Antioxidant efficacy of the amino acids methionine, tryptophan, aspartic acid, serine, alanine and arginine in methyl linoleate
were compared to a methyl linoleate control at 2,50 or 79% relative humidity (RH) at 37°C. Antioxidant efficacy varied with
RH and the individual amino acids. Arginine had the highest antioxidant efficacy at all RH values compared to the control.
The efficacy of alanine was equal to that of arginine at RHs of 50 and 79% but was lower at 2% RH. The presence of aliphatic,
alkaline amino, hydroxyl or thiol groups in the side chain of the amino acids increased the antioxidant efficacy at high RHs. 相似文献

Biodiesel, an alternative diesel fuel derived from transesterification of vegetable oils or animal fats, is composed of saturated
and unsaturated long-chain FA alkyl esters. During long-term storage, oxidation caused by contact with air (autoxidation)
presents a legitimate concern with respect to monitoring and maintaining fuel quality. Extensive oxidative degradation may
compromise quality by adversely affecting kinematic viscosity, acid value, or PV. This work examines the oil stability index
(OSI) as a parameter for monitoring the oxidative stability of soybean oil FAME (SME). SME samples from five separate sources
and with varying storage and handling histories were analyzed for OSI at 60°C using an oxidative stability instrument. Results
showed that OSI may be used to measure relative oxidative stability of SME samples as well as to differentiate between samples
from different producers. Although addition of α-tocopherol or TBHQ increased OSI, responses to these antioxidants varied
with respect to SME sample. Variations in response to added antioxidant were attributed to aging and other effects that may
have caused oxidative degradation in samples prior to acquisition for this study. Results showed that OSI was more sensitive
than iodine value in detecting the effects of oxidative degradation in its early stages when monitoring SME during storage. 相似文献

Three types of self-prepared chemical dust suppressants (CDSs) were investigated for their inhibitory effects on nitrocellulose (NC) cloud dust explosion. The results revealed that NC is extremely sensitive to electric sparks and has a high explosion intensity. CaCl2-CDS effectively increased the particle size to control fly dust substantially inhibiting dust cloud explosions. However, both Na2SO4-CDS and MgCl2-CDS exhibited poor abilities and even promoted explosion. Therefore, neither Na2SO4-CDS nor MgCl2-CDS is recommended as a CDS for NC. Inappropriately using CDSs may engender severe explosions. Furthermore, a mechanism underlying NC dust cloud combustion and explosion was proposed. NC has three stages of heat release: autoxidation, thermal decomposition, and combustion. Thermal decomposition, combustion, and explosion were triggered depending on the energy provided from autoxidation. CaCl2-CDS inhibited only combustion. This study reveals the mechanism underlying NC dust cloud explosions and provides useful information for the development of more optimized CDSs. 相似文献

The anti-oxidative properties of trans -resveratrol were studied in the concentration range 0.02–0.20% (8.8 × 10−4 –8.8 × 10−3 M ) during autoxidation of pure triacylglycerols of lard (TGL) and of pure triacylglycerols of sunflower oil (TGSO), as well as of commercial sunflower oil at 100 °C. In sunflower oil trans -resveratrol showed no anti-oxidative activity. In pure lipid systems trans -resveratrol considerably retarded the oxidation process, the effect being stronger in the less oxidizable substrate (TGL). The effectiveness (stabilization factor F ), strength (oxidation rate ratio, ORR) and activity ( A = F /ORR) of the different anti-oxidant concentrations were determined. The activity A was found to increase dose dependency as follows: A =3750–15425 for TGL, A =79–207 for TGSO. A conductometric analysis of the effect of condensate of peroxides generated during lipid oxidation in an accelerated stability test was adapted to test the hypothesis that total antioxidant capacity of tomato products would sometimes increase during processing and in storage. Tomato pulp blends made from a mixture of tomato (Lycopersicon esculentum var Roma VF), watermelon (Citrullus vulgaris var Babylack) and pineapple (Ananas comosus var Smooth cayennes) were analysed for basic quality profiles of dry matter, Brix, titratable acidity (TTA) and pH, total reducing sugars, Component antioxidants phytochemicals and total antioxidant capacity. The lowest sensory score (overall impression) of 4.80 ± 2.59 was recorded for tomato juice while, blend TWP 111p had highest score of 6.20 ± 1.99. There was significant difference (P < 0.05) in the basic quality profile of the pulp blends except for TTA values (0.37 ± 0.02 to 0.45 ± 0.05) and 2‐Furfurals (2.47 ± 0.03 to 2.71 ± 0.01). The fresh blend of 50% tomato, 25% watermelon and 25% pineapple had the highest total antioxidant capacity of 3.69 ± 0.52 mg 100 mL?1 catechin equivalent. The total antioxidant capacity of the stored pulp increased from 2.95 ± 0.13 to 6.22 ± 0.32 mg 100 mL?1 catechin equivalent in pasteurised TWP 211p blend by 60 days when stored at 40 °C. Total antioxidant status of tomato‐based fruit mix increased during the first 80 days. 相似文献

