This study was performed to investigate blood metabolite, tumor necrosis factor-alpha, and hormone responses to intravenous administration of lipopolysaccharides (2 microg of endotoxin of Escherichia coli 026:B6/kg body weight at times of feeding) in veal calves orally supplemented with arginine (0.25 g/kg of body weight twice daily for 4 d; group GrA) compared with calves not supplemented with arginine (group GrC). Arginine supplementation alone caused a significant rise of plasma arginine, urea, and insulin concentrations, whereas glucagon concentrations tended to increase, but there were no significant group differences. Concentrations of triglycerides, NEFA, glucose, protein, albumin, growth hormone, insulin-like growth factor-I, 3.5.3'-triiodothyronine, and thyroxine were not affected by arginine supplementation. Lipopolysaccharide administration alone caused a rise of tumor necrosis-factor-a, lactate, and cortisol concentrations and concentrations of tumor necrosis-factor-a after 1 h, and of triglycerides and urea after 6 h were higher, whereas of glucose after 3 h were lower in GrA than in GrC. Concentrations of NEFA, glucose, protein, albumin, insulin, growth hormone, insulin-like growth factor-I, 3.5.3'-triiodothyronine, and thyroxine were not affected by lipopolysaccharide administration. In conclusion, arginine supplementation had selective effects on plasma metabolites and hormones, but barely modified lipopolysaccharide effects. Effects of lipopolysaccharides in the postprandial state were different from what is usually seen in the fasted state.  相似文献

A chemometric class modelling strategy (unequal dispersed classes – UNEQ) was applied for the first time as a possible screening method to monitor the abuse of growth promoters in veal calves. Five serum biomarkers, known to reflect the exposure to classes of compounds illegally used as growth promoters, were determined from 50 untreated animals in order to design a model of controls, representing veal calves reared under good, safe and highly standardised breeding conditions. The class modelling was applied to 421 commercially bred veal calves to separate them into ‘compliant’ and ‘non-compliant’ with respect to the modelled controls. Part of the non-compliant animals underwent further histological and chemical examinations to confirm the presence of either alterations in target tissues or traces of illegal substances commonly administered for growth-promoting purposes. Overall, the congruence between the histological or chemical methods and the UNEQ non-compliant outcomes was approximately 58%, likely underestimated due to the blindness nature of this examination. Further research is needed to confirm the validity of the UNEQ model in terms of sensitivity in recognising untreated animals as compliant to the controls, and specificity in revealing deviations from ideal breeding conditions, for example due to the abuse of growth promoters.  相似文献

Reactions involving phospholipids contribute considerably to the flavour and aroma of cooked meat. The effect of heat on the fatty acids and fatty aldehydes of phospholipids from veal was studied using aqueous model systems wherein extracted phospholipid fractions were heated in the presence or absence of ribose or glycine. After 1 h at 132°C, ethanolamine-containing phospholipids rapidly lost most of their component aldehydes but not their fatty acids, whereas choline-containing phospholipids lost their aldehydes much more slowly. In both cases, the presence of ribose or glycine had little effect on the loss of aldehydes. In the meat itself, after heating at 132°C, there was a 90% loss of aldehydes which was similar for both the ethanolamine- and choline-containing phospholipids, but the latter lost fatty acids more slowly than the former.  相似文献

