS. All the sensory attributes of MP carambola positively correlated to each other but negatively correlated with browning degree. PPO activity positively correlated with browning degree. Coconut (Cocos nucifera L.) sugar is a more nutritious alternative sugar source as compared to sugar palm (Borassus flabellifer) and sugarcane (Saccharum officinarum L.). This work was aimed to investigate the browning index (BI), vitamin profile and antioxidant properties of coconut sap sugar syrups, which were produced by different processing methods: rotary evaporation (RE), microwave evaporation (ME) and open-heat evaporation (OHE). The results obtained showed that coconut sugar syrup produced by RE-60 contained high antioxidant activities [DPPH (36.71%) and ABTS (34.84%), TPC (299.87 mg per 100 g sample) and FRAP (3.74 mm )]. These values were slightly lower than those of ME and OHE. Coconut sugar syrup (RE-60) also contained higher amounts of vitamin C (1587.27 mg L−1), vitamin B1 (97.44 mg L−1) and vitamin B3 (19.84 mg L−1) compared with those of ME and OHE coconut sugar syrups. RE-60 was the best method to produce coconut sugar syrup in a shorter time with lower browning index and higher vitamin contents.  相似文献

This study was conducted to investigate the effects of three variables namely cellulase (Celluclast, Novozymes, Denmark) concentration (0–1%, v/w (x 1)), maltodextrin (MD) concentration (15–30%, w/w (x 2)), and spray-dryer air inlet temperature (150–190 °C (x 3)) on pumpkin powder characteristics using enzymatically macerated pumpkin with Pectinex® Ultra SP-L (2.5%, v/w). The powder characteristics considered as response variables in response surface methodology were process yield, moisture content, stickiness, water activity, and hygroscopicity. Results indicated that the response surface models were significantly (p?≤?0.05) fitted for all response variables in the studied independent variables range. The concentration of Celluclast and MD should be considered as critical factors which may increase process yield of pumpkin powder. The effect of Celluclast concentration on pumpkin powder characteristics especially for process yield and stickiness was noticeable. The main effect of MD and quadratic term of Celluclast had the most significant effect on stickiness. Negative interaction value of MD with Celluclast indicated that stickiness decreased when mixture of MD and Celluclast was used and also Celluclast reduced the impact of air inlet temperature on stickiness. The overall optimum region resulted in a desirable powder characteristics was predicted to be obtained by combined level of air inlet temperature 180 °C, Celluclast 0.7% (v/w), and MD 23% (w/w). The theoretical and experimental validation ensuring the adequacy of the response surface models described the changes in physical properties of powder as a function of Celluclast, MD, and air inlet temperature.  相似文献

Abstract: The aim of this study was to model the radial growth rate and to assess aflatoxin production by Aspergillus flavus as a function of water activity (aw 0.82 to 0.92) and temperature (12 to 42 °C) on polished and brown rice. The growth of the fungi, expressed as colony diameter (mm) was measured daily, and the aflatoxins were analyzed using HPLC with a fluorescence detector. The growth rates were estimated using the primary model of Baranyi, which describes the change in colony radius as a function of time. Total of 2 secondary models were used to describe the combined effects of aw and temperature on the growth rates. The models were validated using independent experimental data. Linear Arrhenius–Davey model proved to be the best predictor of A. flavus growth rates on polished and brown rice followed by polynomial model. The estimated optimal growth temperature was around 30 °C. A. flavus growth and aflatoxins were not detected at 0.82 aw on polished rice while growth and aflatoxins were detected at this aw between 25 and 35 °C on brown rice. The highest amounts of toxins were formed at the highest aw values (0.90 to 0.92) at a temperature of 20 °C after 21 d of incubation on both types of rice. Nevertheless, the consistencies of toxin production within a wider range of aw values occurred between 25 to 30 °C. Brown rice seems to support A. flavus growth and aflatoxin production more than the polished rice. Practical Application: The developed models can be used to estimate to what extent the change in grain ecosystem conditions affect the storage stability and safety of grains without the need for running long‐standing storage study. By monitoring the intergranular relative humidity and temperature at different locations in the storage facility and inputting these data into the models, it is directly possible to assess either the conditions are conductive for the growth of A. flavus or aflatoxin production.  相似文献

Gum karaya is a polysaccharide gum from Sterculia urens tree. It is used as an emulsifier and thickening agent in cosmetics and pharmaceuticals. However, it has very strong swelling properties, high viscosity, and low solubility, providing the restricted applications in the food industry. The main objective of this study was to investigate the effects of different heat treatment and microwave variables (i.e., time: 8, 10, and 12 min; power: 700 and 1000 W) on the functional properties of gum karaya in the aqueous system and oil-in-water emulsion. In this regard, the rheological properties, emulsifying activity, average droplet size, and surface morphology of the native- and microwave-treated gums were analyzed and compared. Dynamic oscillatory test indicated that the microwave-treated gum karaya had more gel-like behavior than viscous-like behavior (G′ > G″) at a relatively high concentration (20% or 20 g/100 g). When gum karaya was treated by microwave for 8–12 min, both elastic (G′) and viscous (G″) moduli were declined. The native- and microwave-treated gum karaya exhibited a shear-thinning (pseudoplastic) behavior in the aqueous system and oil-in-water emulsion. The results showed that the microwave-treated gum karaya had smaller particles than the native gum in the aqueous system. On the other hand, the emulsion containing the microwave-treated gum karaya had finer emulsion droplets than the control containing the native gum karaya. This confirmed that the application of microwave treatment led to significantly (p < 0.05) improve the emulsifying activity of gum karaya.  相似文献
