Comparison of processing characteristics of meat from young male, spent male and spent female buffaloes was made to find the suitability of the meat for developing ready to eat meat products. Intensively reared young male buffalo meat showed higher moisture, collagen solubility, sarcomere length, myofibrillar fragmentation index and water holding capacity than meat from the other animals. A higher pH, total meat pigments, salt soluble protein, emulsifying capacity and lower collagen solubility were observed in spent male buffalo meat. Spent female buffalo meat had higher fat, total collagen, muscle fibre diameter and shear force value. Sensory evaluation of pressure cooked meat chunks indicated a marked toughness in spent male and female buffalo meat samples. These results suggest that young male buffalo meat is more suitable for processing in chunks and spent male and female buffalo meat is more suitable for processing in smaller particles.  相似文献

The radical scavenging activity, reducing power and phenolic composition of pomegranate rind powder extract (RP) were determined and antioxidant properties of RP was evaluated in cooked chicken patties compared with vitamin C (VC) during refrigerated storage. Freshly minced chicken meat were assigned to one of the following six treatments: control (meat without any antioxidant); RP 5, RP 10, RP 15 and RP 20 (5, 10, 15 and 20 mg equivalent RP phenolics 100 g?1 meat, respectively) and VC 50 (50 mg VC 100 g?1 meat). The RP exhibited significantly (P < 0.05) higher reducing power and 1,1‐diphenyl‐2‐picrylhydrazyl radical scavenging activity. Incorporation of RP into chicken patties significantly (P < 0.05) reduced the HunterLab L* values compared with control and VC patties. Total phenolic content (as tannic acid equivalent) significantly (P < 0.05) increased from 308 in control to 441 μg g?1 in RP 20 patties. Addition of RP to chicken patties did not affect any of the sensory attributes. The values of thiobarbituric acid reactive substances were significantly (P < 0.05) reduced from 1.530 in control patties to 0.135 mg malonaldehyde kg?1 samples in RP patties. Pomegranate rind powder extract treatment (RP 10, RP 15 and RP 20) substantially inhibited (P < 0.05) lipid oxidation in cooked chicken patties to a much greater extent than VC treatment. Therefore, pomegranate rind powder can be utilized as an excellent natural antioxidant source.  相似文献

Polished finishing granites are greatly accepted for claddings because of the plates’ shape, design and color variety. The features depend on the geological conditions that occur during the formation process, which include the mineralogy of the stone, the fluids formed during the process, the grain size of the minerals and the way in which the minerals interact with each other. One of the noblest uses of stone plates is in non-adherent covering systems (without mortar), such as ventilated façades and pedestrian paving systems. Currently, the methodology for non-adherent systems uses the allowable stress design criteria. In recent years, the number of papers indicating reliability analysis as an important design tool for natural stones has increased. However, a lack of information concerning the design methodology still happens. Therefore, the structural properties assessed as complementing these studies were: compressive strength, three-point flexural tensile strength, Young’s modulus and Poisson’s ratio. A granite slab design example was also presented. First, the thickness of the plates was determined based on the formulation proposed by Timoshenko [Strength of materials (original language, Portuguese), Volume II. Editora Ao Livro Técnico S. A., Rio de Janeiro, 1977], using the allowable stress design criteria. Next, the reliability analysis was performed by Monte Carlo simulation. Results showed that the Desireé White granitic plate presented a higher reliability index than the Capão Bonito Red granitic plate. This result seems to be paradoxical, owing that the Capão Bonito Red presented a higher value of mean flexural strength than the Desireé White. The minimal safety factors to satisfy the target reliability value of 3.8 as recommended by the standard EN 1990:2002 (Eurocode) were found to be 2.61, 1.98 and 2.72, respectively, for the three stone types.  相似文献

The objective of this study was to evaluate the effects of ammonium hydroxide (AH) and sodium chloride on the quality of ground buffalo meat patties. Ground buffalo meat was treated with distilled water (control), 0.5% v/w AH, 1.0% v/w AH, 2.0% v/w AH and 1.0% w/w sodium chloride was added for all the samples. Treatment with AH increased (P<0.05) the pH and water holding capacity (WHC) of ground buffalo meat patties during storage relative to their controls. Hunterlab a* (redness) and chroma values increased (P<0.05) and hue decreased (P<0.05) in all AH treated samples in comparison to controls during storage. Ammonium hydroxide significantly (P<0.05) inhibited metmyoglobin formation compared to control after 3rd day of storage. There was a significant (P<0.05) reduction in thiobarbituric acid reactive substances (TBARS) values in all AH treated samples compared to control throughout storage. These results indicate the potential antioxidant and myoglobin redox stabilizing effect of AH in ground buffalo meat patties.  相似文献

In this study, we developed redox-sensitive vesicles using synthesised lipoyl cholesterol derivatives, a non-ionic surfactant and an optimum level of free cholesterol. Interestingly, concentration-dependent self-assembly was observed by scanning electron microscopy, wherein vesicles manifested as hollow spherical (at 0.15 mm ) and triangular (0.50 mm ). The redoxresponsive characteristics of the vesicles was probed in the presence of dithiothreitol; they underwent a clear increase in size as observed by dynamic light scattering measurements. These vesicles could easily encapsulate an anticancer drug, doxorubicin, and were observed to be stable in the presence of serum. They showed substantial release of the drug in response to biologically relevant stimulus, that is, glutathione. A toxicity assessment on HeLa and HepG2 cancer cells demonstrated activities of the drug-loaded vesicles comparable to that of free drug, whereas significantly enhanced toxicity and apoptotic induction were observed against drug-resistant HeLa cells, which was determined by studying the cellular internalisation of doxorubicin.  相似文献

