柚皮浆/聚乙烯醇保鲜膜的制备及其在鱼品防霉包装中的应用

摘    要:针对鱼品在包装储存过程中容易腐败发霉的缺点,以新鲜柚子皮为原料,将其与聚乙烯醇(PVA)混合,研制一种新型保鲜包装薄膜,用于鱼品包装。对复合薄膜的雾度、透光度、抗拉强度、吸水率等基本性能进行测定,结果表明,柚皮浆添加质量分数为5%和7%的复合薄膜性能较好,适合作为食品包装材料使用。同时对贮藏过程中鱼品的色泽、风味、失重率、菌落总数等进行检测,结果表明,不同柚皮浆添加质量分数复合薄膜的保鲜效果不同,柚皮浆添加质量分数为5%和7%的复合薄膜保鲜效果相对较好。

Abstract:Aimed at the defect of easy deterioration of fish in the packaging and storage process, a new type of packaging film for fish packaging was developed by using fresh grapefruit peel as raw material, and then mixed with polyvinyl alcohol (PVA). The basic properties of the composite film such as haze and transmittance, tensile strength and water absorption rate were determined. The results showed with the mass ratio of 5% and 7% of pomelo pulp /PVA, the composite film performed well, which could be used as food packaging materials. At the same time, the color, flavor, weight loss rate and the total number of colonies of fish during storage were detected. The results showed that the fresh-keeping effect of composite films performed differently with different mass ratio of pomelo pulp /PVA, with the mass ratio of 5% and 7% of pomelo pulp /PVA, the preservation effect of the composite film was relatively better.
