Debaryomyces hansenii strains, M4 and P2, isolated from natural fermented sausages were inoculated in slow fermented sausages to study their effect on processing parameters, microbial population, volatile compound and sensory characteristics. The inoculation of D. hansenii strains, M4 and P2, did not affect the ripening process as no differences in pH and Aw were detected. The dominance of the inoculated yeast strains along the process was followed by RAPDs of M13 minisatellite. The inoculated yeasts, P2 and M4, were recovered at the end of the ripening process although P2 appeared in higher counts than M4. The sausages inoculated with P2 resulted in a decrease in lipid oxidation values (TBARS) and a reduction of lipid-oxidation derived aldehydes in addition to a highest acid compound abundance. M4 inoculated sausages resulted in highest sulphur containing compound abundance. However, no differences in consumer acceptance were detected. Moreover, both yeast strains were responsible for the generation of ethyl methyl-branched ester compounds in the dry-cured sausages. 相似文献

In this study, fresh and processing quality traits were collected on a total of 312 Country Hams. Phenotypic correlations between traits were estimated and numerous values were significantly different (P<0.05) from zero. Yield was significantly correlated with several fresh pork quality traits measured on the fresh hams, including subjective color (0.34) and lipid percentage (0.32). Some meat color traits were significantly correlated, including associations between the color scores taken on the fresh and cured hams. Correlations between fresh pork quality traits were also determined, with results showing significant correlations between ultimate pH and other pork quality traits. The results indicate that yield can be maximized if hams with good fresh pork quality parameters are used for curing. The correlations estimates are helpful for understanding of the biological mechanisms behind the production of dry-cured hams and can potentially be used to improve the efficiency of the dry-cured ham production chain. 相似文献

Fungal starter, such as Penicillium nalgiovense, are commonly used to inoculate sausages before seasoning process. However, Penicillium nordicum, a well-known ochratoxin A (OTA) producer frequently isolated from seasoning rooms, could colonize the casing surface during the early stage of production. The relationship between OTA accumulation and simultaneous inoculation of P. nalgiovense and P. nordicum at different rates was evaluated. After 14 days of seasoning, the persistence of P. nordicum was assessed by LAMP assay revealing its capability to colonize and grow on salami surface at all the contamination rates. At the end of seasoning, OTA was accumulated both in mycelium and dry-cured meat when P. nordicum contamination rate ranged from 25% to 100% of inoculum, while no OTA was detected in dry-cured meat at 2.5% and 0.25%. Results demonstrated that contamination of fungal starter by P. nordicum could represent a serious concern during salami production and therefore represents an important critical point to be monitored. 相似文献

The profile of volatile compounds from external and internal areas of Iberian dry-cured loin was studied by headspace solid-phase microextraction. Higher levels of 16 volatile compounds (hexane, decane, 3-methylbutanal, several sulphur compounds and some aromatic hydrocarbons) were detected in the outer part of the loins. These differences could be owing to several factors, such as greater exposure to oxygen and dehydration conditions in the surface of the product, which favour oxidation reactions and Strecker degradation of amino acids. Moreover, the addition of spices on the surface and the proximity of a mould layer growing on the surface of the product could also contribute to the higher levels of these compounds on the external layer. However, other sulphur compounds coming from spices showed similar levels on the surface and within the loins. This different behaviour could be a consequence of different diffusion rates depending on the features of the compound and the matrix. 相似文献

The objectives of this study were to evaluate the physicochemical, textural and sensory properties of smoked pork loins (PL) containing various levels of NaCl (0.0–2.0%) alone or in combination with soy protein isolates (SPI; 1.0%). The pH values, moisture, fat, and protein contents (%) of smoked PL were 5.97–6.17, 63.3–69.1%, 2.64–4.26%, and 20.2–26.6%, respectively. Increased NaCl levels increased moisture contents (%) and sensory scores, as well as reduced Hunter redness and yellowness and cooking loss (CL, %) (P < 0.05). A NaCl level of 1.0% had resulted in a CL (%) level similar to those at regular‐salt levels (1.5% and 2.0% NaCl). When 1.0% SPI was incorporated with smoked PL, the NaCl level of 0.5% was also similar to the CL (%) at higher NaCl levels and improved sensory scores. Thus, a NaCl level of at least 1.0% was required for the manufacture of smoked PL; however, smoked PL could be manufactured with 0.5% salt when 1.0% SPI was included as part of the manufacture of smoked PL to effect quality characteristics similar to those achieved with regular‐salt (1.5% and 2.0% NaCl) smoked PL. 相似文献

