Lake Erie's food web has been dramatically modified by exotic species. Both exotic dreissenid mussels and the round goby Neogobius melanastomus have shifted the food web from a pelagicbased to a benthic-based one, potentially creating a new pathway for contaminant transfer to top predators. Before the invasion of round gobies, few predators of dreissenids occurred in Lake Erie, allowing contaminants to be confined to these benthic organisms. The invasion of the round goby has produced a new pathway through which these contaminants can enter the food web. To characterize heavy-metal transfer through this new food web and to assess risk to humans, water, surficial sediment, dreissenid, round goby, and smallmouth bass Micropterus dolomieui samples were collected at three sites during summers, 2002 and 2003, and analyzed for total lead (Pb), total mercury (Hg), and methyl mercury (MeHg). In addition, we compared smallmouth bass Pb and Hg concentrations to those measured in 1993/1994, before round gobies were prevalent. Pb biodiminished and MeHg biomagnified through the food web to smallmouth bass; patterns were similar among our three sites. Total Pb concentrations in smallmouth bass were higher before the incorporation of round gobies into their diet. We attributed this decline to changes in food web structure, changes in contaminant burdens in prey, or declines in sediment Pb concentrations in Lake Erie. By comparison, Hg concentrations in smallmouth bass changed little, before and after the round goby invasion, possibly due to a shift in diet that increased growth. Despite a decline in sediment Hg concentrations in Lake Erie, smallmouth bass continued to accumulate Hg at historical rates possibly because of their high consumption rates of benthivorous round gobies. As smallmouth bass continue to consume round gobies during their lives, their Hg concentrations may well continue to increase, potentially increasing the risk of Hg contamination to humans.  相似文献

Fish movement may vary across a wide array of aquatic ecosystems and may be related to the overall size of the system inhabited. We investigated movement of smallmouth bass in Lake Michigan because this information is lacking for larger systems. A total of 16 smallmouth bass were surgically implanted with ultrasonic transmitters within the Beaver Archipelago, northern Lake Michigan. During 2007-2008, a maximum of one location per individual was recorded daily during three specific tracking periods - pre-spawn, spawning, and post-spawn - to determine diurnal movement patterns. Movement was evaluated as site fidelity, minimum displacement rate, maximum excursion rate, and distance from shore. Smallmouth bass exhibited greater maximum excursion rates during the spawn period compared to pre-spawn. Movement rates did not differ between tracking periods; however, movement rates were greater during the spawn period in 2007 than 2008. Both sexes moved further offshore to deeper water during post-spawn, but females were located further offshore than males during this period. Annual site fidelity was more evident during post-spawn than during spawning for both sexes. Two smallmouth bass emigrated outside of the Archipelago, suggesting this population may be more “open” in terms of individuals moving throughout northern Lake Michigan than previously thought. These results indicate smallmouth bass may move greater distances in larger aquatic systems and therefore larger management units (in terms of total area) should be established in Lake Michigan to account for these greater excursion distances.  相似文献

为探讨温度对有水保活大口黑鲈代谢与肌肉品质的影响,研究了不同丁香酚浓度对大口黑鲈的麻醉效果。选取最佳浓度麻醉大口黑鲈,分别在5,10,15和20 ℃的条件下保活,测定了不同温度下的存活率、氨氮含量、血液生化指标与肌肉品质的变化。结果显示:大口黑鲈的较佳丁香酚浓度为18 mg/L,在5 ℃保活72 h存活率为0,在10、15和20 ℃下保活96 h后的存活率分别100%,75%和0%;随着保活时间延长,与15 ℃,20 ℃组相比,10 ℃组的总氨氮降低24.12%~51.24%,血糖含量先增加后下降,保活72 h后,10 ℃处理组血清中皮质醇、谷草转氨酶、谷丙转氨酶、碱性磷酸酶和尿素氮分别比20 ℃组低260.44 pg/mL、52.54 mmol/L、8.76 mmol/L、3.26 mmol/L和8.22 mmol/L(p<0.05),而溶菌酶、总抗氧化能力和谷胱甘肽过氧化物酶含量均显著高于其它组(p<0.05);10 ℃肝脏HSP90的表达量显著低于15 ℃和20 ℃;肌肉指标中,15 ℃和20 ℃组糖原、粗蛋白含量和pH显著低于10 ℃组。表明10 ℃保活条件下大口黑鲈抗氧化物酶活性增强,应激降低,肌肉品质影响较小。因此,10 ℃适合大口黑鲈的长途保活运输。  相似文献

目的:探究4℃冷藏过程中鲈鱼肌肉品质的变化。方法:测定4℃冷藏过程中鲈鱼肌肉pH值、菌落总数、总挥发性盐基氮(total volatile base nitrogen,TVB-N)含量、K值和质构等指标,综合评价鲈鱼生理生化品质的变化,采用Masson染色和免疫组化分析评价组织形态学变化,利用酶解荧光肽底物测定特异性酶解胶原蛋白的基质金属蛋白酶(matrix metalloproteinases,MMPs)活力变化。结果:鲈鱼在贮藏期间pH值呈先下降后升高趋势,菌落总数、TVB-N含量和K值随贮藏时间的延长而增加,并在第8天超过临界值。十二烷基硫酸钠-聚丙烯酰胺凝胶电泳分析结果显示,贮藏至6 d鲈鱼肌肉蛋白组成没有明显变化,而在第8天肌球蛋白重链降解明显。Masson染色和I型胶原免疫组化分析结果显示,随贮藏时间的延长,肌内膜逐渐被降解,至第12天,肌膜I型胶原蛋白和肌纤维之间出现明显间隙。MMPs活力随贮藏时间的延长而明显增加,而鱼肉硬度不断下降。结论:鱼类冷藏期间肌肉的软化与胶原蛋白分解密切相关,而MMPs对I型胶原蛋白的降解可能是鱼死后肌肉软化的主要原因。  相似文献

