燕皮传统加工工艺中碱液对肉糜特性的影响   总被引:1,自引:1,他引:0  
燕皮是以猪肉和甘薯粉为原料,手工制成的薄如纸且经煮不烂的传统食品。在传统制作燕皮过程中添加山榉灰配制的碱液是影响肉糜品质的关键步骤。通过测定制作燕皮过程中各工序样品的氮溶解指数、持水性、乳化稳定性、pH值和粘度,利用SDS-PAGE分析样品中的蛋白质组分、利用光学显微镜观察它们的结构变化,证实植物碱液能够提高样品的氮溶解指数、持水性和乳化稳定性并且延迟了肉糜硬化。同时实验证明碳酸碱(Na2CO3或K2CO3)可替代传统工艺中的植物碱,为后续标准化、工业化生产提供可行条件。  相似文献

The effects of washing with hydrogen peroxide (H2O2) and sodium hypochlorite (NaOCl) solutions on the gel-forming ability and physicochemical properties of surimi produced from bigeye snapper (Priacanthus tayenus), stored in ice for up to 14 days, were investigated. Generally, pH and the trichloroacetic acid (TCA)-soluble peptide content of washed mince varied, depending on the type of oxidizing agent and storage time of the fish. With increasing time of storage, the pHs of water- and H2O2-washed mince were lower than that of NaOCl-washed mince (P < 0.05). However, no differences in the TCA-soluble peptide contents of the resulting mince washed with any media were observed (P > 0.05). Washing with 20 ppm NaOCl resulted in the highest increase in both the breaking force and the deformation of mince from fish stored in ice for all the times studied (P < 0.05). Natural actomyosin (NAM) extracted from NaOCl-washed mince had higher surface hydrophobicity and disulfide bond (SS) content than that of water-washed mince (P < 0.05). With no effect on Ca2+-, Mg2+-, or Mg2+–Ca2+-ATPase activities, NaOCl washing resulted in an increase in Mg2+–EGTA-ATPase activity of NAM (P < 0.05). The results suggested that washing mince with the appropriate type and concentration of oxidizing agent can improve the gelling ability of surimi, particularly from low quality fish.  相似文献

鱼糜制品因其健康和方便食用的特性而广受消费者喜爱。蔗糖常常作为冷冻保护剂和甜味剂添加到鱼糜及其制品中,以改善其低温抗冻特性和风味。然而,传统鱼糜制品的糖含量普遍偏高,这与当前追求健康的消费理念不符。如何在降低糖含量同时保证鱼糜制品的贮藏和感官特性是目前鱼糜工业生产面临的一个重大挑战。本文探讨了蔗糖在鱼糜加工贮藏中发挥的作用,分析了鱼糜制品减糖加工工艺存在的问题以及鱼糜蛋白低温下发生冷冻变性的机制。在此基础上,本文从3个方面综述了国内外降低鱼糜制品糖含量的最新研究进展:新型抗冻剂的应用、新型甜味剂的应用、物理加工技术的应用,并对减糖策略的发展方向进行了相关预测,以期为生产健康和低糖鱼糜制品加工提供理论依据。  相似文献

The influence of washing treatment (dewatered only, one wash, and three washes) and sodium chloride (NaCl) concentration (0%, 2%, and 4%) on the gelation properties of crab mince was investigated. This previously cooked muscle mince is a low-value by-product of the crab processing industry, considered to have little or no functional properties. Crab mince gels were produced and tested for water-holding capacity (WHC), gel strength, colour, and electrophoretic profile. Wash treatment and NaCl concentration significantly affected gelation. Washed samples exhibited significantly higher WHC than dewatered samples. The 4% NaCl treatment decreased WHC compared to lower NaCl levels. Multiple washing steps increased the force to gel deformation. Wash treatment and NaCl concentration also affected the colour of gels. Based on these results, cooked crab meat mince treated with three washes and 0% NaCl resulted in the strongest gels with the best water-holding capacity, which can be used in the development of value-added products.  相似文献

