特种水生蔬菜刺苦草根状茎营养成分分析与评价

摘    要:对刺苦草根状茎的营养成分作了较全面的分析,并与藕、荸荠、水芹菜、茭白等常见水生蔬菜进行了比较。结果显示:刺苦草根状茎的膳食纤维含量十分丰富,蛋白质含量与其它水生蔬菜相比也相对较高。VB1、VB2、VB5的含量是常见水生蔬菜的20~700倍。此外,还含有丰富的K、Na、Ca、Fe、Mg、Cu、Mn、Zn、P、Se、Ni、Cr,尤其P、Na、Mg、Fe、Zn、Se、Cu的含量远远高于常见水生蔬菜。刺苦草根状茎中含有17种氨基酸,包含人体必需氨基酸8种,必需氨基酸含量及氨基酸总量均显著高于常见水生蔬菜。因此,刺苦草根状茎是一种营养丰富的宝贵野生水生蔬菜资源,极具开发利用价值。

Abstract:The nutritive compositions of the rhizoma of V.spinulosa Yah were studied and compared with lotus root,water chestnut, cress and cane shoots .The results showed that it was very rich in dietary fibre.The content of protein of the rhizoma of V.spinulosa Yan was higher than other hydrophytic vegetable's, its V_(B1),, V_(B2) and V_(B5)content was 20~700 times as high as these in other hydrophytic vegetables.Furthermore,it contained rich amount of K, Na, Ca, Fe, Mg, Cu, Mn, Zn, P, Se, Ni, Cr.Especially, the contents of P, Na, Mg, Fe, Zn, Se, Cu were higher than these in other hydrophytic vegetables.In addition,it contained 17 kinds of amino acids including 8 kinds of essential amino acids,the contents of essential amino acids and amino acids were significantly higher than these in other hydrophytic vegetables.It is one type of wild hydrophytic vegetable resource that showed great potential in its nutrition.
