| 摘 要： | 测定分析了滇西北地区黑脉羊肚菌的主要营养成分、矿质元素和氨基酸等,结果表明:不同产地来源的黑脉羊肚菌营养成分差别不大,黑脉羊肚菌中富含蛋白质、粗纤维、多种常量和微量元素,是一种集营养、保健、药用功能于一体的优质资源。

| Abstract: | Morchella angusticeps Peck in northwest Yunnan province have carried on the convention nutrient content,mineral quality and amino acid determination and the analysis,finally indicated that the difference between the four samples is not big.Morchella angusticeps Peck nutritional value is high,contains abundant protein,dietary fiber,mineral nourishing element. |
