In this study, we compared the lipid and fatty acids content, between cultured and wild Seriola dumerili, in different edible portions. Results showed that cultured fish contained a higher level of lipids than wild fish. The fatty acids profiles revealed that, among all the split‐fish side, palmitic (C16:0) and oleic (C18:1n‐9) acid were the principal saturated and monounsaturated fatty acids, in cultured and wild S. dumerili. On the other hand, wild S. dumerili contained a higher level of saturated (38.12 ± 0.54% vs. 33.66 ± 0.15% in cultured fish), monounsaturated (33.13 ± 1.07% vs. 26.49 ± 0.17%), n‐3 polyunsaturated fatty acids (PUFA) (23.90 ± 1.02% vs. 19.77 ± 0.51%) particularly docosahexaenoic acid (DHA) (18.83 ± 0.48% vs. 11.77 ± 0.42%). However, the cultured fish showed a higher level of n‐6 PUFA due principally to the higher value of linoleic acid (C18:2n‐6). In fact, changes in fatty acids content between anatomical areas marked differences in the muscle quality of wild and cultured S. dumerili. According to this study, both groups of wild and farmed S. dumerili have nutritional benefits for human health. Cultured fish were characterised by higher hypocholesterolaemic and hypercholesterolaemic fatty acids ratio for all samples studied and a lower n‐3/n‐6 ratio due to the abundance of n‐3 PUFA particularly DHA in wild fish. 相似文献

The wax esters of the roe oil of the amber fish,Seriola aureovittata, have been resolved by high-performance liquid chromatography (HPLC) in the silver-ion mode. Each of the fractions collected
was transmethylated, and the fatty acids and alcohols were identified by gas chromatography/mass spectrometry (GC/MS) as the
picolinyl esters and nicotinates, respectively. Their compositions were determined by GC. The fatty acid composition is complex,
and the main components are C18:1n-9 (35.5 mol%), C22:6n-3 (20.3 mol%), and C16:1n-7 (10.7 mol%), while fatty alcohols are
limited to saturated (C16:0, 60.3 mol%; C18:0, 15.3 mol%; C14:0, 5.1 mol%) and monoenoic alcohols (C18:1n-9, 6.5 mol%; C16:1n-7,
4.5 mol%) with traces (<0.1 mol%) of polyunsaturated fatty alcohols such as C20:3n-3, C20:4n-6, C20:5n-3, and C22:5n-3. Silver-ion
HPLC exhibited excellent resolution in which fractions were resolved on the basis of the number and configuration of double
bonds as well as the distribution pattern between the acid and alcohol moieties of the molecules with a given number of double
bonds. The main wax ester fraction are those of monoenoic acid-saturated alcohol species, hexaenoic acid/saturated alcohol
species, and pentaenoic acid/saturated alcohol species. Appreciable specificity was observed in the esterification of fatty
acids with alcohols, and surprisingly, no saturated acid-monoenoic alcohol species were detected. 相似文献

目的 分析不同生长时期高体鰤各部位5种金属元素(Zn、Cd、Cr、Pb和Cu)含量特征,并进行健康风险评估。方法 分别对高体鰤大鱼(鱼龄2~3年,重7~8 kg)和中鱼(鱼龄1年, 1~2 kg)的背肉、腹肉、皮、鳃、头和内脏进行微波消解处理,采用原子吸收光谱仪测定Zn、Cd、Cr、Pb和Cu含量,运用目标危害系数法、综合污染指数法和单因子污染指数法进行污染评价。结果 从高体鰤大鱼和中鱼单个重金属的平均含量上看,Zn、Cd、Cr、Pb和Cu的平均含量依次为18.5887、0.0453、0.6402、0.1307、5.0417 mg/kg和14.0747、0.0660、0.4760、0.1212、0.9818 mg/kg,符合国家标准规定。但从高体鰤各个部位来看,其内脏、鳃、鱼皮中积累的重金属较多,且两种规格的高体鰤各个检测部位中Zn超标,主要集中在大鱼的皮、内脏和中鱼的皮。高体鰤大鱼Zn、Cr、Pb和Cu的平均含量都高于中鱼,Cd的含量低于中鱼,但无显著差异(P>0.05)。污染评价表明,不同生长时期高体鰤的5种重金属均达到无污染水平,综合污染指数也为无污染,单一金属风险和重金属... 相似文献
