胆固醇氧化酶降解鸭肠中胆固醇的工艺条件研究

摘    要:目的:研究用胆固醇氧化酶降解鸭肠中胆固醇,为拓宽鸭肠的应用范围提供参考。方法:分光光度法。结果:通过单因素研究和响应曲面法分析,得到酶解胆固醇的最佳条件是,当料液比为1∶10时,酶解pH为7.08,酶解时间为3.04h,酶解温度为25℃,酶用量为0.12U/g,鸭肠中胆固醇的降解率达36.76%。结论:胆固醇氧化酶可有效降解鸭肠中胆固醇且感官品质基本不变。

Abstract:Objective: In this paper,cholesterol oxidase was used to degrade cholesterol of duck intestine to provide reference of broadening the application range of the duck intestines.Methods: Spectrophotometry.Results: The best condition of degradation has been identified through studies of single-factor and response surface analysis.The results showed that the optimum condition was hydrolysis pH of 7.08,temperature of 25℃,reaction time of 3.04h,enzyme dosage of 0.12U/g,solid-liquid ratio of 1∶10,which resulted the degradation rate of 36.76%.Conclusion: the results could provide much research basis for the degradation of cholesterol in duck intestine by using cholesterol oxidase,and sensory quality unchanged as well.
