Hydrogenated rapeseed oil/palm oil blend, sunflower oil and high-oleic sunflower oil, and French fries fried in these oils were assessed for contents of sterol oxidation products. Different oxidation products of phytosterols (7α- and 7β-hydroxy-sito-and campesterol, 7-ketosito- and 7-ketocampesterol, 5α,6α-epoxy-sito- and campesterol, 5β,6β-epoxy-sito-and campesterol, dihydroxysitosterol and dihydroxycampesterol) were identified and quantiated by gas chromatography (GC) and GC-mass spectroscopy. Rapeseed oil/palm oil blend contained 41 ppm total sterol oxides before frying operations. After two days of frying, this level was increased to 60 ppm. Sunflower oil and high-oleic sunflower oil had 40 and 46 ppm sterol oxides, respectively, before frying operations. After two days of frying operations, these levels increased to 57 and 56 ppm, respectively. In addition to campesterol and sitosterol oxidation products, small amounts of 7α- and 7β-hydroxystigmasterol were detected in the oil samples. Total sterol oxides in the lipids of French fries fried at 200°C in rapeseed oil/palm oil blend, sunflower oil, and high-oleic sunflower oil were 32, 37, and 54 ppm, respectively. The levels of total oxidized sterols, calculated per g sample, ranged from 2.4 to 4.0 ppm. In addition to the content of phytosterol oxides, full scan mass spectra of several oxidation products of stigmasterol are reported for the first time. 高速逆流色谱法分离β-谷甾醇和菜油甾醇的研究   总被引:13,自引:0,他引:13  
利用高速逆流色谱法 ,并选用V(庚烷 )∶V(乙腈 )∶V(乙酸乙酯 ) =5∶5∶1溶剂体系 ,成功地分离了混合植物甾醇标准品中的 β 谷甾醇和菜油甾醇。经过HPLC检测 ,一次性分离可得到质量分数为 97%的 β 谷甾醇和质量分数为 91%的菜油甾醇产品 ,收率分别可达 5 6 %和 5 0 %。该方法简便、重现性好 ,可作为高纯度 β 谷甾醇和菜油甾醇标准品的制备分离方法  相似文献

A systematic study was conducted using reversed‐phase thin‐layer chromatography wherein unsaponifiable matter of samples namely, pure cow and buffalo milk fats, vegetable oils (groundnut oil, soya bean oil and sunflower oil) and milk fats adulterated with vegetable oils (≥1%) were run along with the reference standards using two new solvent systems to detect adulteration in milk fat. The results of the study revealed that adulteration at even a 1% level could easily be detected using this rapid, reliable and reproducible method based on the presence of β‐sitosterol as a marker and some additional spots ascribable to their occurrence in vegetable oils only.  相似文献

Nearly half of the fish consumed as food worldwide are raised on fish farms rather than caught in the wild, as shown by FAO statistics. The increasing aquaculture of predatory carnivorous fish demands new sources of feed constituents, particularly oils at the moment. Common terrestrial plant oils contain only traces of the long‐chain polyunsaturated fatty acids. In connection with fish feed, especially the lack of n‐3 “marine fatty acids” is obvious. Recommendations on the required amounts of the fatty acids DHA (22:6n‐3) and EPA (20:5n‐3) exist from 1994. When plant oil‐based diets are fed during the growing phase and replaced by a fish oil‐based diet during a period prior to slaughter, most of the beneficial lipid composition of fish in terms of human dietary recommendations is restored. Little attention has been focused on the fish welfare in connection to substitution of dietary oil sources, and studies are still scarce. New fish diets will rely heavily on the use of alternate ingredients such as plant oils also for carnivorous cold‐temperate water fish species. In the future, an addition of synthetic or GMO‐produced “marine” fatty acids is a possible scenario. The aim of this review is to highlight some plant oils used in fish feeds, with special emphasis on compounds other than fatty acids. We also include some results from an ongoing study, where the effect of dietary soy oil on gonad maturation in Atlantic cod (Gadus morhua) is indicated.  相似文献

Predominant triterpenes (free oleanolic acid, β-sitosterol and β-sitosterol-3-O-β- d -glucoside) in skin and cuticular wax of grape berries have been analysed by liquid chromatography–mass spectrometry (LC-APCI-MS). The validity of the developed method was established by determining linearity, recovery, precision, accuracy, limit of detection and quantification. Detection limits were in the range of 0.12–0.25 mg L−1, and linearity values ranged up to 105 mg L−1. The repeatability of the method was good. High variability was found among the measured grape varieties based on triterpene content, quantitites of oleanolic acid of cuticular wax ranged from 31.53 mg kg−1 to 162.01 mg kg−1 of the twelve analysed samples. The highest sitosterol content was measured in the sample 'Othello' (73.12 mg kg−1), while maximum sitosterol glucoside content was also found in 'Othello' variety (13.68 mg kg−1). The results showed that the study on triterpenes could be an informative tool to characterise grape varieties.  相似文献

