The effects of non-thermal plasma (NTP) on the physicochemical properties of wheat flour and the quality of fresh wet noodles ( FWN) were investigated. The results showed that NTP effectively decreased the total plate count (TPC), yeast and mould count (YMC) and Bacillus spp. in wheat flour. Wet gluten contents and the stability time reached the maximum when treated for 20 s. The viscosity of starch increased significantly after treatment due to the increased of damaged starch. The contents of secondary structure were altered to some extent, which was because that the ordered network structure of gluten protein broken. Furthermore, compared with the control, texture properties of FWN were enhanced significantly at 20 s, and the darkening rate of FWN was greatly inhibited due to the low polyphenol oxidase (PPO) activity. Consequently, the most suitable treatment was 500 W for 20 s, providing a basis for the application of NTP in flour products. 相似文献

农林业中果蔬的自动化采摘需求日趋强烈,末端抓手是实现无损采摘的关键。传统的末端抓手以刚性结构居多,现有的各种柔性抓手也存在抓取力不足、包覆性不佳等缺点。本文以草莓的无损采摘为研究对象,提出将草莓外部轮廓曲线作为设计曲线,设计了一种新型气动四叶片软体抓手。首先,对软体抓手的结构做仿真优化,提出一种安全地附着在目标物表面的设想。然后,在进行草莓表面的最小破坏应力试验的基础上,测试了软体抓手的末端力,验证了其实现无损抓取的可行性。再次,利用动态捕捉技术,研究了软体抓手叶面的弯曲变形规律。最后,选择使用弧线型气体通道的软体抓手进行了草莓抓取测试,结果证明了气动四叶片软体抓手可以实现草莓的无损抓取,抓取成功率达90%,破损率为2%,表明所研制的四叶片软体抓手用于草莓抓取时具有良好的稳定性和实用性,可用于草莓采摘的末端执行器。本研究也可为其他易损果蔬的采摘技术提供理论基础和技术支撑。 相似文献

Different calcium chloride (CaCl2 ) and pectin methylesterase (PME) prefreezing treatments in a vacuum were used to clarify the most effective prefreezing factors for strawberries and traditional jams. Fractional factorial design and modeling were used. CaCl2 had the greatest effect on the majority of the 15 studied responses ( p < 0.001). The pretreatment time should be short (about 5 to 10 min), the temperature low (less than 20 °C), the vacuum level high (pressure less than 10 kPa), the CaCl2 concentration moderate (about 1%) and the dosage of PME comparatively low (about 50 to 100 nkat/g) in order to yield high quality frozen strawberries for jam making. 相似文献

An open‐cycle ocean thermal energy conversion (OC‐OTEC) system is one of the energy conversion methods used to generate electricity from ocean thermal energy. For the OC‐OTEC system, steam evaporated from the surface seawater due to flash evaporation drives the turbine. At that time, dissolved gas such as air is introduced into the low‐pressure system (OC‐OTEC system) as the noncondensable gas, which degrades the performance of condensation heat transfer. In this paper, a small‐scale OC‐OTEC experimental unit experimentally investigates the effect of noncondensable gas on the heat transfer performance in a condenser. The experimental results are discussed in comparison with theoretical estimation by the Sparrow–in method. It is shown that the condensation is occupied by heat and mass transfer near a condensation surface and that the condensation efficiency is affected by exhaust quantity of noncondensable gas at a relatively high concentration ratio of condensable gas. © 2005 Wiley Periodicals, Inc. The colour stability of juice and purées made from a mixture of two strawberry varieties, stored at + 20°C or at –20°C under aerobic and anaerobic conditions, was studied. High-performance liquid chromatography and spectrophotometric analysis were used to monitor the changes in colour during storage. Pelargonidin 3-glucoside comprised 80% of the total anthocyanin content. Four other pelargonidin-based peaks were found, being 10.4%, 3.5%, 0.7% and 0.3% of the total and two cyanidin peaks were present, being 3.3% and 0.4% of the total. Clarification before storage caused considerable losses in the initial anthocyanin concentrations. Storage conditions (air versus nitrogen) did not influence the rate of loss of anthocyanins during storage or the formation of polymeric pigments. There were no losses in anthocyanins and no increase in the amount of colour measured at 510 nm due to polymers in samples stored at–20°C. To investigate the change in the manner of plastic deformation at a fatigue crack tip under different loading conditions, the fresh surface area which is produced in one fatigue cycle at the crack tip was measured by an electrochemical method under various load ratios. The fresh surface area produced in each fatigue cycle is in proportion to the crack propagation rate in the Paris regime. This indicates that the crack tip geometry at Kmax maintains a similar profile through the Paris regime. Furthermore, the fresh surface area is independent of load ratio at a given da/dN in the Paris regime. This suggests that the shape of the fatigue crack tip at Kmax should be independent of load ratio at a given da/dN, and that the shape at Kmin is also independent of load ratio, whereas the size of the deformed region at the crack tip is in proportion to da/dN. 相似文献

The results of a study into the influence of PFA on air entrainment in fresh concrete are discussed It is shown that the required dosage of AEA to produce an air content of 5.5 ± 0.5% in a PFA modified concrete mix is two-six times that required in the corresponding neat OPC concrete mix. The dosage of a vinsol based air entraining agent (AEA) required appears to be directly related to the PFA content of the mix. Similar direct relationships were obtained with a range of different PFAs. The dosage of an AEA based on the salt of a fatty acid appears to be sensitive to both PFA and OPC contents. For the type of PFA used, the variability of measured air content or the amount of air retained after continued agitation both indicated that vinsol based AEAs show the highest variability whilst fatty acid based AEAs show low variability. The between batch variability of air content was significantly improved by the addition of PFA regardless of the AEA used. 相似文献

Based on proton nuclear magnetic resonance (1H-NMR) spectroscopy, a rapid and structure-specific method for the determination of ω-3 polyunsaturated fatty acids (PUFAs)
in fish lipids is presented. The different chemical shift observed for the methyl resonance of ω-3 PUFAs (δ=0.95 ppm) with
respect to the methyl resonance of all other fatty acids (δ=0.86 ppm) has provided the possibility of proposing a new and
rapid method for the determination of ω-3 PUFA content. Twenty-four fish lipid samples (raw, cooked and canned albacore tuna)
