Beef carcasses were examined to explore the effects of stunning methods on central nervous system tissue (CNST) dissemination on the surface during the slaughtering process. The frequency of occurrence of CNST contamination on four defined parts, each on the interior and exterior surfaces of the split carcass, and their level of the contamination were measured by an ELISA test. The effect of hot carcass weight was also examined. The results showed that the frequency of contamination occurrence was not affected by the stunning method. However, the penetrating captive bolt stunning method resulted in a higher level of CNST contamination than non-penetrating sledge-hammer stunning (P < 0.001). The higher level of contamination occurred on the interior surface of carcasses along the vertebral area. Therefore, the dissemination of CNST on carcasses seemed to be affected by the stunning method, carcass splitting, and carcass washing. The carcass weight significantly affected the level of CNST contamination on the carcass (P < 0.01) but there was no interaction with the stunning method.  相似文献

The objective of this study was to determine the impact of different slaughter procedures on animal welfare and meat quality. Before slaughter in a dip-lift, one-gondola system, 460 pigs were exposed to an atmosphere containing either 80% or 90% CO(2) for 70 or 100s, and at the longer exposure time with stun-to-stick intervals of either 25-35 or 40-50s. Clinical parameters (reflexes, catecholamines and lactate) showed deficiencies in animal welfare after stunning with 80% CO(2) for 70 and 100s, with an interval of 40-50s, and with 90% CO(2) for 70s. Stunning with 80% CO(2) for 70 or 100s always induced stress, as indicated by higher lactate levels, and reduced meat quality as indicated by low pH(24) values (5.4 in Musculus longissimus and 5.5 in Musculus semimembranosus) and low impedance (Py(24)) values, especially in combination with the longer stun-to-stick interval (40-50s). Stunning with 80% or 90% CO(2) in a dip-lift system was found to be acceptable for animal welfare (percentage of clinical reflexes) only in combination with the longer exposure time of 100s and the shorter stun-to-stick times of 25-35s. When 90% CO(2) was used, the longer stun-to-stick interval of 40-50s also gave results acceptable with regard to animal welfare. Generally, in comparison to 80% CO(2) stunning meat quality was superior (higher pH(24) and Py(24) values) after stunning with 90% CO(2).  相似文献

Four groups of Manchega breed suckling lambs, stunned with different CO2 concentrations and exposure times (G1: 80% CO2 90 s; G2: 90% CO2 90 s; G3: 90% CO2 60 s; G4: 80% CO2 60 s) plus an electrically stunned control group (G5), were used to determine (1) the physiological responses (hormonal, haematological and biochemical blood parameters) of animals after stunning and (2) the stunning effectiveness in each group. No significant differences were found among groups for hormonal levels. Within haematological parameters, significant differences among groups were only found for haemoglobin (P < 0.05) and leucocytes (P < 0.01), with lowest values in both groups stunned with 90% CO2. There were significant differences between groups (P < 0.01) for urea and total protein, creatinine and LDH (P < 0.05; lowest and highest, respectively, for G1) and for sodium (P < 0.001; lowest in G3). Stunning effectiveness was highest in G5, G3 and G1 groups and lowest in G2 and G4 (100%, 90%, 89%, 50% and 43%, respectively). According to discriminant analysis, sodium, leucocytes and creatinine marked the differences among stunning groups.  相似文献

Practical experience has indicated that shooting water buffalo with a captive bolt gun in the front of the head does not always produce an effective stun. Slaughtermen have been claiming that the poll position is more reliable, but under present EU regulations this shooting position is not allowed for domesticated bovines. This study examined the effectiveness of shooting water buffalo with captive bolt guns in the poll region. The depth of concussion was assessed in 30 water buffalo from physical collapse, presence or absence of corneal and palpebral reflexes, normal rhythmic breathing, eyeball rotation, nystagmus and whether the animal was re-shot. All except one animal collapsed immediately. The one animal that failed to collapse was not breathing. The prevalence of a shallow depth of concussion in the poll shot animals was 53%. Two had been shot through the spinal cord, and with the exception of those plus one other in which the bolt did not penetrate the brain, the other animals were considered to be adequately stunned. Post mortem examination of the brain showed that 79% of the under thirty month old animals were shot in the midbrain or brain stem, but these regions had to be avoided in over thirty month old animals because of the risk of damaging the brain stem sample needed for BSE testing. In addition, three water buffalo were shot in the crown position and one in the front of the head. The frontal position was ineffective as the animal did not collapse, and all animals shot in the crown position resumed breathing shortly after shooting, indicating a shallow depth of concussion. It is concluded that poll shooting can be effective in water buffalo, but it produces a shallow depth of concussion compared with frontal shooting in cattle. It requires accurate placement of the gun to ensure that buffalo are not shot through the spinal cord instead of the brain. Vigilance is needed in ensuring that the animals are stuck promptly so that none recover consciousness.  相似文献