Effects of vegetable oils on gel properties of surimi gels   总被引:1,自引:0,他引:1  
The objective of this study was to determine effects of vegetable oils (soybean, peanut, corn, and rap oils) on the textural, color, microstructural, sensory and rheological properties of surimi gels. As the vegetable oil concentration increased in surimi gels, breaking force of gels was decreased (P < 0.05), while expressible water and whiteness values were increased (P < 0.05). Surimi gels with peanut oil had higher breaking force values, comparing to those with other vegetable oils. Transmission electron microscope shows the similar-size droplets of peanut oil and corn oil in surimi gels. Sensory evaluation indicated that fish balls with 10 g/kg vegetable oils were accepted in term of taste, color and overall likeness by the panelists. Storage modulus (G′) and loss modulus (G″) decreased along with increasing vegetable oil concentration. Results demonstrated that vegetable oils could be used potentially to modify the qualities of surimi-based products, such as color and taste.  相似文献

The modori phenomenon during surimi production is caused by endogenous proteinases, especially cathepsin L and myofibril-bound serine proteinase (MBSP). Cathepsin L from the skeletal muscle of blue scad (Decapterus maruadsi) was purified to homogeneity by ammonium sulphate fractionation and a series of column chromatographies and revealed a single band with molecular mass of 30 kDa on SDS–PAGE. Peptide mass fingerprinting (PMF) obtained three fragments with 48 amino acid residues, which were highly identical to cathepsin L from other fish species. Its optimal pH and temperature were 5.5 and 55 °C, respectively. Meanwhile, MBSP was purified from the skeletal muscle of blue scad, and the roles of cathepsin L and MBSP in the degradation of myofibrillar proteins were compared. The results indicated that MBSP is more effective than cathepsin L in promoting the degradation of myofibrillar proteins, especially myosin heavy chain (MHC), suggesting that MBSP plays a more significant role.  相似文献

以冷冻鱼糜制品为原料将大肠杆菌接种到鱼糜制品中,托盘包装后分别在5、10、15、20、25和85℃贮藏。并应用Curve Expert1.3软件拟合不同温度下大肠杆菌的生长情况。结果表明,修正的Gompertz方程能较好地描述不同温度下大肠杆菌在鱼糜制品中的生长动态,温度对大肠杆菌生长参数μmax(最大比生长速率)和λ(延滞时间)的影响,采用平方根模(Belehradek)描述呈良好线性关系。85℃用失活模型Linear的拟合较好。通过13℃和18℃下大肠杆菌的生长对构建的Gompertz模型进行了验证,并经数学检验参数偏差值和准确值计算,偏差度分别为0.938、0.956,准确度为1.034、1.083,表明所建立模型是有效的。  相似文献

The physical, chemical and microbiological changes of surimi during surimi pehtze preparation stage, with Actinomucor elegans XH-22 (A. elegans XH-22) as fermentation starter, were investigated. Enzyme assay showed that A. elegans XH-22 could continuously produce protease and α-amylase on surimi surface. Texture profile analysis (TPA) indicated that fermentation for 48 h decreased pH and moisture content and modified the texture properties of surimi. Increases in amino nitrogen and trichloroacetic acid-soluble nitrogen (TCA-N) contents revealed obvious surimi protein degradation, which was further confirmed by size-exclusion HPLC analysis of surimi water soluble protein. Fermentation significantly increased the content of free amino acids and enriched special amino acids such as histidine, phenylalanine and glutamic acid, which could influence the nutritional and sensory properties of fermented surimi product. Considerable levels of aerobic plate count, spores and LAB were detected during the fermentation process. It is thus, from a public health point of view, advisable that the fermentation time in the first stage be controlled to be within 36 h. This research gives a new clue for improving the utilization of low-value fish.  相似文献

Transglutaminase (TG) is an enzyme that catalyzes an acyl-transfer reaction between the γ-carboxyamide group of peptide or protein-bound glutaminyl residues, and primary amines. TG action on protein molecules, causes a cross-linking and polymerizing effect of these latter, through ε-(γ-glutamyl)lysine bonds.