建立了玉米须β-谷甾醇测定方法及热回流提取的多元线性回归模型,实验分别考察了提取温度、时间、液固比及乙醇浓度对β-谷甾醇含量的影响,并通过多元线性回归设计了热回流提取模型。结果表明,β-谷甾醇测定方法准确可靠,可以用于玉米须中的β-谷甾醇的测定。同时乙醇提取玉米须β-谷甾醇多元线性回归模型显著,不失拟。玉米须β-谷甾醇的最佳工艺参数为提取温度45℃、时间80min、液固比25∶1、乙醇浓度75%,其中β-谷甾醇的提取率可达1.52%。  相似文献

Lupin is a nonstarchy grain legume with high protein, dietary fibre and low fat contents. The industrial shift of lupin seed utilisation from feed to food has recently increased the scientific interest to explore its phytochemical composition and biological activities. Lupin seeds contain significant amounts of polyphenols, carotenoids, phytosterols, tocopherols, alkaloids and peptides with antioxidant, antimicrobial, anticarcinogenic and anti‐inflammatory activities. Among polyphenols, genistein and their derivatives (isoflavones) are of great importance because of their phytoestrogenic potential. This comprehensive review will help out the readers in understanding the phytochemicals present in lupin and their benefits.  相似文献

以谷维素/谷甾醇和单甘酯为凝胶剂,葵花籽油为原料油制备复合凝胶油,探讨复合凝胶油的形成过程以及单甘酯对凝胶化过程的影响,实验发现凝胶油的形成可分为3?个阶段,在凝胶剂到达过冷、过饱和的平衡阶段,受单甘酯影响较小;在凝胶剂分子聚集成核的对数阶段,单甘酯会增加单位体积焓值,降低总吉布斯自由能,促进成核;而在晶体生长、组装的线性阶段,逐渐形成凝胶油的一级、二级、三级结构,其中三级结构与宏观特性最为紧密,三级结构中永久交联和瞬时交联的比例决定了凝胶油的主要性质。通过核磁分析表明物理截留油是凝胶化植物油的主要机理,在此基础性上通过X-射线衍射和小角X-射线散射分析了凝胶剂的组装结构,结果表明谷维素/谷甾醇凝胶油形成的为六边对称结构,单甘酯凝胶油形成的为层状对称结构,同时含有谷维素/谷甾醇和单甘酯的复合凝胶油为立方对称结构。  相似文献

Atherosclerosis is a chronic inflammatory disease, which is associated with increased expression of adhesion molecules and monocyte recruitment into the arterial wall. This study evaluated whether hexane extracts from the edible part (DB‐H1) or bark region (DB‐H2) of Dioscorea. batatas Decne have anti‐atherosclerotic properties in vivo and in vitro experiments. We also identified bioactive components in the hexane extracts. Thirty‐six apolipoprotein E (ApoE?/?) mice and 12 control (C57BL/6J) mice were given a Western‐type diet for 11 or 21 wk. To examine the effects of yam extracts on lesion development, ApoE?/? mice were orally administered DB‐H1 or DB‐H2 for the duration of the study (200 mg/kg b.w./day, 3 times per wk). Both DB‐H1 and DB‐H2 significantly reduced the total atherosclerotic lesion area in the aortic root. In addition, plasma concentrations of total cholesterol, oxidized‐low‐density lipoprotein, and c‐reactive protein were decreased by administration of DB‐H1 and DB‐H2. Consistent with the in vivo observations, DB‐H1 and DB‐H2 inhibited tumor necrosis factor (TNF)‐α–induced vascular cell adhesion molecule‐1 expression and adhesion of THP‐1 monocytes to TNF‐α–activated vascular smooth muscle cells. It was also found that treatment with DB‐H1 or DB‐H2 resulted in the inhibition nitric oxide (NO) and reactive oxygen species production and iNOS expression in macrophages. Thus, DB‐H1 and DB‐H2 seem to influence atherosclerosis by affecting the production of inflammatory mediators in vivo. Our results suggest that yam extracts have the potential to be used in the prevention of atherosclerosis.  相似文献