Dissimilar lap joint of Al6063 aluminium and AZ91 magnesium alloys was successfully produced by friction stir welding. Three different plunge depths (3.2 mm, 3.25 mm, and 3.3 mm) were adopted during welding. Similar Al6063–Al6063 lap joints were also produced along with the dissimilar Al6063–AZ91 joints for the purpose of comparing the joint formation. With the increased plunge depth, the width of the similar Al6063 - Al6063 lap joint was increased. On the contrary, joint width was decreased for the dissimilar joint with increased plunge depths. The dissimilar joint was formed with a strong metallurgical bonding between the Al6063 and AZ91 alloys, which is attributed to the mechanical mixing of these alloys in the nugget zone. Additionally, the formation of intermetallics was also observed from the x-ray diffraction analysis. The variations within the measured hardness values were higher at the joint interface due to the mixing of aluminium and magnesium alloys in the nugget zone. From the tensile shear tests, increased strength and decreased elongation were measured with the increased plunge depth. The results demonstrate the importance of the plunge depth on the lap joint formation between dissimilar Al6063–AZ91 alloys during friction stir welding.  相似文献

This work aimed towards the study on variations in the percentage of β-phase in Poly vinylidene fluoride (PVDF) thin films deposited by spin coating technique. PVDF is a semi-crystalline polymer which exhibits α, β, γ and δ polymorphs. Among these polymorphs, generally it crystallizes in a non-polar α-phase, which is of little importance as far as its applications are concerned. However, the β-phase, which exhibits spontaneous polarity created tremendous interest and showed a path towards the devices based on its pyro- and piezoelectric properties. Fourier Transform Infrared (FTIR) spectroscopy and XRD techniques were used to study the percentage of formation of β-phase in spin coated PVDF thin films at different processing conditions viz. spin rotation speed (rpm), solution concentration and annealing temperature. We identified the β-phase percentage in PVDF thin films, which are (i) Deposited with different rotation speeds ranging from 1000 to 9000 rpm, (ii) Annealed at different temperatures viz.; room temperature to 100C, and (iii) Deposited at various solution concentrations. It is identified that percentage of formation of β-phase is high in the films deposited with 15(w/v)% solution concentration which is annealed at 100C. The films deposited at higher rpm is showing low enhancement in the β-phase with annealing temperature.  相似文献

To enhance the binding and quality of enrobed buffalo meat cutlets (EBMC), a meat emulsion at 0%, 15%, 20% and 25% replaced the cooked meat in the formulation. Emulsion containing products had significantly higher moisture contents and texture scores compared to the control. Emulsion at 20% level could be incorporated in enrobed buffalo meat cutlets to enhance their quality. Addition of 1% egg white powder improved the quality of EBMC compared to control, while a 3% level had adverse effect on the sensory attributes despite giving higher product yield and lower shrinkage. Cutlets with refined wheat flour had significantly higher protein and fat contents. It had also higher acceptability followed by corn flour, potato starch and tapioca flour. TBARS of enrobed samples remained lower than controls throughout the storage period. Mesophilic count remained below log3cfu/g for both samples during storage. Uncoated products and enrobed products were acceptable up to 10th and 15th day, respectively. Enrobing of buffalo meat cutlets improved their acceptability and shelf life under refrigeration storage.  相似文献

This research primarily focuses on improving the strength of Al 5083 alloy by both the ECAP and Cryo ECAP methodology. Equal Channel Angular Pressing (ECAP) is one of the best technologies that enable the direct transformation of conventional macro grained metals into sub-micron, ultra-fine and nano grained materials. Fine grain size increases the strength and the fracture toughness of the material and provides the potential for super plastic deformation at moderate temperatures and at high strain rates. The microstructure evolution in Al 5083, subjected to Room Temperature ECAP and Cryo ECAP were analysed. ECAP was carried out using an optimized die with Channel angle ‘?’ = 90°and corner angle ‘Ψ’ = 20° through processing route A and C up to four passes. The results were thoroughly studied using TEM, SEM, and optical microscopic images. Initially the annealed sample had the grain size of 80 µm with the equi-axed grains. In Room Temperature, the hardness values and the mechanical strength were found to be increased from 88 to 410 HV and 306 to 453 MPa after four passes in route A and in route C the strength increased from 390 to 416 MPa after four ECAP passes. Moreover, in Cryo Condition, the sample was processed up to four ECAP passes at route A and route C. The hardness of 153 HV was obtained after four passes in route C and 164 HV obtained after four passes on route A. Additionally, fracture behaviour using SEM, grain size using TEM and crystallite size by X-ray diffraction studies were analyzed. It was observed that the Cryo ECAP showed marginal improvements in mechanical properties relative to the RT ECAP in case of Al 5083.  相似文献