Male calves are purchased from the dairy industry in North America to produce red meat. The price paid for male calves varies widely, and it is unclear which variables influence the price paid for each calf. The objective of this study was to assess how the health traits of calves at the time of arrival and demographic variables affect the breakeven purchase price of a male calf entering the veal industry. A financial model was constructed using the prevalence of health abnormalities, weight at arrival, source of the calf, number of days in the barn, base carcass price, days to mortality, feed costs, season at arrival, interest rate, housing location, carcass dressing percentage, and costs associated with housing, labor, utilities, trucking, and health to calculate the breakeven purchase price and an estimate of profit. Sensitivity analysis was conducted using health variables measured at arrival and demographic variables, including season at arrival and housing location, to identify the factors with the largest impact on the predicted average daily gain, early and late mortality risk, breakeven purchase price, and profit. At the baseline inputs, the average calculated profit was ?$5.36 per calf and it was most sensitive to the location of housing where calves were fed and the body weight of the arriving calf. The mortality risk in the first 21 d after arrival (early) was calculated to be 2.2%, whereas the risk of mortality after 21 d (late) was 3.7%. The risks of early and late mortality were most sensitive to the level of dehydration measured at arrival and the season at arrival for the purchased calves, respectively. The calculated average daily gain was 1.12 kg/d and it was most sensitive to housing location. The breakeven purchase price was calculated to be $242.49 per calf, which was most sensitive to the housing location where the calves were fed. The results of this analysis demonstrate that veal producers need to consider many variables before purchasing calves. In addition to overall market conditions, veal producers should factor health characteristics and the expected performance of the calves they purchase into what they are willing to pay for them.  相似文献

The veal calf industry in Québec depends on young calves' availability at auction. Most of these calves come from dairy farms. The aim of this cross-sectional study was to determine the effect of clinical anomalies and other calf characteristics on their sale price. A total of 3,820 calves from 5 different auctions were included in this observational study. The calves were examined by a veterinarian on arrival at the auction and screened for umbilical anomalies, the presence of nasal or eye discharge, joint abnormality, diarrhea, appearance of neonatal characteristics (compatible with age less than 1 wk), and general health status mainly based on the presence of depression and dehydration. The final multivariable model included 5 different variables (calf weight, sex, breed, abnormal joints, and general health status) and the interaction between sex and general health status. The presence of abnormal joints and unhealthy characteristics was negatively associated with standardized price. Female calves and mixed breed beef calves were positively associated with standardized price. Finally, the calves' weight was associated with standardized price in a quadratic fashion. Ongoing or previous diarrhea had no effects on standardized price. This study will be helpful for both dairy and veal producers for improving the quality of calves sold to the Québec auction market.  相似文献

Within all cattle production systems, veal calves are the most severely affected by abomasal damage, with current prevalence at slaughter ranging from 70 to 93% of all animals affected. Although most damage is found in the pyloric region of the abomasum, fundic lesions are also found. Despite past research into the etiology of abomasal damage and the many risk factors that have been proposed, consensus on the causal factors of abomasal damage in veal calves has not yet been reached. The aim of this review was to integrate and analyze available information on the etiology of, and possible risk factors for, abomasal damage in veal calves. We describe various proposed pathways through which risk factors may contribute to damage formation and conclude that the etiology of abomasal damage is most likely multifactorial, with diet being a main contributor. Pyloric lesions, the most common type of damage in veal calves, are likely the result of large and infrequent milk and solid feed meals, whereas fundic lesions may be caused by stress, although the evidence for this is inconclusive. Providing calves with multiple smaller milk and solid feed meals (or ad libitum provision) may decrease abomasal damage. In future research, ulcers, erosions, and scars as well as fundic and pyloric lesions should be recorded separately, because etiologies of these may differ. Further research is required to understand the exact pathway(s) by which milk replacer causes abomasal damage in veal calves; that is, whether low abomasal pH, overloading, or composition are important. Further research is also required to elucidate whether rapid intake of milk replacer and solid feed, which is influenced by restricted amounts fed, inter-calf competition, and calf breed, increases abomasal damage. Research is also needed into the effect of medication and nutrient deficiencies other than iron. The types of experimental designs that can be used for future research could be enhanced if a means to assess abomasal damage antemortem is developed. We conclude that it is unlikely that abomasal or ruminal hairballs, iron deficiency, water provision, and various infections and diseases are significant contributors to abomasal damage in veal calves.  相似文献

