Kinetic models are important tools for process design and optimization to balance desired and undesired reactions taking place in complex food systems during food processing and preservation. This review covers the state of the art on kinetic models available to describe heat-induced conversion of carotenoids, in particular lycopene and β-carotene. First, relevant properties of these carotenoids are discussed. Second, some general aspects of kinetic modeling are introduced, including both empirical single-response modeling and mechanism-based multi-response modeling. The merits of multi-response modeling to simultaneously describe carotene degradation and isomerization are demonstrated. The future challenge in this research field lies in the extension of the current multi-response models to better approach the real reaction pathway and in the integration of kinetic models with mass transfer models in case of reaction in multi-phase food systems.  相似文献

This article examines the popular claim of Content Management Systems (CMSs) that providing a rich toolset and leaving the use under learner control is beneficial to learning. By means of a literature review, the current contribution examines whether all students are capable of using CMS tools so that their learning is enhanced. In contrast to what is assumed, the study conceptualizes tool use as a complex self-regulation strategy that cannot be taken for granted. Specifically, the article reviews empirical studies in relation to three topics: (a) personal agency in tool use, (b) performance effects of tool use and (c) influencing tool use variables. Findings reveal that not every student profited from the CMS learning opportunities; in multiple studies students differed in their tool use, and these differences had significant performance effects. Hence, these findings suggest that the pedagogical claim CMSs make is problematic. Besides this accumulated corpus of knowledge, the review revealed serious limitations in the retrieved studies which could hamper our findings. As a consequence, the review establishes a need for further research into students’ CMS tool use from an instructional design perspective. In addition to the theoretical framework, several directions for future research are given.  相似文献

The popularity of content management systems (CMSs) in today’s higher education is driven by the assumption that providing a rich toolset and leaving the use of this toolset under learner control will stimulate self-regulated and deeper learning. Current evidence on students’ tool-use within CMS supported courses however tackles this assumption and indicates that CMSs may empower students’ learning only under particular learner-related conditions. The current study addresses this concern and investigates how students’ tool-use within a CMS supported course can be explained in terms of (a) students’ conceptions on the tool functionalities, (b) self-efficacy beliefs for self-regulated learning and (c) goal orientation. Data were collected within a first year undergraduate course ‘Learning and Instruction’. Students’ (n = 182) tool-use within the course was logged throughout the course episode and the influencing variables were measured through questionnaires. K-means cluster analyses revealed four clusters that reflected differences in students’ tool-choice and tool-use throughout the course. Multinominal regression analyses revealed that these tool-use differences could be explained in terms of students’ goal orientation. The study provides thus perspectives in order to capture students’ academic motivation through unobtrusive, behavioral, measures. Furthermore, questions are raised regarding the parallel between students’ tool-use pattern and study strategy use.  相似文献

This paper discusses the bias of the non-parametric Moderator Temperature Coefficient (MTC) estimate due to the presence of feedback. Up to now the non-parametric estimation of the Frequency Response Function (FRF) is the most commonly used method to estimate the MTC by noise analysis. This estimation method is proportional to the Cross Power Spectral Density between the total neutron flux variation and total temperature variation divided by the auto power spectral density of the total temperature variation. The estimation method is very popular since feedback is considered to be negligible in the frequency band of interest. Unfortunately this is not the case in practice. Measurements at a Nuclear Power Plant in Belgium will be used to confirm that this feedback cannot be neglected. In case of feedback the chosen estimator always results in a biased estimate when there are external neutron flux variations present. It will be seen that the ratio between the external neutron flux and external temperature variation in combination with the amplitude of the feedback determines the bias. The theoretical analysis of the bias is based on a simplified scheme of the MTC measurement setup. A simulation in MATLAB is used to confirm the theoretical results. In order to avoid a biased estimate due to the feedback we will advise to measure the external temperature variation and to use another non-parametric estimator.  相似文献

A dietary exposure assessment of food emulsifiers E481 (sodium stearoyl-2-lactylate) and E482 (calcium stearoyl-2-lactylate) in the Belgian population was performed. Nationally representative food consumption data from the Belgian National Food Consumption Surveys 2004 (BNFCS2004) and 2014 (BNFCS2014) were used for calculations. A conservative approach (combining individual food consumption data with the maximum permitted level (MPL) of foods (tier 2), was compared with more refined estimates (combining individual food consumption data with actual concentrations measured in food products available on the Belgian market (tier 3)). Estimated daily intakes were compared to the acceptable daily intake (ADI) of the stearoyl-2-lactylates. The results of tier 2 demonstrated that 92% of the children (3–9 years), 53% of the adolescents (10–17 years), 15% of the adults (18–64 years) and 26% of the elderly (64–98 years) had a potential intake higher than the ADI. When replacing the MPL with maximum analysed concentration levels in foods, daily intake estimates decreased dramatically. The estimated daily intake of the food emulsifiers was below the ADI for all age groups, except for a small percentage of children (1.9%) for which the intake exceeded the ADI. The main contributors to the exposure of E481 and E482 were bread, rolls and fine bakery wares.  相似文献

