Summary The effect of germination on soluble carbohydrates, total and digestible starch, and components of dietary fiber (neutral detergent fiber, cellulose and hemicellulose) in two varieties of lentils (Lens culinaris medicus var. vulgaris and variabilis) were investigated. In germinated lentils the amount of total soluble sugars decreased (from 4.3% to 2.0% and from 5.3% to 2.2%, respectively); glucose, not present in raw seeds, was relatively high (0.6% and 0.7%), fructose increased slightly, and sucrose decreased slightly. The oligosaccharides of the raffinose family disappeared from germinated seeds. Total starch decreased considerably in germinated lentils (from 60.3% to 41.4% and from 57.4% to 36.4%), but the digestibility of the starch was greatly improved. In germinated lentils, the content of neutral detergent fiber and hemicellulose were lower but that of cellulose and lignin were higher than in raw lentils. Thus, the nutritive value of both varieties of lentils may increase with germination processes.
Veränderungen im Kohlenhydratgehalt in keimenden Linsen
Zusammenfassung In der vorliegenden Arbeit wurde der Einfluß der Keimung auf die Gehalte an löslichen Kohlenhydraten, Gesamt- und verdaulicher Stärke und Komponenten der Rohfaser (neutral detergent fiber, Cellulose und Hemicellulose), in zwei Linsensorten (Lens culinaris medicus var. vulgaris und variabilis) untersucht. Der Gesamtzuckergehalt nimmt durch die Keimung bei beiden Sorten ab (von 4,3% bis 2,0% und von 5,3% bis 2,2%). Glucose, die sich in rohen Samen nicht findet, lag bei 0,6% und 0,7% in den gekeimten Linsen. Fructose und Sucrose änderten sich nur wenig. Die Raffinose-Oligosaccharide sind bei den gekeimten Linsen nicht vorhanden. Die Gesamt-Stärke nimmt deutlich während der Keimung ab (von 60,27% bis 41,39% und von 57,41% bis 36,39%), aber die Verdaulichkeit der Stärke wurde signifikant verbessert. Die Gehalte an neutral detergent fiber und Hemicellulose bei gekeimten Linsen waren niedriger als bei rohen Linsen, aber die Cellulose- und Ligningehalte waren nach der Keimung größer. Der Proteinnährwert bei beiden Linsensorten kann durch die Keimung verbessert werden.

Transaction costs theory (TCT) has long been an important conceptual lens for examining International Business (IB) phenomena and perhaps especially relevant for the study of multinational corporations, entry mode choices and location selection. In this paper we examine the extent to which TCT been used and has impacted IB research. Methodologically, we conduct a bibliometric study of the articles published on nine top journals for publishing IB-related research. We use Jean-François Hennart’s research as the key marker for TCT in IB research given that Hennart’s work has been a hallmark in the discipline. On a sample of 377 articles published between 1982 and 2010, and using the works rather than the authors as the unit of analysis, we analyze citations, co-citations and a spatial visualization of the intellectual research themes delved into. Our analyses provide insights on the influence of Hennart but more broadly of TCT on IB research over the past three decades. We conclude that the TCT has a pervasive influence on a large array of IB research and that Hennart’s work is boundary-spanning, connecting several research themes.  相似文献

Consumption of foods rich in dietary antioxidants and anti-inflammatory compounds is becoming a key strategy to lower oxidative stress and inflammation. The objective of this work was to study the effect of fermentation and starter culture on ascorbigen (ABG) and vitamin C content, as well as antioxidant and anti-inflammatory properties of white cabbage (Brassica oleracea var. capitata cv. Megaton). Lactobacillus plantarum CECT 748 (LP), Leuconostoc mesenteroides CECT 219 (LM) or a mixed culture of both strains at 1:1 ratio (LPM) were used as starter cultures in sauerkraut manufacture. Microbiological and sensorial quality of sauerkraut was also examined. White cabbage fermentation increased (P < 0.05) ABG content (up to 12-fold), oxygen radical absorbance capacity (ORAC) values (up to 2-fold) and NO production inhibitory potency (up to 2.6-fold). Vitamin C content slightly decreased (P < 0.05) up to 1.4-fold during fermentation. LM sauerkraut showed the highest (P < 0.05) ABG concentration (204.8 μmol/100 g d.w.), ORAC values (164.0 μmol Trolox/g d.w.) and NO inhibitory potency (IC50 = 60.8 μg extract/mL). The microbiological quality of LM, LP and LPM sauerkrauts was satisfactory. Experimental sauerkrauts showed higher overall acceptability (P < 0.05) compared to commercial products. Consequently, selection of starter culture is of great importance in the manufacture of sauerkraut with improved content of bioactive compounds and health-promoting potential.  相似文献

