The nutritive value of transgenic peas expressing an α‐amylase inhibitor (α‐Ai1) was evaluated with broiler chickens. The effects of feeding transgenic peas on the development of visceral organs associated with digestion and nutrient absorption were also examined. The chemical composition of the conventional and the transgenic peas used in this study were similar. In the two feeding trials, that were conducted normal and transgenic peas were incorporated into a maize–soybean diet at concentrations up to 500 g kg?1. The diets were balanced to contain similar levels of apparent metabolisable energy (AME) and amino acids. In the first trial, the birds were fed the diets from 3 to 17 days post‐hatching and with levels of transgenic peas at 250 g kg?1 or greater there was a significant reduction in body weight but an increase in feed intake resulting in deceased feed conversion efficiency. In the second trial, in which the birds were fed diets containing 300 g kg?1 transgenic peas until 40 days of age, growth performance was significantly reduced. It was also demonstrated that the ileal starch digestibility coefficient (0.80 vs 0.42) was significantly reduced in the birds fed transgenic peas. Determination of AME and ileal digestibility of amino acids in 5‐week‐old broilers demonstrated a significant reduction in AME (12.12 vs 5.08 MJ kg?1 DM) in the birds fed the transgenic peas. The AME value recorded for transgenic peas reflected the lower starch digestibility of this line. Ileal digestion of protein and amino acids was unaffected by treatment. Expression of α‐Ai1 in peas did not appear to affect bird health or the utilisation of dietary protein. However, the significant reduction in ileal digestion of starch in transgenic peas does reduce the utility of this feedstuff in monogastric diets where efficient energy utilisation is required. Frozen, green peas (Pisum sativum L ) of different varieties and different levels of maturity were evaluated by sensory analysis using a panel of ten trained judges. Two texture variables (hardness and mealiness) and four flavour variables (pea flavour, sweetness, fruity flavour, off flavour) were considered. Near infiared reflectance ( N I R ) analysis was performed with the same material, on both the fiozen and fieeze dried peas. The N I R instrument was calibrated to predict the sensory variables using the multivariate analytical method of principal component regression. Tenderometer readings of the same peas were also calibrated to predict the sensory variables. N I R analysis on the fieeze dried peas showed relative ability of prediction (RAP) values for the sensory variables which were higher than those for the tenderometer readings. The sensory attributes pea flavour and hardness were predicted with higher RAP values by tenderometer readings than by N I R analysis on fiozen peas. For the rest of the attributes, N I R analysis on fiozen peas gave higher RAP values than tenderometer readings. N I R generally gave high RAP values, and this tentative study suggests that N I R analysis could be a useful tool in instrumentally assessing the quality of frozen peas.  相似文献

The effect of low temperature blanching on firmness of eight vegetables was studied. Preheating vegetables at low temperatures prior to a conventional blanch resulted in firmer products. Temperature and time had significant effects on texture, with temperature the most influential. Under optimal conditions, firmness improvements in preheated vegetables as compared to blanched controls were: Bok choy—3.0 × (65 °C, 45 min); Chinese cabbage—1.8 × (55 °C, 45 min); cabbage—1.6 × (65 °C, 15 min); green bell peppers—1.36 × (70 °C, 15 min); sugar snap peas—1.7 × (65 °C, 30 min); carrots—2.1 × (60 °C, 15 min) and broccoli—2.9 × (60 °C, 15 min). Thermal stability and optimal temperature for pectin methylesterase in homogenates from these vegetables were also analyzed. The relationship between optimum preheating conditions for textural integrity and pectin methylesterase activity is discussed.  相似文献

An indirect forced convection and desiccant integrated solar dryer is designed and fabricated to investigate its performance under the hot and humid climatic conditions of Chennai, India. The system consists of a flat plate solar air collector, drying chamber and a desiccant unit. The desiccant unit is designed to hold 75 kg of CaCl2-based solid desiccant consisting of 60% bentonite, 10% calcium chloride, 20% vermiculite and 10% cement. Drying experiments have been performed for green peas at different air flow rate. The equilibrium moisture content Me is reached in 14 h at an air flow rate of 0.03 kg/m2 s. The system pickup efficiency, specific moisture extraction rate, dimensionless mass loss, mass shrinkage ratio and drying rate are discussed in this paper.  相似文献