The effect of curing agents (sodium chloride, nitrate, nitrite, glucose, and ascorbic acid) on the headspace concentration of six volatile compounds (2-methyl-butanal, 3-methyl-butanal, 2-pentanone, hexanal, methional, and octanal) has been studied. These volatile compounds were selected based on their presence and contribution to the flavour of typical Spanish dry-cured meat products. The release of volatile compounds to the headspace has been studied by using solid-phase microextraction (SPME) and gas chromatography analysis. The main effect was produced by sodium chloride, because it produced a salting-out effect on all the volatile compounds studied. Furthermore, the presence of nitrite, nitrate, and ascorbic acid in the solution also produced an increase in the headspace concentration of the volatile compounds while glucose decreased the headspace concentration of octanal and hexanal. The changes in the relative proportions of volatile compounds due to the effect of curing agents should be taken into account as they may change the flavour perception of dry-cured meat products. 相似文献

This paper deals with the influence of industrial practices such as use of starters (Lactobacillus sake and Staphylococcus carnosus), preripening (3 days at 5°C) and drying temperatures (8 and 16°C) on proteolysis, ammonia production and the taste of “salchichón”,
a traditional Spanish dry-cured sausage lacking surface mould. pH dropped more sharply in the presence of a starter and at
a high drying temperature (16°C); preripening did not affect the pH. The highest value for non-protein nitrogen (NPN), 16%
of total nitrogen, was observed to occur in samples with the lowest pH (4.7–4.8). Total volatile basic nitrogen (TVBN) increased
during drying due to the deaminase activity of internal microbial flora, which was not great (0.5–1.0% of total nitrogen)
enough to affect the pH, and significantly in samples showing a larger decrease of pH. The greater proteolysis in samples
with starter did not affect the assessors’ taste preference. Assessors clearly preferred those samples without starter that
were dried at low temperature (8°C); however, samples with starter showed excellent commercial appearance since they dried
more homogeneously. An equilibrium point must be found between acid production and taste.

Effect of modified atmospheres on microbiological, color and sensory properties of refrigerated pork
Pork loin samples were stored (4 °C) in nylon polyethylene plastic bags using different modified atmospheres packaging (MAP): vacuum, 100% CO2 99% CO2 + 1% CO, 100% O2 or 100% CO followed by vacuum. Throughout the storage period Pseudomonas growth was limited in loins packaged in all MAPs evaluated, except for 100% O2. Psychrotrophs reached 107 CFU g−1 after 20 days of storage except for the loin samples in 100% O2 MAP that present count above 108 CFU g−1. The 1% CO/99% CO2 atmosphere was best for preserving the desirable pork loin color and the L* and a* values remained similar to the fresh meat values using this MAP. Pork loins in 99% CO2/1% CO MAP obtained the highest consumer acceptance scores after 24 h of storage. These samples and those treated with CO and then vacuum packaged received the greatest acceptance scores even after 20 days of storage. 相似文献

The evolution of biochemical, instrumental colour and texture, sensory parameters and consumer acceptability of 12-month dry-cured hams maintained up to 26 months under “bodega” conditions (18 °C, 75% relative humidity) was assessed, in order to investigate the influence of extended ripening on their sensory characteristics and acceptability. Results demonstrated that ham acceptability showed no significant differences (p > 0.05) from 12 to 22 months, while it decreased significantly (p < 0.05) until 26 months. Principal component analysis of all data brought about a comprehensive explanation of the biochemical, instrumental and sensory parameters involved in the acceptability decrease. In fact, high pastiness and adhesiveness values, as measured by both sensory and instrumental methods, appeared to be most related to decreasing acceptability. Those attributes were the result of an excessive proteolysis, as revealed by biochemical maturation indices. 相似文献