The authors examined the structure and invariance of executive functions (EF) across (a) a continuum of cognitive status in 3 groups of older adults (cognitively elite [CE], cognitively normal [CN], and cognitively impaired [CI]) and (b) a 3-year longitudinal interval. Using latent variable analyses (LISREL 8.80), the authors tested 3-factor models (“Inhibition”: Hayling [Burgess & Shallice, 1997], Stroop [Regard, 1981]; “Shifting”: Brixton [Burgess & Shallice, 1997], Color Trails [D’Elia et al., 1996]; and “Updating”: Reading and Computational Span [Salthouse & Babcock, 1991]) and 1-factor models within each group. Participants (initial N = 570; 53–90 years) were from the Victoria Longitudinal Study (Sample 3, Waves 1 and 2). Cross-sectionally, the authors observed a 3-factor EF structure especially for the CE group and 1-factor solutions for all 3 groups. Longitudinally, temporal invariance was supported for the 3-factor model (CE and CN groups) and the 1-factor model (CI and CN groups). Subgroups with higher cognitive status and greater 3-year stability performed better on EF factors than corresponding groups with lower cognitive status and less stability. Studies of EF structure, performance, dedifferentiation, and dysfunction will benefit from considering initial cognitive status and longitudinal stability. Fermentation of grain legumes is an efficient method to reduce the concentration of α‐galactosidic compounds that are known to be flatulence producers. Soluble dietary fibre has also been implicated in flatulence production; however, little information exists about the effectiveness of fermentation in diminishing the effects of these compounds. The objective of this work was to study the effect of natural fermentation (NF) and controlled fermentation (CF) on the content of α‐galactosides and dietary fibre in dry beans (Phaseolus vulgaris) for 24, 48, 72 and 96 h. After 48 h, the pH during NF dropped from 6.15 to 4.00 and the nominal acidity increased six times; for CF, however, although the decrease in pH was similar to that for NF, the nominal acidity increased only three times after 48 h. Insoluble fibre content did not change the pH significantly after 96 h for NF and CF. Soluble fibre suffered an apparent removal after 48 h of NF and underwent a sharp reduction of 66% after 96 h of CF. The concentration of stachyose (the main α‐galactoside in raw beans) diminished notably after 48 h and 96 h NF (72% and 95% respectively), whereas with CF only 11% was removed after 96 h. The influence of germination of kidney beans for 4, 6 and 8 days in different elicitors (ascorbic acid, folic acid, glutamic acid, glutamic acid/chitosan and lactic acid/chitosan) on the production of health-promoting ingredients was studied. Sprouts were characterized according to their protein profile, soluble phenolic compounds (SPC) and γ-aminobutyric acid (GABA) content. Additionally, the antioxidant and angiotensin-converting enzyme (ACE) inhibition activities of aqueous extracts from kidney bean elicited sprouts were determined. Elicitation by glutamic acid for 8 days led to the highest SPC and GABA accumulation in kidney bean sprouts and their extracts were selected based on their highest phytochemical content. These extracts also showed remarkable antioxidant and ACE-inhibitory activities. The IC50 for ACE inhibition of glutamic acid-extracts increases 89-fold after the in-vitro gastrointestinal digestion. These results will contribute not only to improving the health-promoting potential of kidney bean sprouts but also to obtaining ingredients which might reduce oxidative stress and hypertension.  相似文献

The authors examined memory compensation techniques used by older adults from 2 memory status groups, not impaired control (NIC) and mild memory deficit (MMD), both at baseline and across a 6-year (3-wave) interval. The groups were derived from a parent sample of 55- to 85-year-old adults from the Victoria Longitudinal Study (NIC baseline, n = 276; memory > parent sample mean; MMD baseline, n = 79; memory > 1 standard deviation below parent sample mean). Multilevel modeling was used to test 3 research questions concerning differences in initial use of, and 6-year changes and variability in, memory compensation. Initial group differences were observed for both a memory compensation technique and a general compensation indicator. Significant differences in 6-year change patterns were observed for 2 memory compensation techniques (recruitment of human memory assistance, investment of extra effort in memory tasks). Interactions of group status and wave showed that older adults with MMD declined in their use of memory compensation strategies, whereas initially NIC older adults increased their use of compensatory techniques over the 6 years.
