This study analysed the protein bioaccessibility of yoghurt containing different concentrations of pectin, acid-resistant carboxymethylcellulose (CMC), guar gum and xanthan gum before and during in vitro gastrointestinal digestion, respectively. Soluble protein contents and protein digestion rates of yoghurt with 0.2% (m/v) guar gum, CMC and xanthan gum were significantly higher and faster, whereas other thickeners had slower rates than control yoghurt during gastric digestion phase. In addition, the contents of small peptides and amino acids were higher in yoghurt with 0.2% (m/v) thickeners than those with 1.0% (m/v) thickeners during simulated intestinal digestion in most of the samples.  相似文献

Hydrophobically modified water-soluble polymers have recently become the subject of extensive research because of their use as aqueous viscosity modifiers in oil recovery and latex paint systems. In this study, poly(acrylamide) samples modified with small amounts of a hydrophobic monomer (ethylphenylacrylamide) have been prepared by free radical copolymerization using an aqueous micellar process in which the use of a surfactant ensures the solubilization of the hydrophobe. The copolymers exhibit improved thickening properties with respect to homopoly(acrylamide) analogs due to intennolecular hydrophobic associations. The aqueous solution-copolymer properties strongly depend on the amount of surfactant used in the synthesis. The differences observed between the samples are directly related to the copolymer microstructure, that is to a more or less block distribution of the hydrophobic units. The interactions in aqueous solution of a surfactant (sodium dodecylsulfate (SDS)) with these copolymers have been examined. A strong increase in viscosity is observed upon the addition of SDS below its critical micelle concentration, owing to the formation of mixed micelles of SDS and hydrophobic monomers. The complex rheological behavior observed is explained in terms of the balance between inter and intrachain liaisons. The effects of hydrolysis on the hydrophobic interactions are also discussed.  相似文献

Influence of fat content and thickener type on rheology, structure, stability, in-vivo aroma release and sensory perception was studied in lemon flavored o/w model emulsions. Six formulations were prepared by varying the oil content (5 and 30% w/w) and the matrix composition (carboxymethyl cellulose, modified starch and no thickener). The effect of the interaction between fat content and matrix type was significant on most of the flow and viscoelastic parameters but not on flow index or loss modulus values. There were differences in the creaming index due to oil content and thickener type. Higher emulsion stability was obtained with the starch-based emulsions. Fat content affected the delivery to the nasal cavity of the most lipophilic compound (linalool) but did not affect the delivery of the least lipophilic (cis-3-hexen-1-ol) while both thickeners influenced the cumulative area under the aroma release profiles from nose breath analyses. Differences in perceived flavor and texture attributes were affected for both fat content and matrix type, which could be explained by instrumental data in most cases.  相似文献

Printing of wool, silk, and nylon-6 substrates with acid dyes using new thickening agents based on free radical polymerization of acrylic acid (AA) with tamarind seed gum (TG) or karaya gum (KG) was investigated. The depth of the obtained prints follows the decreasing order: PAA/TG2 > PAA/TG1 > PAA/KG1 > PAA/KG2 > GG. Increasing the new thickener concentration up to 75 g and steam fixation at 105°C for 30 minutes gives higher K/S values. Printability substrates follows the descending order: wool > nylon-6 > silk.  相似文献

Latex paints contain several types of particles including polymer binder, primary pigment, extenders, and colorants. When the paints contain associative thickeners, control of particle dispersion can be very complicated due to the interaction of the particles with dispersants, surfactants, and the associative thickener itself. In particular, dispersion of the pigments can act independently of dispersion of the binder particles. The consequences of this situation are manifested in the physical properties of the paint and of the films it forms. This paper describes these interactions in terms of their colloid chemistry and shows the consequences of additive choices on the particle dispersion and also the optical properties of model paint films. Rheological properties of aqueous systems of tragacanth and guar gums at nominal concentration of 10 g/L were evaluated as a function of storage time (up to 47 days) under steady (at shear rates ranging from 0.01 to 1000 s−1) and dynamic (at strain of 5% and angular frequency from 0.1 to 100 rad s−1) shear testing conditions, using a controlled stress rheometer, at 25 °C.  相似文献
