Alcohol-free beer with isotonic properties is getting more popular and its production can be carried out by different production strategies; however, interrupted fermentation is still a challenge. Therefore, the objective of this study was to develop a low-alcohol isotonic beer (<0.5% v/v) by interrupted fermentation. Moreover, the major objective is to compare the developed product to commercial beverages (sports drinks, ‘Pilsen' regular beer, alcohol-free beers and low-alcohol isotonic beer). The beverages were evaluated based on pH, alcohol content (% v/v), total titratable acidity (mEq L−1), osmolality (mOsmol kg−1), bitterness International Bitterness Units, colour European Brewery Convention, total phenolic compounds (mg L−1 gallic acid), reducing and total sugars (%) and Na and K contents (mg L−1). The developed low-alcohol isotonic beer presented characteristics similar to sports drinks, with the advantage of being richer in phenolic compounds and suitable osmolality. Despite salts were added in its formulation, the grades attributed to all beers employed in the sensory evaluation, as well as the purchase intention did not present significant differences.  相似文献

Ready-to-drinks (RTDs) are composed of an alcoholic component and a soft-drink base and are primarily consumed by a youth market. The authors explored whether liking and experience with an RTD soft-drink base predicts liking for the RTD. Participants (N=350) from ages 12 to 30 years sampled 3 RTDs and their respective soft-drink and alcoholic components. For milk- and fruit-based RTDs, liking for and familiarity with their soft-drink base was the best predictor of liking for and familiarity with the RTD itself. For the Coke-based RTD, familiarity with and liking for bourbon best predicted familiarity with and liking for the RTD. All of these effects were consistent across blind and nonblind testing. The authors' results suggest that where there is perceptual similarity between the RTD and its soft-drink base, these beverages may provide an easy transition into alcohol consumption for novice drinkers. 合成了4种碳链长度的酯基阳离子双子表面活性剂,并作为絮凝剂对干法工艺处理的玉米酒精糟废液进行了絮凝处理实验。絮凝后对废液的透光率及COD进行了测定,考察了在不调节pH值及室温条件下与双子表面活性剂、淀粉阳离子、壳聚糖阳离子对比絮凝处理效果,双阳离子表面活性剂好于淀粉阳离子、壳聚糖阳离子的絮凝能力;同时考察了酯基阳离子双子表面活性剂碳链长度对絮凝效果的影响,碳链长度对COD去除率的高低顺序为C14>C16>C12>C10。实现了不用碱中和废液而直接进行絮凝处理的工艺改造。  相似文献

为探讨糖-蛋白质补充对一次性抗阻运动恢复过程的影响.文中以18名男子力量项目运动员在一次抗阻运动前、运动中和运动后,分别摄入糖-高蛋白饮料(HP组=6人,糖:蛋白质=3∶1)、糖-低蛋白饮料(LP组=6人,糖∶蛋白质=6∶1)或纯糖对照饮料(C组=6人).在运动前、运动后即刻、运动后3h和运动后次日晨采集血样,测定血清肌酸激酶(CK)、天门冬氨酸转移酶(AST)、谷丙氨酸转移酶(ALT)、尿素(BU)以及睾酮(T)和皮质醇(Cor).研究结果表明:运动后3h和运动后次日晨C组CK水平显非常著高于HP组和LP组(P0.01,分别),运动后次日晨LP组CK水平显著高于HP组(P0.05);运动后3hC组ALT水平显著高于HP组和LP组(P0.05,分别);运动后即刻C组Cor水平显著低于HP组和LP组(P0.05,分别);各时间点T、AST及BU水平组间比较无差异性.摄入糖-蛋白质饮料能促进男性力量项目运动员抗阻运动后机体运动能力的恢复和提高.摄入糖-高比例蛋白质更有利于运动后疲劳的恢复和机体运动能力的提高.  相似文献