Brain and heart activities were measured in 31 veal calves during restraining and rotating followed by neck cutting with or without stunning to evaluate welfare. After neck cutting correlation dimension analyses and %power of EEG beta wave fraction decreased gradually to lower values resulting in an induction of unconsciousness lasting on average 80s. Corneal reflex response ceased 135±57s after neck cutting. The CD scores and the %power of beta waves fell immediately after post-cut captive bolt and pre-cut electrical stunning to levels indicating unconsciousness. Heart rate in lairage increased upon entrance to the restrainer and again after rotation, heart rate variability decreased. Rotating the restrainer 90°, 120° or 180° compromised veal calf welfare and should be avoided. It is recommended to use post-cut captive bolt stunning or pre-cut electrical stunning inducing immediate unconsciousness.  相似文献

The OIE Welfare Standards on slaughter transport, and killing of animals for disease control are basic minimum standards that every country should follow. The OIE, European Union, and many private standards used by commercial industry have an emphasis on animal based outcome standards instead of engineering based standards. Numerical scoring is used by both private industry and some governments to access animal welfare at slaughter plants. Five variables are measured. They are: 1) Percentage of animals effectively stunned on the first attempt, 2) Percentage rendered insensible, 3) Percentage that vocalize (bellow, moo, squeal) during handling and stunning, 4) Percentage that fall during handling, and 5) Percentage moved with an electric goad. Each one of these critical control points measures the outcome of many problems. A good animal welfare auditing system also has standards that prohibit really bad practices such as dragging, dropping, throwing, puntilla, and hoisting live animals before ritual slaughter. On farm and transport problems that can be measured at the slaughter plant are: percentage of lame animals, percentage of thin animals, percentage of dirty animals, percentage with sores, bruises or lesions, death losses, morbidity, and percentage of birds with broken wings and legs.  相似文献

In this work the slaughter-linked plasma modifications of some stress-related hormones in horses subject to standardized butchering procedures were investigated in order to highlight the compromised animal welfare during pre-slaughter handling. During pre-slaughter, animals show strong hardship behavioural patterns, probably due to being under life-threatening conditions. Blood samples from 12 male horses, ageing from 3 to 5 years, were collected before slaughtering in lairage, and during exsanguination after stunning. Catecholamines, cortisol and beta-endorphin concentrations were assessed in plasma samples by EIA. Results show that plasma beta-endorphin concentration did not increase significantly after stunning, while cortisol (P < 0.05) and catecholamines (P < 0.001) increased significantly. The ratio between the plasma level of norepinephrine and epinephrine decreased significantly (P < 0.001) during the time considered for observation underlining a greater involvement of adrenal medulla in the stress response. Moreover these results suggest that, under stress, the release of beta-endorphin could be different from that of ACTH.  相似文献

The present study was proposed to compare the effect that different types of stunning (TS) had on the quality of refrigerated meat from light lambs of the Spanish Manchega breed at 24 h and 7 days post-mortem. Lambs were electrically stunned (ESL; n = 10), using CO2 (GSL; n = 10) or slaughtered without previous stunning (USL; n = 10). Measurements on meat quality were carried out by evaluating pH, colour coordinates (L*, a*, b*), water holding capacity (WHC), cooking loss (CL), shear force (SF) and drip loss (DL). At 24 h post-mortem, no significant differences were found in any of the variables studied. However, at 7 days post-mortem, meat quality was affected by the different TS: pH, CL and DL were lower (P < 0.001) in the USL group and GSL obtained the lowest a* (redness) and b* (yellowness) values (P < 0.01) than in the other groups. Ageing of meat affected SF in the ESL group (P < 0.01), although there were no significant differences due to treatments at any of the ageing times.  相似文献

Bovine respiratory tracts were examined for blood following shechita without stunning, halal slaughter without stunning, and captive bolt stunning with sticking. In all three methods the cattle were in the upright (standing) position at the start of bleeding. Those that had not been stunned continued to breathe during the early part of bleeding whilst those that were stunned were not breathing. Nineteen percent of the shechita, 58% of the halal and 21% of the stunned plus stuck cattle had blood lining the inner aspect of the trachea. Thirty six percent, 69% and 31% had blood in the upper bronchi, respectively. Ten percent, 19% and 0% had fine bright red blood-tinged foam in the trachea, respectively. It was concluded that concerns about suffering from airway irritation by blood could apply in animals that are either not stunned before slaughter or do not lose consciousness rapidly whilst blood is present in the respiratory tract.  相似文献

Forty-nine Manchega breed male suckling lambs were used in this experiment. The effect of CO2 concentration and exposure time at stunning [80% CO2 for 90 s (G1); 90% CO2 for 90 s (G2); 90% CO2 for 60 s (G3); 80% CO2 for 60 s (G4)] plus an electrically stunned control group (G5) was assessed for pH, colour (L, a, b, C and h), water holding capacity (WHC), drip loss (DL), cooking loss (CL) and shear force (SF) in samples packed under two different types of modified atmospheres (MA: MA A: 70%O2 + 30%CO2; MA B: 69.3%N2 + 30%CO2 + 0.7%CO) at 7, 14 and 21 d post-packaging. The lowest pH was found in G4 and in G5. The highest WHC and the lowest CL were found in G2 and G3 groups (P < 0.05). Modified atmospheres did not affect on pH, WHC, CL and DL, although a significant effect (P < 0.001) on colour was found at all the analysis times. Both the type of stunning and the modified atmosphere affected SF values.  相似文献