Yiluxian, a traditional Chinese low‐salt fish product, has been produced manually for decades. However, its quality depends on worker experience and varies owing to the lack of specific scientific guidelines for uniform production. This study investigated the changes in physicochemical properties under different salt concentrations and explored the principles underlying the low‐salt pickling process. The NaCl content of gutted fish increased to 3.82% in brining, and it decreased significantly to 1.15% after desalting. The colour of Yiluxian was not significantly different from that of raw fish (P > 0.05). The hardness, springiness, resistance and chewiness decreased by 12%, 9%, 27% and 19%, respectively, while cohesiveness did not change significantly (P > 0.05). Furthermore, Yiluxian is preferred over commonly salted fish for superior sensory profile. Our findings demonstrated the changes in various characteristics during pickling were expected to facilitate the stabilisation and uniformity of the quality and industrial production of this traditional food product.  相似文献

Farmed European sea bass (Dicentrarchus labrax, Linnaeus, 1758) were collected during 2016 from one Sicilian fish farm that uses two different rearing systems – sea cage and concrete tank – for determination of polychlorinated biphenyls (PCB), organochlorine pesticides (OCP) and polycyclic aromatic hydrocarbons (PAH) residues by HRGC-MS/MS. Moreover, commercial feed was analysed. This study aimed to determine whether the different rearing systems affect the concentration of these compounds, and to assess the safety of cultured fish. PCBs represent the pollutants with the highest concentration; in particular, PCB138 and 153 have the highest concentration in almost all samples. Among OCPs, only 4,4′-DDE, 4,4′-DDD and 4,4′-DDT residues have been detected. Concerning PAHs, only fluorene and phenanthrene were detected, in both rearing systems. Although some residues of organic pollutants were found in the analysed samples, they were always below the MRLs, so the results suggest that farmed sea bass are safe for human consumption.  相似文献

Stocking of largemouth bass is an important management tool for fish management. The stocking of hatchery‐produced fingerling or advanced‐fingerling bass to supplement bass year‐classes, however, has exhibited varying success. Utilizing a different approach, a multiyear stocking programme using wild adult largemouth bass was initiated at the Harris Chain of Lakes (3800 ha Lake Griffin; 1811 ha Lake Dora) in central Florida. Wild adult bass (24 781 fish), ranging in size from 200 mm total length (TL) to over 600 mm TL, were stocked in Lake Griffin (13 932 fish) and Lake Dora (10 849 fish). One month after stocking, the number of stocked bass caught in electrofishing catches in Lake Griffin and Lake Dora was ~10% and 22%, respectively. Estimates of mortality were similar to the native largemouth bass, although the movement of stocked fish into other connecting water bodies was extensive. For the Lake Griffin/Lake Dora stocking programme, bass were transferred at a cost of $10.09–19.89 per fish, depending on how the costs of the project are calculated ($250 000 for just the capture and transport of the fish vs. $492 775 for the total project). Considering only capture and transport costs, conservative benefit/cost ratio estimates would be $1.77/$1.00 spent for replacement and $1.85/$1.00 spent recreational costs, although the benefit/cost ratios could exceed $10/$1. Based on the present study, stocking wild adult largemouth bass is a cost‐effective tool for managing largemouth bass.  相似文献

Pond-raised hybrid striped bass were commercially processed into fillets with and without belly flap, packaged in oxygen permeable bags (Cryovac E(tm)), and stored as chillpack samples (-2°C) and as refrigerated samples (2°C). Quality changes were determined over 21 days storage by microbiological, chemical, and sensory evaluations. Aerobic plate counts and hypoxanthine formation showed evidence of rapid deterioration of refrigerated samples after 8 days storage compared to 21 days for chillpack samples. A trained sensory panel found 21 day stored chillpack samples similar in flavor and aroma but of firmer texture than refrigerated samples stored 8 days. Panelists found no differences between trimmed and whole fillets. Hypoxanthine formation and aerobic plate counts appeared to be good indicators of quality deterioration, whereas thiobarbituric acid measurements were not.  相似文献

A new concept was applied to fish products. Chemical reagents targeting specific chemical bonds were incorporated in to gel products for assessing the importance of non-covalent (sodium dodecylsulphate, 1.0%, w/w), disulphide (dithiothreitol, 0.2%, w/w) or transglutaminase-catalyzed (N-ethylmaleimide, 0.2%, w/w) bonding. These reagents acting as chemical probes were applied to the study of sea bass and hake protein gels and the effect of MTGase (0.5%, w/w).These reagents were valuable for reaching conclusions. The action of an endogenous cysteine TGase in hake products was detected. It was found that frozen storage and protein denaturation are fundamental not only for explaining differences between raw materials, but also seem to favour a different action mode of MTGase in each raw material. Moreover, this study may help to improve processed products, for instance, the positive interaction between MTGase and the disruption of disulphide bonds in hake gels may find a useful application through incorporation of cysteine + MTGase.  相似文献
