Comparison of processing characteristics of meat from young male, spent male and spent female buffaloes was made to find the suitability of the meat for developing ready to eat meat products. Intensively reared young male buffalo meat showed higher moisture, collagen solubility, sarcomere length, myofibrillar fragmentation index and water holding capacity than meat from the other animals. A higher pH, total meat pigments, salt soluble protein, emulsifying capacity and lower collagen solubility were observed in spent male buffalo meat. Spent female buffalo meat had higher fat, total collagen, muscle fibre diameter and shear force value. Sensory evaluation of pressure cooked meat chunks indicated a marked toughness in spent male and female buffalo meat samples. These results suggest that young male buffalo meat is more suitable for processing in chunks and spent male and female buffalo meat is more suitable for processing in smaller particles.  相似文献

The effective use of an enzyme as a biological catalyst for process scale conversion is greatly enhanced by immobilizing the enzyme within the matrix of a membrane whose walls are permeable to the substrate and product. The enzyme is thus stabilized for reuse, but the apparent activity is reduced compared to that obtained with the free enzyme because of transport resistances in the bulk fluid near the membrane and within the membrane itself. To account for this reduction, solutions to the differential equations describing the mass transport-kinetic models can be obtained for certain important cases. The reaction is considered to be first-order and isothermal, and to occur in one of two modes of operation: fixed-bed or batch (limited volume). Irreversible and reversible reactions and plane sheet and spherical geometries of the membrane are considered. An example of the application of these solutions to actual data obtained with a laboratory scale immobilized enzyme reactor is presented.  相似文献

Microwave Studies on Strontium Ferrite Based Absorbers   总被引:1,自引:0,他引:1  
Single layer microwave absorbers based on strontium ferrite-epoxy composites have been fabricated and their reflection loss characteristics studied in the X-band (8–12.4 GHz) of microwave frequencies. Permittivity (rjr) and permeability (rjr) of Co and Ti added strontium ferrite SrCo x Ti x Fe12 – 2x O19 (x = 0.1 to 0.9 in steps of 0.2), have been measured. Thickness of the absorber is an important criterion influencing the absorption characteristics. Composites of 3 mm thickness are found to absorb over a reasonable range of X-band frequencies. A minimum reflection loss of –36.5 dB is observed for the composite with x = 0.3.  相似文献

More than 5 years ago, wrought processing was first used to produce fully lamellar (FL) microstructures in TiAl alloys having grain sizes less than ≈400 μm. These alloys exhibit an improvement in overall balance of properties, especially at high temperatures. More recently, such microstructural forms led to exceptional yield strengths (500 to 1000 MPa at low temperatures) while maintaining attractive high-temperature properties. The improvements appeared to be related to an unusually high apparent sensitivity of strength to grain size. Studies reported an apparent value for the slope of the Hall-Petch (HP) plot approaching 5 MPa√m for FL gamma alloys, while that for single-phase or duplex microstructures is near unity. The present investigations examine the slope of the HP plot for FL microstructures, paying particular attention to the lamellar microstructural variables. Results show that the α 2 lamellar thickness and spacing and the γ lamellar thickness can vary over more than two orders of magnitude with typical process methods. These spacings influence the value of k y in the HP (grain size) relationship. Since they often change concomitantly with grain size in processing, they can give rise to a large scatter in the HP plot. The investigations also examine the flow behavior, glide barriers, and slip multiplicity for polysynthetically twinned (PST) crystals (the single-grain analogue of FL material), and then map this behavior into an explanation of the yield behavior of high-strength FL gamma alloys. Recycling of ascorbic acid from its oxidized forms is required to maintain intracellular stores of the vitamin in most cells. Since the ubiquitous selenoenzyme thioredoxin reductase can recycle dehydroascorbic acid to ascorbate, we investigated the possibility that the enzyme can also reduce the one-electron-oxidized ascorbyl free radical to ascorbate. Purified rat liver thioredoxin reductase catalyzed the disappearance of NADPH in the presence of low micromolar concentrations of the ascorbyl free radical that were generated from ascorbate by ascorbate oxidase, and this effect was markedly stimulated by selenocystine. Dehydroascorbic acid is generated by dismutation of the ascorbyl free radical, and thioredoxin reductase can reduce dehydroascorbic acid to ascorbate. However, control studies showed that the amounts of dehydroascorbic acid generated under the assay conditions used were too low to account for the observed loss of NADPH. Electron paramagnetic resonance spectroscopy directly confirmed that the reductase decreased steady-state ascorbyl free radical concentrations, as expected if thioredoxin reductase reduces the ascorbyl free radical. Dialyzed cytosol from rat liver homogenates also catalyzed NADPH-dependent reduction of the ascorbyl free radical. Specificity for thioredoxin reductase was indicated by loss of activity in dialyzed cytosol prepared from livers of selenium-deficient rats, by inhibition with aurothioglucose at concentrations selective for thioredoxin reductase, and by stimulation with selenocystine. Microsomal fractions prepared from rat liver showed substantial NADH-dependent ascorbyl free radical reduction that was not sensitive to selenium depletion. These results suggest that thioredoxin reductase can function as a cytosolic ascorbyl free radical reductase that may complement cellular ascorbate recycling by membrane-bound NADH-dependent reductases.  相似文献