The influence of slaughter season and sex on intramuscular total lipids (ITL) neutral lipid (NL) and phospholipid (PL) compositions, cholesterol and α-tocopherol contents were evaluated in Biceps femoris (Bf), Longissimus dorsi (Ld) and Supraspinatus (Ss) muscles from 92 Barrosã-PDO (Protected Denomination of Origin) calves. ITL content in Bf muscle was affected by slaughter season and sex whereas NL content was only affected by slaughter season. Neither sex nor slaughter season influenced cholesterol and α-tocopherol contents in the muscles under study. Concerning NL composition, sex was an important source of variation on the proportions of total SFA and MUFA in all muscles. Irrespective of the considered muscle, males had higher total SFA but lower total MUFA and MUFA/SFA contents than females. Slaughter season influenced C18:2 cis-9 trans-11 (CLA) content in Bf (P < 0.01) and in Ss muscles (P < 0.05) with calves slaughtered in autumn showing higher values than their counterparts. Total MUFA, n-3 PUFA and n-6/n-3 ratio contents in Ld muscle were also affected by slaughter season. Regarding PL composition, slaughter season × sex interaction affected total SFA, PUFA/SFA and n-6 PUFA contents in Bf and Ss muscles. In addition, this interaction influenced total MUFA (P < 0.05) in Bf muscle and total PUFA (P < 0.01) in Ss muscle. CLA content in PL from Ld was influenced by sex (P < 0.05) and by slaughter season (P < 0.01), with females slaughtered in autumn presenting the highest content. These results clearly indicate that sex and slaughter season are important factors that influence the fatty acid composition of Barrosã-PDO veal.  相似文献

The aim of this experiment was to examine the effects of concentrates in feed, differing in carbohydrate source, on the growth performance and rumen fermentation characteristics of veal calves. For this purpose, 160 Holstein Friesian × Dutch Friesian crossbred male calves were used in a complete randomized block design with a 5 × 2 factorial arrangement. Dietary treatments consisted of 1) milk replacer control, 2) pectin-based concentrate, 3) neutral detergent fiber-based concentrate, 4) starch-based concentrate, and 5) mixed concentrate (equal amounts of concentrates of treatments 2, 3, and 4). Concentrate diets were provided as pellets in addition to a commercial milk replacer. Calves were euthanized either at the end of 8 or 12 wk of age. The overall dry matter intake of the concentrate diets varied between 0.37 and 0.52 kg/d. Among the concentrate diets, the dry matter intake was lower in the starch diet (0.37 kg/d of dry matter) and differed between the NDF and pectin diets. The average daily gain for all the dietary treatments varied between 0.70 and 0.78 kg/d. The mixed- and NDF-fed calves had an increased average daily gain (0.78 and 0.77 kg/d, respectively) compared with the starch- and pectin-fed calves (0.70 and 0.71 kg/d, respectively). Rumen fermentation in the calves fed concentrates was characterized by a low pH (4.9 to 5.2), volatile fatty acid concentrations between 100 and 121 mmol/L, and high concentrations of reducing sugars (33 to 66 g/kg of dry matter). The volatile fatty acid concentrations of calves fed concentrates were higher than those of the control calves. All concentrate treatments showed a low acetate-to-propionate ratio in rumen fluid (between 1.3 and 1.9). Among the concentrates, the NDF diet had the highest (55.5%) and starch the lowest (45.5%) molar proportions of acetate. Calves fed the mixed, pectin, and starch diets had significantly higher molar proportions of butyrate (13.1 to 15.8%) than the NDF- and control-fed groups (9.9 and 9.6%, respectively). Calves fed the control diet had a higher lactate concentration (21 mmol/L) than the concentrate-fed calves (between 5 and 11 mmol/L). With the exception of the NDF diet, polysaccharide-degrading enzyme activities in the rumen contents generally showed an adaptation of the microorganisms to the carbohydrate source in the diet. The mixed diet exhibited the least variation in rumen polysaccharide-degrading enzyme activities among the enzymes systems tested. Results indicated that the carbohydrate source can influence intake, growth rate, and rumen fermentation in young veal calves.  相似文献