Using functional MRI, we investigate the neural correlates of intrinsic versus extrinsic motivation to cooperate by comparing people who differ in the personality trait Social Value Orientation. Participants (n = 28) played several one-shot prisoner's dilemma games (offering weak cooperative incentives) and coordination games (offering strong cooperative incentives) with anonymous partners while they were under the scanner. Behavioral results indicate that proself individuals adjust their behavior toward more cooperation when extrinsic incentives were present, while prosocials' decisions are not affected by game context. The neurological data is consistent with a priori developed hypotheses regarding different behavioral strategies, and suggest that extrinsically motivated proself strategies are driven by calculation and a situation-by-situation approach. Increased activation was found in dorsolateral prefrontal cortex, posterior superior temporal sulcus (STS), and precuneus. Intrinsically motivated prosocials' strategies reflect norm compliance, routine moral judgment, and social awareness. The detection of intrathecal antibody synthesis was compared by the calculation of antibody indices (AI) derived from ELISA techniques with the detection of virus-specific oligoclonal IgGs by an antigen-mediated capillary blot technique. Twenty-seven paired serum and cerebrospinal fluid (CSF) samples were examined from 15 immunocompetent patients with herpes simplex virus encephalitis (HSE) diagnosed by PCR on early CSF samples. These techniques were also applied to paired samples from 20 multiple sclerosis (MS) patients, 10 patients with other inflammatory neurological diseases and 10 patients with non inflammatory neurological disorders. There was a good correlation between the results obtained by AI and those obtained by immunoblotting, especially in HSE (2 discordant results out of 27). Discrepancies were more frequent (25%) in MS patients where a "polyspecific" reaction characterized by low affinity antibodies is known to occur. Some of the discrepancies could, in part, be due to serological cross-reaction with varicella zoster virus.  相似文献

The Energy Performance Certificate (EPC) aims at promoting energy efficiency in the residential sector by allowing prospective buyers and renters to compare dwellings in terms of current and potential energy performance. Yet, the impact of the EPC on the purchase and renovation decisions is limited. The research hypothesis is that the framing of the information is an important determinant alongside the calculation method and the training of the certifiers. By framing of the information is meant the content, the wording and the layout. The present paper analyses how the technical information is translated for the dwellers and focuses on a possible heuristic interpretation of the information. Firstly, a theoretical framework of deliberative and heuristic thinking is presented, with its implication to policymaking. Secondly, the findings of a qualitative inquiry of existing certificates, undertaken in two phases (a comparative analysis and a focus group), are presented. The certificates of nine European countries/regions revealed a wide range of information framings and potential nudges that have been analysed through the ‘lenses’ of behavioural insights. Even if nudging is not a purpose, heuristic thinking might influence the understanding of the information since no message is neutral. Contrary to common misinterpretation that nudging exploits exclusively individual’s heuristic thinking, certain types of nudges address the rationality of people by avoiding an existing bias. These findings were analysed in depth in a focus group with experts. Recommendations are provided in order to render the EPC an effective communication tool with the dwellers.  相似文献

Extensive in vitro and, to a more limited extent, animal research have demonstrated the health potential of a wide set of egg protein hydrolysates; however, well-designed human intervention studies are scarce. Health claim assessment, however, sets high standards for characterisation of the bioactive peptides, investigation of the mode-of-action and convincing human intervention studies. In this review, we discuss the state-of-the-art and knowledge gaps related to egg-derived peptide bioavailability and bioactivity. In addition, we will formulate recommendations for appropriate design of future human intervention trials with egg-derived peptides.  相似文献

Carotenoids represent an example of micronutrients for which processing-induced food structure changes (e.g., matrix disruption) strongly influence their bioavailability. The available scientific information on this topic resulting from both in vivo and in vitro studies shows however the complexity of this problem. Although in vitro studies have been shown useful to better understand the relation between processing and carotenoid bioavailability, there is still conflicting information. To expand our current knowledge on this topic in order to allow rational design of food processing solutions resulting in products with maximal carotenoid accessibility and (bio)availability, it is suggested (i) to further evaluate and standardize in vitro models to be used as high throughput screening tools to determine the effect of extrinsic (process-related) and intrinsic (product-related) factors and (ii) to integrate food structure information as a useful approach for understanding and quantifying the bioavailability of carotenoids in foods. However, it will be necessary to validate the information obtained from these in vitro methods thoroughly against human studies (in vivo studies).  相似文献
