电子鼻在不同市售醉鱼干挥发性物质识别中的应用

摘    要:目的研究电子鼻在不同市售醉鱼干挥发性物质识别中的应用。方法以5种不同的市售醉鱼干为研究对象,利用电子鼻对其挥发性物质进行识别,并对采集数据进行主成分分析和判别因子分析。结果采用主成分分析可区分不同生产厂家的醉鱼干,区分指数为94;采用判别因子分析样品分散度较好,且产地对醉鱼干挥发性物质的形成仍具有一定影响。结论电子鼻能较好地识别不同市售醉鱼干的挥发性物质,具有较好的应用前景。

Abstract:To study the discrimination of flavor substance of dried drunk fish by electronic nose. Methods The five kinds of dried drunk fish sold in supermarket were detected by electronic nose, and the collected data were analyzed by using principal component analysis (PCA) and discriminant factor analysis (DFA). Results The test samples were distinguished from each other by principal component analysis very well (discrimination index 94) and comparison with discriminant factor analysis (DFA) showed that the test samples had a good dispersion, but there were certain limitations on discrimination against different regions. Conclusion It is feasible that electronic nose can identify the differences between different manufacturers of dried drunk fish sold in supermarket very well and will have a good application prospect.
