食品甜味的感官评价研究

摘    要:对食品中甜味的感官评价进行了初步研究,包括筛选食品感官评价员,进行甜味剂感官评价的相关知识培训,同时定期进行食品甜味的感官评价测试以检验培训的成果。为如何在食品企业开展感官评价研究工作提供了参考依据。

Abstract:In this paper,a preliminary sensory study was conducted to evaluate the sweet of foods,including members selection of the sensory evaluation,the knowledge and training of sensory evaluation of sweeteners,and had regular sensory testing of sweet in order to test the training results.Providing references of how to carry out the sensory evaluation in food companies.