The autoxidation of linoleic acid dispersed in an aqueous media and the antioxidant effect of hydroxytyrosol, oleuropein,
caffeic acid and tyrosol were studied. Linoleic acid autoxidation rate was estimated by the increase of conjugated diene level
and by the decrease of linoleic acid content in the samples. The phenolic compounds exhibited an antioxidant activity which
increased in the order: tyrosol < caffeic acid < oleuropein < hydroxytyrosol. The analysis of the hydroperoxide isomers pointed
out that hydroxytyrosol, oleuropein and caffeic acid at a concentration of 10−4M inhibited the formation oftrans- trans isomers in the increasing order: caffeic acid < oleuropein < hydroxytyrosol. This inhibition could be related to the ability
of phenolic compounds to scavenge peroxyl radical. Tyrosol did not inhibit the formation oftranstrans isomers. Phenolic compounds were degraded as a consequence of their antioxidant activity and their degradation rate was positively
correlated to their antioxidant efficacy. These phenolic compounds, at a concentration of 6 × 10−3M, also scavenged hydroxyl radical, with an efficiency which increased in the order: tyrosol < hydroxytyrosol < oleuropein
< caffeic acid. Polar substituents at the para position, such as in caffeic acid and oleuropein, were correlated with higher

In order to study the promoting effect of polycations on the cobalt(II)phthalocyanine-tetrasodiumsulphonate (CoPc(NaSO3)4)-catalysed autoxidation of thiols, it is imperative to know the molecular weight dependence of the polymer. Monodisperse oligomers can often supply a lot of information. To elecidate the mechanism of the promoting effect of 2,4-ionene, a poly(quaternary ammonium)salt, on the CoPc(NaSO3)4-catalysed autoxidation of 2-mercaptoethanol, a series of monodisperse 2,4-ionene oligomers were prepared. Trimeric 2,4-ionenes, containing two quaternary ammonium groups separated by four methylene groups, showed a high co-catalytic activity, and active Co-aggregates were detected with visible light spectroscopy. The spectroscopic behaviour was in close agreement with that of high molecular 2,4-ionene/CoPc(NaSO3)4 complexes. In order to achieve this aggregation several oligomeric ionenes have to act concertedly. If the distance between the ionic sites is short the trimer acts as a simple salt in stablizing the aggregates. With respect to the catalytic activity the optimum polycation/catalyst ratio, expressed as the N+/Co ratio, decreased with increasing chain lenght and reached a constant level of 50 at a 2,4-ionene nonamer. For the trimers and pentamers this ratio is affected by the type of end-group. All synthesized 2,4-ionene oligomers exhibited excellent co-catalytic properties at the optimum N+/Co ratio, with maximum turnover frequencies of 4600 mol thiol/(mol Co s), i.e. 50 times higher than those obtained for the polymer-free system. In the case of monodisperse 2,4-ionene pentamer with bromo end-groups, double Michaelis–Menten kinetics were observed, as also was exhibited by high molecular weight ionene. 相似文献