Two systems are currently available: one for use in combining (dry-harvested) peas for human consumption or seed, and one for use in vining peas for freezing or canning. The effect of germination on the free and glycosylated B6 vitamers (pyridoxine, pyridoxal, pyridoxamine and glycosylated pyridoxine), thiamin and riboflavin content in pea seed (Pisum sativum L, var Esla) was investigated. In raw peas, the total vitamin B6 content (sum of all vitamers expressed as pyridoxine) was 2.183 mg kg−1 DM. Pyridoxine was found to be the predominant B6 vitamer, while only a little amount of glycosylated pyridoxine, the vitamer with the lowest boiavailability, was observed. Thiamin and riboflavin content in raw peas was found to be 7.614 and 2.110 mg kg −1 DM, respectively. After 6 days of germination, carried out at 20°C, in the dark and with daily rinsing, a significant increase of the total vitamin B6 content, mainly due to the increase of glycosylated pyridoxine, was observed. The content of pyridoxal and riboflavin increased in peas 7.5 and 2 times, respectively, whereas pyridoxine, pyridoxamine and thiamin decreased by 83, 24 and 25%, respectively, at the end of the experiment. Results obtained for these vitamins during pea germination were fitted to modelling curves in order to predict vitamin content for different germination periods. © 1999 Society of Chemical Industry  相似文献

Protein content was used as an indicator of environmental conditions for a study on varietal and environmental variation in proximate composition, minerals, amino acids and certain antinutrients of field peas. Four field pea varieties, each with three levels of protein content, were selected. Crude protein content overall ranged from 20.2 to 26.7%. Analysis of variance showed that both variety and environmental conditions had a significant effect on starch, acid detergent fibre (ADF), neutral detergent fibre (NDF) and fat content, but ash content was only affected by variety. Significant varietal and environmental differences in potassium (K), manganese (Mn) and phosphorus (P) were noted. Calcium (Ca) and copper (Cu) showed significant varietal differences, while iron (Fe), magnesium (Mg) and zinc (Zn) had significant environmental differences. Environmental conditions showed significant effects on alanine, glycine, isoleucine, lysine and threonine content. Variety had a significant effect on sucrose, raffinose and phytic acid content, whereas environmental conditions had an influence on trypsin inhibitor activity (TIA). The major pea components protein and starch were inversely correlated. ADF, NDF, Fe, Mg, Zn and the amino acid arginine were positively correlated with protein content. The amino acids glycine, histidine, isoleucine, lysine and threonine were negatively correlated with protein content. It was found that tryptophan was the most deficient amino acid and the sulphur‐containing amino acids were the second limiting amino acids in peas. Raffinose was positively correlated with sucrose but negatively correlated with verbascose. There were significant correlations between mineral contents and some of the proximate components. Eighteen individually housed boars were randomly allocated to one of three dietary treatments, an experimental wheat diet containing 989.4 g kg?1 of a basal wheat diet, or this experimental wheat diet with 500 g kg?1 of the basal wheat diet replaced with 500 g kg?1 of either transgenic or non‐transgenic peas. The transgenic peas expressed the bean (Phaseolus vulgaris L.) α‐amylase inhibitor 1 gene. Diets contained n‐hexatriacontane (0.2 g kg?1) as an indigestible marker to allow the determination of nutrient digestibility at the terminal ileum. Pigs were offered 1.6 kg day?1 for 15 days, after which they were anaesthetised, the ileal and faecal digesta collected and the pigs subsequently euthanased. The ileal dry matter and starch digestibilities of the experimental wheat, non‐transgenic and transgenic pea diets were 78.3, 74.2 and 45.8% and 95.9, 95.2 and 42.4%, respectively. The apparent nutrient digestibilities of the non‐transgenic and transgenic peas were determined by difference. The ileal dry matter digestibility was significantly reduced in the transgenic peas compared with the non‐transgenic peas (12.7 and 69.9%, respectively; P = 0.006), which was largely due to a reduced starch digestibility. The apparent crude protein digestibilities of the transgenic peas were similar to the non‐transgenic, being 79.7 and 78.5%, respectively. Canada is a significant exporter of field peas and, thus, issues of food safety are important in all grain and food products within the international marketplace. Environmental contaminants, such as trace elements, may be present in all foods and, as a result, international standards have been established for a number of toxic trace elements, such as cadmium, lead, mercury and arsenic, in raw food commodities and food products. The Canadian Grain Commission has undertaken a baseline study of various trace elements in Canadian peas to ensure compliance with international food safety legislation. Mean total cadmium content was found to be 0.023 mg kg?1; arsenic and lead mean values were below the method limit of quantification of 0.050 mg kg?1 and the total mean mercury level was below the quantification level of 0.002 mg kg?1. All measured values in the study were below the maximum residue levels (MRLs) established by the FAO and WHO in the Codex Alimentarius. The mean total selenium content was 0.331 mg kg?1, with 56% of the measured values exceeding the MRL established by the People's Republic of China (PRC) of 0.3 mg kg?1. No Codex MRL has been established for selenium as it is regarded as an essential trace element for human health and the PRC is currently reviewing its MRL for selenium in light of this fact. For those parts of the world where selenium-deficiency is of nutritional concern, the higher level of selenium in Canadian peas and their products may be of nutritional benefit.  相似文献
