摘    要:富含SOD的廉价天然植物--大蒜,经脱臭、磨浆和过滤,得到既脱除蒜臭又最大限度保存SOD活力的大蒜汁。以SOD作为功能因子,以啤酒作为载体,研制出具有抗衰老、提高机体免疫力、消除疲劳等多种生理功效的富含SOD的功能性啤酒,该种啤酒酒精含量为3.1%(m/m),SOD酶活5u/mL,既具有大蒜所特有的蒜香和营养成分,又有一般啤酒的酒花香和爽口的特点,该产品原料来源广、工艺简便、生理功效独特,是一种具有良好开发前景的新型保健饮料。

Abstract:Garlic,a cheap natural plant rich in superoxide dismutase(SOD),was deodorized,milled and filtrated.Then the filtrate was collected,which was abundant in SOD.Taken the SOD solution as functional factor and beer as carrier,a new-type functional beer,SOD beer,was developed.The SOD beer had important physiological effects,including anti-aging,enhancing immunity and relieving weariness.Alcoholic content of the beer was 3 1(m/m)and SOD activity was 5u/mL.The SOD beer was charactered by the distinct flavor and nutritional components of garlic,and also owned hop flavor and mouth feel of ordinary beer.The materials were cheap and available,the processing was simple the physiological effects of the product were distinct.Therefore,SOD beer is a novel healthy beverage whose developmental potential is great.