This study examined the transactional nature of parent-infant interactions over time among alcoholic and nonalcoholic families. The sample consisted of 222 families assessed at 12, 18, and 24 months of child age. Results indicated that infant behavior did not influence parental behavior across time, but parental behavior was longitudinally predictive of infant behavior during play interactions. Higher paternal alcohol consumption at 12 months was longitudinally predictive of negative parental behavior at 24 months. Other significant risk factors included marital conflict, fathers' depression, and fathers' education. Results highlight the nested nature of risk in alcoholic families and the direction of influence from parent to child during interactions and suggest that 1 pathway to risk among these children is through negative parent-infant interactions. In this study, reactive extraction of glyoxylic acid (0.93 kmol·m?3) using Amberlite-LA2 (0.24 to 1.67 kmol·m?3) in five different alcoholic diluents is performed at 298 K. The extraction ability of Amberlite-LA2 is found to be in the order of isoamylalcohol (IAA) > nonan-1-ol > octan-1-ol > decan-1-ol > dodecanol. Maximum extraction efficiency, 98.92% is obtained at 1.67 kmol·m?3 of Amberlite-LA2 in IAA. The values of stoichiometric coefficient (m), overall equilibrium constant (KE) and individual constants (K11, K21, and K12) are estimated. The effect of diluent on KD is also quantified by applying LSER model using solvatochromic parameters of diluents.  相似文献

Alcoholism affects the structure and functioning of brain. Electroencephalogram (EEG) signals can depict the state of brain. The EEG signals are ensemble of various neuronal activity recorded from different scalp regions having different characteristics and very low magnitude in microvolts. These factors make human interpretation difficult and time consuming to analyze these signals. Moreover, these highly varying EEG signals are susceptible to inter/intra variability errors. So, a Computer-Aided Diagnosis (CAD) can be used to identify the alcoholic and normal subjects accurately. However, these EEG signals exhibit nonlinear and non-stationary properties. Therefore, it needs much effort in deciphering the diagnostic evidence from them using linear time and frequency-domain methods. The nonlinear parameters together with time-frequency/scale domain methods can help to detect tiny changes in these signals. The correntropy is nonlinear indicator which characterizes the dynamic behavior of EEG signals in time-scale domain. In this paper, we present a new way for diagnosis of alcoholism using Tunable-Q Wavelet Transform (TQWT) based features derived from EEG signals. The feature extraction is performed using TQWT based decomposition and extracted Centered Correntropy (CC) from the forth decomposed detail sub-band. The Principal Component Analysis (PCA) is used for feature reduction followed by Least Squares-Support Vector Machine (LS-SVM) for classifying normal and alcoholic EEG signals. In order to make sure reliable classification performance, 10-fold cross-validation scheme is adopted. Our proposed system is able to diagnose the alcoholic and normal EEG signals, with an average accuracy of 97.02%, sensitivity of 96.53%, specificity of 97.50% and Matthews correlation coefficient of 0.9494 for Q-factor (Q) varying between 3 and 8 using Radial Basis Function (RBF) kernel function. Also, we have established a novel Alcoholism Risk Index (ARI) using three clinically significant features to discriminate the given classes by means of a single number. This system can be used for automated diagnosis and monitoring of alcoholic subjects to evaluate the effect of treatment.  相似文献

为探究浓香型白酒对SD大鼠肠道微生态的影响,通过连续8周灌胃适当剂量乙醇,建立SD大鼠慢性酒精性肝损伤模型,同时,灌胃相同剂量的白酒,考察白酒和乙醇对SD大鼠血脂、肝脏指标的影响及造成的肠道菌群变化。结果显示,连续8周灌胃乙醇造成SD大鼠一定程度的酒精性肝损伤,而白酒组的肝损伤程度显著低于乙醇组。多样性分析表明乙醇组SD大鼠肠道菌群丰富度和多样性降低,而白酒的摄入可以回调这种现象。菌群结构分析表明乙醇干预和白酒干预之间存在显著差异,其中白酒干预组物种组成与对照组更加接近。差异性分析筛选出白酒组和乙醇组的3个潜在差异微生物标志物,分别为g_Eubacterium_rumminantium_group、g_U29-B03和g_unclassified_f_Oscillospiraceae。该研究结果表明白酒可能通过调节肠道微生态来减轻乙醇诱导的轻度肝损伤。  相似文献
